4 pounds chicken wings, split at the joint
2 tablespoons vegetable oil
1/4 cup soy sauce
1/2 cup fresh orange juice
1/4 cup honey
2 to 4 tablespoons water as needed

Steps:

  • Rinse the wings thoroughly under cold running water and pat dry.
  • In a large skillet set over medium flame, heat the oil and sauté the wings until they begin to brown, about 5 to 7 minutes per side. Remove the wings to a plate.
  • Add the soy sauce, orange juice and honey to the skillet with 2 tablespoons of water and stir until combined adding more water if the glaze is too thick.
  • Return the wings to the skillet, reduce the heat to medium low, and cook the wings, stirring occasionally, until they are nicely coated, another 5 to 7 minutes.

2 tablespoons light-brown sugar
3 tablespoons freshly squeezed lime juice
2 tablespoons rice vinegar

Thinly sliced mint leaves, for garnish
Thinly sliced scallions, for garnish

Steps:

  • Preheat oven to 425 degrees. Spray a baking dish with cooking spray. Season fish with salt and pepper and place in prepared dish.
  • Meanwhile, add brown sugar, lime juice, vinegar, soy sauce, and pinch of salt to a small saucepan and bring to a boil over medium heat. Simmer until thick and syrupy, 4 to 5 minutes. Spoon about 1 teaspoon of glaze evenly over each cod filet; reserve any remaining glaze.
  • Transfer baking dish to oven and bake until opaque and just cooked through, about 12 minutes. Garnished with mint and scallions; serve with reserved glaze.

2 pounds skin-on chicken wings (bone-in)
3 egg whites
¼ tsp salt
½ tsp paprika
½ tsp black pepper
½ cup honey
¼ soy sauce
1 inch knob fresh ginger (grated)
1 tsp red pepper flakes
1 tbsp worchester sauce
Juice of 1 lime
1 tsp ground coriander
1 tbsp sesame seeds
1 tbsp sesame oil
1 tbsp fresh cilantro (chopped)

Steps:

  • Preheat oven at 400F/200C
  • Wash chicken wings, then pat dry with kitchen paper
  • In a bowl, whisk the egg whites with the salt, black pepper and paprika until frothy
  • Line a baking sheet with aluminum foil or baking paper. Place an oven safe cooling rack on top and spray it with non-stick cooking spray
  • Add chicken wings on the cooling rack
  • Brush egg white mixture on chicken wings on both sides
  • Bake for 35-40 minutes. Remember to flip them half-way through so they bake evenly
  • While they're baking, prep the glaze
  • In a saucepan add the honey, soy sauce, worchester sauce, ginger, juice of lime, ground coriander, red pepper flakes and sesame oil
  • Bring to boil, then simmer until sauce is reduced and becomes sticky.
  • Once chicken wings are cooked let them cool for 5 minutes. Add them in a bowl, then coat with the glaze
  • Sprinkle some sesame seeds, fresh cilantro and enjoy!

12 whole chicken wings
1 (6-ounce) can frozen orange juice concentrate
3 tablespoons hoisin sauce
2 teaspoons honey
1 tablespoon soy sauce
1 teaspoon rice wine vinegar
1/2 teaspoon crushed red pepper flakes

Steps:

  • Place a 6-quart saucepan with a steamer basket and 1 inch of water in the bottom, over high heat, cover and bring to a boil.
  • Remove the tips of the wings and discard or save for making stock. Using kitchen shears, or a knife, separate the wings at the joint. Place the wings into the steamer basket, cover, reduce the heat to medium and steam for 10 minutes. Remove the wings from the basket and carefully pat dry. Lay the wings out on a cooling rack set in a half sheet pan lined with paper towels and place in the refrigerator for 1 hour.
  • Preheat the oven to 425 degrees F.
  • Replace the paper towels with parchment paper. Roast on the middle rack of the oven for 20 minutes. Turn the wings over and cook another 20 minutes or until meat is cooked through and the skin is golden brown.
  • During the last 20 minutes of cooking the chicken, place the orange juice concentrate, hoisin sauce, honey, soy sauce, rice wine vinegar and red pepper flakes into a small saucepan, stir to combine and bring to a simmer over medium-high heat. Reduce the mixture to about 1/2 cup, approximately 5 to 10 minutes. Remove from the heat and allow to cool at least 5 minutes.
  • Remove the wings from the oven and transfer to a large mixing bowl along with the glaze and toss to coat. Serve warm.

