These easy sub rolls can be made from scratch in just one hour! They're perfect for sandwiches like French dips, meatball subs, and more!

Yield 4 10" sub rolls

Number Of Ingredients 6

4- 4 1/2 C bread flour
1 tsp sea salt
1 1/2 Tbsp yeast
2 C warm water
1 egg
sesame seeds

Steps:

  • 1.Turn the oven on to warm up and set a timer for three minutes. Turn the oven off when the timer goes off. Line a baking sheet with parchment paper or silicone mat.
  • 2. Measure the yeast out into the bottom of a liquid measuring cup, pour the hot water in on yeast. Combine 3 cups of the flour and salt in a medium-sized mixing bowl, stir to mix.
  • 3. Pour the yeast water into the flour and stir with a wooden spoon until the ingredients are combined. The dough should look shaggy at this point. Add another cup of flour and stir/mix until the dough begins to be less sticky and more smooth. Transfer the dough onto a floured surface and knead (push and fold the dough) until the dough is smooth and no longer sticks to your fingers when pressed. Add additional flour as needed.
  • 3. Divide the dough into four parts. Roll each into a rectangle, about 6" x 8". Tightly roll up the rectangle into a long log. Pinch the seam closed, place the log on the prepared baking sheet seam-side down.
  • 4. Cover the sub rolls loosely with a tea towel and place the baking sheet in the warm oven. Set a timer for 10 minutes. After ten minutes, remove the loaves from the oven, being careful not to shake them or set the pan down too hard (and make the dough fall). Place the sub rolls on top of the oven to continue rising while you heat the oven to 425°.
  • 5. Remove the tea towel. Brush the tops of the sub rolls with a beaten egg, then sprinkle generously with sesame seeds. Gently place the sub rolls in the oven as soon as the oven is preheated**. Bake at 425° for 15-20 minutes, until the tops are browned and crusty and a thermometer inserted in the bread reads 180°.
  • 6. The sub rolls will slice best if allowed to cool for 10-15 minutes.

1 1/2 cups water
1 tablespoon active dry yeast
2 tablespoons sugar
2 tablespoons olive oil
1 teaspoon salt
4 cups bread flour

Steps:

  • Mix together warm water, yeast and sugar and let stand for about 10 minutes.
  • In large bowl, combine yeast mixture with oil, salt and 2 cups of the flour.
  • Stir well to combine.
  • Stir in remaining flour 1/2 cup at a time, beating well after each addition.
  • Turn out onto a lightly floured surface and knead until smooth and elastic.
  • Lightly oil a large bowl and place dough in and turn to coat with oil.
  • Cover with cloth and let rise in warm place until doubled, about 1 hour.
  • Deflate the dough and turn out onto floured surface.
  • Divide dough into 16 equal pieces and form into rounds.
  • Place rolls onto lightly greased baking sheet at least 2" apart.
  • Cover rolls with cloth and let rise until doubled, about 40 minutes.
  • Preheat oven to 400 degrees and bake rolls for 18 to 20 minutes or until golden brown.

I think many people will be surprised at just how simple these homemade rolls are. Besides the super obvious reasons why these are better than the ones from the supermarket, you can make them the exact size and shape you want.

1 (.25 ounce) package active dry yeast
1 ½ cups warm water (100 to 110 degrees F)
1 ½ teaspoons fine salt
19 ounces bread flour

Steps:

  • Place yeast and warm water in the bowl of a stand mixer; whisk to mix. Add flour and salt.
  • Knead with dough hook until mixture forms a soft, sticky dough ball and easily pulls away from the sides and the hook, about 5 minutes. (If still too sticky, add a bit more flour and knead a few more seconds.) Transfer dough to a work surface and form into a smooth ball. Place dough back in the mixing bowl. Drizzle the dough and sides of bowl a few drops of vegetable oil. Spread a film of oil over the surface of the dough.
  • Cover the bowl and transfer to a warm, draft-free place until dough is doubled in size, 60 to 90 minutes.
  • Transfer dough to a floured work surface. Form into a rectangle shape and cut into 6 equal pieces. Using your cupped hand and the work surface, roll each section of dough into a smooth round ball. Cover with a clean, dry cloth and let rest 15 minutes.
  • Flatten dough balls into 6- or 7-inch long ovals. Starting with a long edge, roll the dough into a cylinder, applying extra pressure to the ends to form pointy tips for a classic French roll shape. Transfer to parchment-lined baking sheets (do not crowd them) and cover with clean dry towels until doubled, about 1 hour.
  • Preheat oven to 450 degrees F (230 degrees C). Place a pan of water on the bottom rack.
  • With a very sharp knife, score each roll about 1/4 inch deep along one side somewhere between the side and the top. Spritz loaves lightly with water from a spray bottle.
  • Bake in preheated oven about 20 minutes. Spritz loaves again and rotate pans for a more even bake. Bake until loaves are golden brown, about 10 more minutes. Transfer to a cooling rack; cool completely before cutting.

