This Garam Masala Chicken recipe combines chicken, tomato and onion with coconut milk spiced with garam masala for a delicious dinner.

6-8 oz. chicken breasts (I used one big one)
One can light coconut milk
Half a large tomato (cut into large chunks)
Half a large yellow onion (sliced)
3 Tbsp. Garam Masala
2 tsp. Curry Powder
Salt and pepper to taste
1 clove of garlic (minced)
1 Tbsp. olive oil (coconut oil works great if you have it!)
Cilantro for garnish

Steps:

  • Thinly slice the chicken breast into bite-sized pieces and season with salt, pepper, and 1 Tbsp. garam masala.
  • Heat the oil in a large skillet over medium-low heat. Once hot, add garlic and cook for 30 seconds.
  • Turn the heat up to medium-high and add chicken. Sear until brown on both sides.
  • Add tomatoes and onion and stir to coat in spices.
  • Add additional 2 Tbsp. garam masala and the curry powder. Stir and let the spices toast in the oil.
  • Add the can of coconut milk and stir until spices are incorporated into the liquid.
  • Bring the mixture to a boil and let cook for about a minute.
  • Using the back of a wooden spoon, smash the cooked tomatoes to release their juices into the coconut milk.
  • Reduce heat to simmer and let cook for fifteen-twenty minutes or until thickened.
  • Taste and adjust salt and pepper as needed.
  • Garnish with cilantro and serve over rice.

1 tablespoon olive oil
4 (3 ounce) skinless, boneless chicken breast halves
1 bunch green onions, chopped
1 ½ cups chopped tomatoes
1 teaspoon garlic salt
¼ cup water
2 teaspoons garam masala, divided

Steps:

  • Heat the olive oil in a large skillet over medium-high heat. Place the chicken breasts in the hot oil and cook until browned on one side, about 3 minutes. Flip the chicken and add the onions; cook another 2 minutes. Add the tomatoes, garlic salt, and water to the chicken; stir. Season with 1 1/2 teaspoon garam masala. Bring the mixture to a boil. Reduce heat to medium-low, cover, and simmer another 10 minutes, stirring occasionally.
  • Stir the remaining 1/2 teaspoon garam masala through the mixture. Raise heat to medium and bring mixture to a boil. Cook until the chicken no longer pink in the center and the juices run clear, about 5 minutes more. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

This quick and easy garam masala chicken recipe makes for a tasty weeknight dinner. It's a lightened up version of classic butter chicken dish while still having a lot of flavor. Serve it with whole grain basmati rice for a healthy and wholesome meal. Makes 2 generous portions, or 4 lighter portions.

3 tablespoon extra-virgin olive oil
2 small yellow onions, (finely chopped)
4 large cloves garlic, (minced)
2 tablespoons freshly grated ginger
1 tablespoon garam masala spice
1 teaspoon curry powder
1 teaspoon ground coriander
1/2 teaspoon ground paprika ((sweet))
1/2 teaspoon cayenne powder
1 teaspoon sea salt
generous sprinkle of freshly ground black pepper
500-600 g boneless skinless chicken breast halves ((preferably organic), cubed)
1 tablespoon tomato paste
1 x 400 g can organic diced tomatoes
1/2 cup chicken broth ((125 ml))
1 x 200 ml can organic coconut milk
3 generous handfuls spinach, (trimmed and chopped)
freshly chopped cilantro, (to garnish)
wholegrain basmati rice

Steps:

  • Heat the olive oil in a wok or deep pan over medium heat to medium-high heat. Add the onions, garlic and ginger, along with the garam masala, curry powder, coriander, paprika, cayenne, salt, and pepper. Stir to combine and cook, stirring occasionally, until the onion softens.
  • Add the cubed chicken breast and the tomato paste to the pan. Cook for a few minutes to brown the chicken a little. Stir in the diced tomatoes and chicken broth. Cover with a lid and simmer for 20 minutes over medium to medium-low heat.
  • Add the coconut milk and mix to combine. Continue to cook on a low simmer for 10 minutes. Then add the spinach and cook for 1-2 minutes, until wilted. Garnish with freshly chopped cilantro and serve the garam masala chicken over whole grain basmati rice. Enjoy!

