SHRIMP WITH BROCCOLI IN GARLIC SAUCE
I really wanted to recreate my favorite Chinese take-out dish. After several attempts, here is the result! Serve over hot cooked rice.

Steps:
- Combine broccoli and water in a glass bowl; steam in microwave oven until slightly tender, 2 to 3 minutes.
- Heat peanut oil in a large skillet or wok over medium-high heat. Cook garlic in hot oil until fragrant, about 1 minute. Reduce heat to low; add chicken broth, soy sauce, oyster sauce, and ginger root to the garlic. Bring the mixture to a boil and add the shrimp; cook and stir until the shrimp turn pink, 3 to 4 minutes. Toss steamed broccoli and water chestnuts with the shrimp mixture to coat with the sauce. Stir cornstarch into the mixture 1 tablespoon at a time until the sauce thickens, about 5 minutes.

EASY GARLIC SHRIMP WITH BROCCOLI

Steps:
- Clean and drain the shrimp as directed above. Set the shrimp aside on a clean plate or similar holding area.
- Next, in a small mixing bowl or medium mixing bowl, whisk together the ground ginger, soy sauce, broth, and cornstarch. Set this bowl aside.
- Heat the oil in a large skillet or wok on medium-high heat. Add the garlic and cook until it is fragrant (should not be browning). This is about 45 seconds to one minute.
- Reduce the heat to low and add the liquid mixture (broth etc) from the second step bowl. Once this begins to bubble you can add the shrimp. Cook this shrimp, stirring, until it has turned pink (about four to five minutes).
- Stir in the broccoli and cook, stirring until thickened. This should take three to four minutes. If you feel as if your mixture needs more thickening, feel free to stir in an additional teaspoon (or as needed) of cornstarch until you reach your desired consistency.
- Serve immediately.

SIMPLE GARLIC SHRIMP
Steps:
- Heat olive oil in a heavy skillet over high heat until it just begins to smoke. Place shrimp in an even layer on the bottom of the pan and cook for 1 minute without stirring.
- Season shrimp with salt; cook and stir until shrimp begin to turn pink, about 1 minute.
- Stir in garlic and red pepper flakes; cook and stir 1 minute. Stir in lemon juice, caper brine, 1 1/2 teaspoon cold butter, and half the parsley.
- Cook until butter has melted, about 1 minute, then turn heat to low and stir in 1 1/2 tablespoon cold butter. Cook and stir until all butter has melted to form a thick sauce and shrimp are pink and opaque, about 2 to 3 minutes.
- Remove shrimp with a slotted spoon and transfer to a bowl; continue to cook butter sauce, adding water 1 teaspoon at a time if too thick, about 2 minutes. Season with salt to taste.
- Serve shrimp topped with the pan sauce. Garnish with remaining flat-leaf parsley.

- Heat 2 tablespoons oil in a large saucepan over medium heat. Add half the garlic and cook until beginning to brown, about 1 minute. Add broccoli, bell pepper and 1/4 teaspoon each salt and pepper. Cover and cook, stirring once or twice and adding 1 tablespoon water if the pot is too dry, until the vegetables are tender, 3 to 5 minutes. Transfer to a bowl and keep warm.
- Increase heat to medium-high and add the remaining 1 tablespoon oil to the pot. Add the remaining garlic and cook until beginning to brown, about 1 minute. Add shrimp and the remaining 1/4 teaspoon each salt and pepper; cook, stirring, until the shrimp are just cooked through, 3 to 5 minutes. Return the broccoli mixture to the pot along with lemon juice and stir to combine.

EASY GARLIC SHRIMP
Easy enough to whip up on a week night. I serve with broccoli on the side. Makes enough sauce to even use with the broccoli. Makes a wonderful, quick, easy meal that looks like it took a long time to make. Could also be used as an appetizer. (I use Tony Chachers Original Seasoning for the Creole seasoning.)

- Heat Oil and butter in large skillet.
- Add garlic and then shrimp.
- Add Creole Seasoning such as Tony Chachers Seasoning -to taste.
- Cook until shrimp turn pink. Probably only 3 or 4 mins depending on the size of the shrimp.

GARLIC SHRIMP AND BROCCOLI PASTA
Another light great tasting pasta. I love all the garlic. You can adjust the heat by playing with the pepper flakes!

Steps:
- Put the garlic and stock in a small sauce pan and bring to boil.
- Reduce the heat to low and cover.
- Simmer for about 20 minutes or until the garlic is soft enough to mash with a fork.
- Transfer the contents of the pan to a food processor or blender and puree until smooth.
- Set aside Bring large pot of water to boil.
- Add the pasta, stirring to make sure the strands don't stick together, and cook over high heat to desired tenderness.
- Meanwhile, put 1 Tbs of the water in a nonstick frying pan and bring to a boil over medium.
- Add the broccoli and onion, reduce the heat to low, cover, and cook for 3 minutes.
- Add the shrimp, dill, and the remaining Tbs of water.
- Stir, recover and cook for 4-5 minutes until shrimp is pink.
- Remove from heat When the pasta is done, drain and return it to the pot over very low heat.
- Add the garlic puree and mix well to coat the pasta.
- Add the broccoli shrimp mix and the seasonings.
- Toss together until well blended and serve immediately.

- Add shrimp to the bowl and toss to coat. If you have time, put the bowl in the fridge to let the shrimp marinade in the sauce for 15-20 minutes. This is an optional step but will help the shrimp to really soak up the sauce's flavors.
- Heat a large skillet medium-high heat, add 1 tablespoon olive oil. Once the oil is hot, add broccoli and season with salt and pepper. Cook for about 5-7 minutes until bright green and soft. Scoop broccoli out of pan and set aside.
- Add the remaining tablespoon of olive oil to the pan. Once the oil is hot, add marinaded shrimp and cook for 2-3 minutes. Flip and cook another 2 minutes. Shrimp is done when pink.