1 whole chicken (3 1/2 to 4 pounds)
One 12-ounce can cola
6 cloves garlic, sliced
4 large peeled coins of fresh ginger, smashed
1 cup reduced-sodium soy sauce
1/4 cup sake or dry sherry
4 tablespoons brown sugar
2 teaspoons cornstarch
1/4 cup plus 1 teaspoon white vinegar
3 red Fresno peppers, seeds and stems removed, sliced into rings
3 red Fresno peppers, seeds and stems removed, sliced into rings
Kosher salt and freshly ground black pepper
Toasted sesame seeds, for garnish

Steps:

  • Marinate the chicken: Place the chicken in a large resealable gallon-sized plastic bag and add half of the can of cola, 2 sliced garlic cloves, 2 smashed ginger coin and 1/2 cup soy sauce. Seal the bag, put it in a rimmed dish and marinate for at least 2 hours or up to overnight in the refrigerator, flipping the bag periodically for even distribution of the marinade.
  • Make the glaze: Meanwhile, combine the sake with 3 tablespoons brown sugar, 1/3 cup water and the remaining 1/2 cup soy sauce, 4 sliced garlic cloves, and 2 smashed ginger coins in a small saucepan. Bring to a gentle simmer and cook for 5 minutes to develop flavor. Using a fork, stir the cornstarch in a small bowl with 1 tablespoon water. Whisk the cornstarch slurry into the sauce. Simmer the sauce for 1 minute more. Remove from the heat and add 1 teaspoon vinegar. Cool to room temperature, then strain, discarding the solids. Set aside 1/4 cup for drizzling at the end.
  • Make the pickled peppers: Place the sliced peppers in a medium bowl. Bring 1/2 cup of water to a boil with 1/2 teaspoon salt, then pour over the peppers. Let sit 10 minutes, then drain. Return the peppers to the same bowl. Add 1/4 cup vinegar, 2 tablespoons water, 1/2 teaspoon salt and remaining tablespoon of brown sugar, and stir to dissolve. Set aside.
  • Take the chicken out of the fridge 30 minutes before cooking. Remove from the marinade, and pat dry with paper towels. (Discard the marinade.)
  • Prepare a grill for medium indirect heat: For gas grills (with 3 or more burners), turn all the burners to medium-high heat; after about 15 minutes turn off one of the middle burners and turn the remaining burners down to medium. For charcoal grills, bank one chimney starter-full of lit and ashed-over charcoal briquettes to one side of the grill. Set up a drip pan on the other side to avoid flare-ups. (Be sure to consult the grill manufacturer's guide for best results.)
  • Lightly sprinkle the chicken all over with salt and pepper, and place its cavity over the cola can so that the chicken is sitting upright. Carefully put the chicken on the can on the indirect side of the grill, with the back facing the hotter side. Cover and cook until an instant-read thermometer inserted in the breast (avoiding the bone) reads 140 degrees F, 35 to 40 minutes. Baste the chicken all over with the glaze and cover for 5 minutes. Turn the chicken so that the breast is facing the hotter side. Baste a second time, and cover again until the thermometer reads at least 165 degrees F in the thickest part of the thigh, about 25 minutes more. Carefully remove from the grill and let rest 20 minutes before carving. Drizzle with some of the glaze and sprinkle with the sesame seeds. Serve the pickled peppers on the side.

1 tablespoon plus 1 teaspoon soy sauce
1 tablespoon oriental sesame oil
6 6-ounce salmon fillets
1 teaspoon chopped peeled fresh ginger
1 garlic clove, chopped
1/2 cup fresh orange juice
3 tablespoons fresh lime juice

Steps:

  • Toss first 4 ingredients in large bowl to combine. Whisk vinegar, 1/4 cup canola oil, 1 tablespoon soy sauce and sesame oil in medium bowl. Set vinaigrette aside.
  • Heat remaining 1 tablespoon canola oil in heavy large skillet over medium-high heat. Sprinkle salmon with salt and pepper; add to pan. Cook salmon until brown on 1 side, about 4 minutes. Turn and cook until opaque in center, about 2 minutes longer. Transfer salmon to plate; tent with foil to keep warm. Add ginger and garlic to same skillet. Sauté 1 minute over medium-high heat. Add orange and lime juices and 1 teaspoon soy sauce; boil until mixture is reduced to 1/4 cup glaze, about 3 minutes. Remove from heat. Rewhisk vinaigrette. Add to vegetable mixture and toss to coat. Divide equally among plates. Place 1 salmon fillet atop vegetables on each plate. Drizzle glaze over salmon and serve.

This is so yummy! I got this recipe from my husband's aunt, who makes this for parties. Note: It's not quite as labor intensive as it sounds. I guessed at the number of servings, which I really have no clue but is required. But this was always at potlucks so figure 2 lbs of wings should be at least 10 servings, depending on how many pieces you count as a serving! and unless you can't keep yourself away from them before they make it to the party! ;O)

1 teaspoon salt
1/8 teaspoon white pepper
1 teaspoon finely chopped fresh ginger
1 egg white
1/4 cup cornstarch
3/4 cup sake

  • Cut each chicken wing at joints to make 3 pieces. Discard tip or reserve for making chicken broth. Here's where I cheat and use those frozen party wings from Costco. Feel free to do the same thing.
  • Combine the salt, pepper, ginger, egg white, and cornstarch in a large mixing bowl. Add chicken wings and marinate for 20 minutes, covered in refrigerator.
  • Heat sake, orange juice, lemon juice soy sauce, sugar, and chili until sauce is reduced to 1 1/4 cup. Turn off heat and set aside.
  • Heat corn oil (2 inches) in wok or deep edged frying pan to 350°F Place drumette pieces in oil and deep fry for one minute turning a couple of times. Add remaining wing pieces and cook for additional 4 minutes, turning 3-4 times or until golden brown. Remove from oil and drain on paper towels.
  • Heat a wok or frying pan on medium heat until hot. Add 1 tbsp corn oil, and the garlic and sauce mixture. Stir and cook until sauce begins to bubble. Add chicken wings and stir and cook with sauce mixture until wings are well coated.

