A super easy oven roasted bok choy recipe, made even better with roasted garlic! It makes a naturally low carb, gluten-free, keto, paleo and healthy side dish.

1 large head Bok choy
1/4 cup Avocado oil
1 tsp Sea salt
1/2 tsp Black pepper
4 cloves Garlic ((minced))

Steps:

  • Preheat the oven to 425 degrees F (218 degrees C).
  • Cut the bok choy into fourths or eighths lengthwise (depending on how thick and leafy it is - see post above.)
  • Arrange the bok choy in a single layer on a large baking sheet, cut side down. Drizzle with 2 tbsp avocado oil. Sprinkle with half of the salt and pepper. Repeat oil, salt and pepper on the other side.
  • Flip back over, so that the cut side is up. Spread the minced garlic all over the bok choy with your hands.
  • Roast the bok choy in the oven for 10 minutes on the lower rack. Rotate the pan and roast for about 10 more minutes, until the leaves start to get lightly charred.

Quick Baby Bok Choy with Garlic image

I prefer to use baby bok choy for this recipe, but you can also use large bok choy. The cook time is really quick, so have all the ingredients ready before you start.

1 ½ tablespoons rapeseed oil
2 teaspoons minced garlic
1 pound baby bok choy
1 tablespoon light soy sauce
½ teaspoon white sugar
salt and freshly ground black pepper
¼ cup water
½ teaspoon sesame oil

Steps:

  • Heat a wok over medium heat. Add oil and allow to get hot. Add garlic and stir-fry until fragrant, about 30 seconds. Add bok choy and cook for 30 seconds. Season with soy sauce, sugar, and salt and stir-fry for 1 minute.
  • Pour water into the wok, cover, and simmer until leaves are dark green and stems are tender, but still firm, 2 to 3 minutes. Remove from heat, drizzle with sesame oil, and season with pepper.

2 pounds baby bok choy, halved
2 tablespoons liquid amino acid (such as Bragg®)
4 teaspoons olive oil
6 slices fresh ginger
3 cloves garlic, sliced
1 teaspoon ground turmeric
1 teaspoon curry powder
½ teaspoon fines herbs
½ teaspoon dried basil
⅛ teaspoon red pepper flakes
freshly ground black pepper to taste

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Line a baking sheet with parchment paper.
  • Mix bok choy, liquid amino acid, olive oil, ginger, garlic, turmeric, curry powder, fines herbs, basil, red pepper flakes together in a large bowl; season with black pepper. Place coated bok choy on the prepared baking sheet; pour remaining liquid over bok choy.
  • Bake in the preheated oven until thickest ends of bok choy are tender, 6 to 10 minutes.

There's no better way to enjoy the crisp delicate taste of bok choy. This basic stir-fry can be served as is, or you can add meat or tofu to make it more substantial. Quick and easy, this is one of my favorite ways to load up on leafy greens. Serve with fluffy white rice, or over noodles in soup.

1 tablespoon vegetable oil
2 cloves garlic, crushed and chopped
8 heads baby bok choy, trimmed and cut into bite-size pieces
salt to taste

Steps:

  • Heat the oil in a large skillet or wok over medium heat, and cook the garlic in the hot oil until fragrant, 1 to 2 minutes.
  • Mix in the bok choy, and cook and stir until the green parts of the leaves turn bright green and the stalks become slightly translucent, 5 to 8 minutes. Sprinkle with salt to serve.

5 -6 cups of fresh bok choy, chopped (1 bunch)
1 tablespoon olive oil
3 -4 garlic cloves, minced

Steps:

  • Separate & wash bok choy, trim bottom of stalks & pat dry.
  • Chop bok choy into desired width, set aside.
  • In frying pan heat olive oil & minced garlic on medium heat for 4-5 minutes.
  • Add bok choy, toss to coat & cook approximately 10 minutes, tossing bok choy every minute or so.