  • Stir in tomatoes, garlic salt and water. Sprinkle 1 1/2 teaspoons of the garam masala over chicken and vegetables. Bring to boil. Reduce heat,cover and simmer 10 minutes, stirring occasionally or until chicken and vegetables are tender.

The Australian Women's Weekly version of this classic curry. Can easily be halved. Make this a day ahead to let the curry flavours develop, serve with saffron rice and chapatis. I'm not a fan of dark meat so I normally make my butter chicken with breast meat, diced.

1 1/2 kg chicken thigh fillets, halved
4 garlic cloves, crushed
2 teaspoons garam masala
2 teaspoons coriander
2 teaspoons cumin
1/2 teaspoon chili powder
2 teaspoons sweet paprika
1/2 cup plain yogurt
80 g butter, chopped
2 tablespoons white vinegar
2 tablespoons tomato paste
1 (410 g) can tomato puree
3/4 cup chicken stock
5 cardamom pods, bruised
1 cinnamon stick
300 ml cream
1/3 cup cilantro, chopped

Steps:

  • Combine chicken, garlic, spices and yoghurt in a large bowl, cover and refrigerate 3 hours or overnight.
  • Melt butter in large saucepan or wok; cook chicken mixture, stirring, about 10 minutes or til chicken browns slightly.
  • Add vinegar, paste, puree, stock, cardamom and cinnamon stick; bring to a boil. Reduce heat and simmer, uncovered, about 30 minutes or til chicken is cooked through.
  • Add cream, stir until heated through; stir in cilantro just before serving.

Got this from a friend. Chana masala with spinach is a variation of a traditional and popular Indian dish. If you don't have all the spices on hand, its ok to omit one of them without too much trouble, but don't omit more than two or you will have a completely different (and bland!) dish on your hands. For a heartier variation, toss in some tofu with the chickpeas and serve over rice.

1 (14 ounce) can chickpeas (in water or precooked,also called garbanzo beans)
1/2 cup water
1/2 onion, diced
3 garlic cloves, diced
3 tablespoons olive oil
1 lemon, juice of (approx 2 tbsp)
1/2 teaspoon curry powder
1/2 teaspoon coriander powder
1/2 teaspoon cumin
1/2 teaspoon garam masala
1 bunch fresh spinach, rinsed

Steps:

  • In a large skillet or frying pan, sautee onions and garlic in olive oil until soft, about 3-5 minutes.
  • Add chickpeas straight from the can, including all the water.
  • Add spices and lemon juice, cover, and simmer about 10-15 minutes, stirring occasionally, adding more water if needed, until chickpeas are browned and soft.
  • Reduce heat, add spinach and cover.
  • Allow spinach to wilt for 2-4 minutes.
  • Serve immediately.

400g can chickpeas , drained
1 tsp cumin seed
1 medium onion , finely chopped
1 garlic clove , finely chopped
1cm piece ginger , peeled and finely chopped or grated
1 tsp garam masala
½ red chilli , deseeded and finely chopped
1 tsp ground coriander
1 tsp ground cumin
1 tsp turmeric
1 tsp paprika
400g can whole plum tomato
juice ½ lemon
220g bag baby spinach
1 tbsp rapeseed oil
75g quick-cook brown basmati rice

Steps:

  • Heat a large non-stick pan and dry-fry the cumin seeds for 1 min, stirring often, while they pop. Remove and set aside. Cook the rice following pack instructions.
  • Heat the oil using the same large pan, add the onion, garlic, ginger and chilli, and sauté over a medium heat for about 3 mins. Reduce the heat, add all the spices, stir well and cook for a further 2 mins.
  • Add the tomatoes, stirring, and use the side of a spoon to break them up into smaller bite-sized chunks.
  • Add the chickpeas and 200ml water. Bring to the boil, then simmer for 10 mins.
  • Stir in the lemon juice and spinach. Let the spinach wilt, then remove the pan from the heat.
  • Divide the rice between 2 bowls, and serve the curry. (The flavours intensify as it cools, so for a fuller flavour, make earlier in the day and reheat slowly prior to serving.)