AIR FRYER CHICKEN WINGS WITH SOY GLAZE

While fried chicken wings are one of my favorites, you can also achieve the same bite without frying them. An air fryer produces wings that taste just as good and have almost no added oil. One of my favorite tricks is to use the marinade as the basting liquid. It helps reduce waste and gives such good flavor. If you don't have an air fryer you can bake the wings in the oven. Follow the same instructions, but check the wings periodically-you may need to cook them a tad longer.

1 tablespoon sambal
1/2 cup soy sauce
3 cloves garlic, minced
2 tablespoons minced fresh ginger
1 teaspoon sesame oil
1 bunch scallions, thinly sliced
1 pound chicken wings
3 tablespoons rice vinegar
2 tablespoons toasted sesame seeds

Steps:

  • Mix together the sambal, soy sauce, garlic, ginger, sesame oil, scallion whites and half of the scallion greens (reserve the remaining greens for garnish) together in a medium bowl. Add the wings and marinate in the refrigerator for at least an hour.
  • Preheat an air fryer to 380 degrees F. Remove the chicken wings from marinade, and place wings in the air fryer basket. Pour the marinade into a saucepan and set aside. Cook the wings for 22 minutes.
  • While the wings are cooking, add the rice vinegar to the marinade and bring the liquid to a boil over medium heat. Boil for 2 minutes, then reduce the heat so the sauce stays warm.
  • Once the wings have cooked for 22 minutes, remove the basket from the frying and brush some of the marinade on the wings making sure to coat them well. Place the basket back in the air fryer, increase the heat to 400 degrees F and cook until they are golden brown and delicious, about 3 minutes, keeping an eye out so they don't burn.
  • Place the wings on a serving platter and spoon any remaining marinade over the wings. Garnish with scallion greens and the sesame seeds and serve.

2 tablespoons olive oil
1/2 teaspoon salt
1/2 teaspoon black pepper
3/4 cup balsamic vinegar
1/4 cup soy sauce
2 teaspoons sugar
1 tablespoon unsalted butter

Steps:

  • Put oven racks in upper and lower thirds of oven. Line 2 large shallow baking pans (17 by 11 inches) with foil. Put pans in oven and preheat oven to 500°F.
  • Pat wings dry, then toss with oil, salt, and pepper in a large bowl and divide between preheated pans, spreading wings in 1 layer. Roast, without turning, until golden and tender, about 35 minutes.
  • While wings roast, simmer vinegar, soy sauce, and sugar in a 1- to 1 1/2-quart heavy saucepan, stirring occasionally, until reduced to about 1/3 cup, 12 to 14 minutes. Remove from heat and stir in butter until melted.
  • Remove roasted wings from oven and let stand in pans 1 minute (to make wings easier to remove from foil), then transfer with tongs to a clean large bowl.
  • Pour balsamic mixture over wings and toss to coat well. Let stand 5 minutes, then toss again.

  • In a small bowl, mix cornstarch and water thoroughly. Mix into teriyaki mixture slowly, stirring with a wire whisk.

4 (6 ounce) black cod fish fillets (or any mild white fish)
sea salt & freshly ground black pepper, to taste
2 garlic cloves, minced
1 inch ginger, grated

1 lime, zest of
3 tablespoons lime juice
2 tablespoons rice vinegar
1 tablespoon soy sauce
thinly sliced mint leaf, for garnish

  • Salt and pepper fish fillets.
  • Heat grill, put a piece of aluminum foil on the grill, add oil.
  • Once grill is heated to 350-400 degree. Put fish on foil, and turn grill to medium to low to maintain 350-400 degree. Turn turn fillets over until cooked (fish turn opague and firm to touch).
  • Put all other ingredients except mint and scallions in small sauce pan. Bring to a simmer and reduce by 1/3 to 1/2.

  • Combine the soy sauce, orange juice, honey, olive oil, sesame oil, and ginger powder in a bowl. Pour it over the salmon and allow it to marinate for at least 20 minutes (preferably an hour).
  • Heat olive oil in a skillet over medium heat. Add the salmon skin side up and cook for a few minutes, then flip and cook for another 3 minutes or so or until the salmon is cooked through (cooking time can vary depending on the thickness of the salmon). Remove salmon from skillet and set aside.
  • To turn the leftover marinade into a glaze, add it to a saucepan and bring it a boil for a couple of minutes (its important to let it boil for awhile to kill off any bacteria). In a small cup, add cornstarch to 1/4 cup water and stir to create a slurry. Add it to the saucepan and whisk together, bringing it to a boil again. Remove glaze. Brush on top of salmon. Sprinkle salmon with sesame seeds and green onions.