Source: "Fine Cooking" This is one of my recently adopted recipes. I prepared it and it is wonderful. The end result are rolls with a crispy crust and soft chewy center. I always add wheat gluten when adding the flour. This produces a superior quality of bread so I am including it in the list of ingredients.

2 tablespoons unsalted butter, melted
2 1/4 teaspoons dry yeast
2 teaspoons sugar
2 cups water, 70 degrees
1 1/4 ounces nonfat dry milk powder, 1/2 cup
6 cups all-purpose flour
5 teaspoons wheat gluten
1 tablespoon salt
black pepper, to taste (I added 1 teaspoon coarse ground.)
1 cup rye flour
coarse salt, for sprinkling

Steps:

  • Dissolve yeast in mixer with water.
  • Add melted butter, sugar, dry milk, salt and pepper.
  • Whisk to incorporate.
  • Add 4 cups of flour and mix with dough hook.
  • Add additional flour until dough leaves the side of the bowl.
  • Knead dough by hand with a little flour until it is smooth and elastic Let rise in greased bowl, covered for about 2 hours until doubled.
  • At this point the dough can be refrigerated overnight or for 2 days.
  • Bring to room temperature before shaping.
  • Punch down and let rise until doubled again, about 2 hours.
  • Shape into 3 oz rolls, let rise covered for 45 minutes to 1 hour.
  • Sprinkle with rye (or all purpose) flour, slash with lame quite deeply, sprinkle with salt.
  • Bake at 450 for 20-25 minutes (throw 1/4 cup ice water onto bottom of oven as soon as rolls are put in or spray sides of oven with cold water), reduce heat to 400 and bake another 5 minutes.
  • Turn off oven and let rolls sit to crisp for another 5 minutes.
  • Cool at least 20 minutes.
  • Store rolls in plastic bag.
  • To recrisp, put into 400 oven for 5 minutes.

MY FAVORITE SUB (HOAGIE) ROLLS



My Favorite Sub (Hoagie) Rolls image

When it comes to sub rolls, I prefer mine light and fluffy. I make up a big batch of these and freeze them for later use.

5 teaspoons dry active yeast (2 pkgs)
1/4 cup sugar
2 cups water, blood warm
3 tablespoons butter, melted
2 teaspoons salt
6 -7 cups all-purpose flour
cornmeal
1 egg white
sesame seeds (optional)

Steps:

  • Dissolve sugar in water and add yeast to proof. Rest one to two minutes.
  • Melt butter and, along with the salt, stir into yeast mixture.
  • Mix in flour, 1 cup at a time until desired consistency is reached (this dough should not be terribly stick to the touch, but should have plenty of "give" and not be too tough).
  • Knead until VERY well developed (important!). Your dough is finished when you can tear a small piece off, roll into a ball and stretch to form a nearly transparent "window" between your fingers without it tearing.
  • Cover with plastic wrap and let stand until doubled in bulk (approx 40 minutes).
  • Lightly dust a small amount of corn meal over well-greased pans, roll your dough into long, thin "logs" and place about 3" apart on the pans. Slash each loaf every inch and a half with a knife, brush with egg white and sprinkle with sesame seeds if desired.
  • Let double in size.
  • Bake in a 400°F oven until golden brown.

This is basically a standard French bread loaf recipe scaled up and modified for 4 hoagies, with my own observations and tips regarding making them suitable for eating sandwiches. The key point is that biting through the crust of a roll into a sandwich requires a crust that isn't tough.

1 1/2 teaspoons yeast
1 cup water
3 1/4 cups bread flour
1 1/2 tablespoons extra virgin olive oil
1 1/2 teaspoons salt

Steps:

  • Combine yeast with tepid but not warm water and let sit until convinced the yeast isn't dead, 10 minutes maximum.
  • In a large bowl, combine most of the flour, oil and salt, add the water/yeast, and stir/add flour until the ball pulls away from the bowl.
  • Sprinkle flour over a kneading surface and over the ball, and knead for about 7 minutes.
  • Lightly oil a bowl and allow to rise until doubled, usually about 50-60 minutes if in a barely warm place.
  • Punch down the dough, divide into quarters, and shape into 4 hoagies roughly 6" x 3.5" or so. Allow to rise for 20 minutes.
  • Preheat the oven at 425, with a baking stone in the center rack and a ceramic dish on the bottom while the bread rises.
  • Transfer the rolls to the stone, return the stone to the center rack, and turn the heat down to 375.
  • For each of the first 4 minutes baking, toss a dash of water across the bottom of the ceramic dish to create steam.
  • The rolls should be medium brown and more than doubled in height within 29-30 minutes.

500g strong white bread flour , plus extra for dusting
7g sachet fast action yeast
1 tsp white caster sugar
2 tsp fine salt
1 tsp sunflower oil , plus extra for the work surface and bowl

Steps:

  • Tip the flour, yeast, sugar, salt and oil into a bowl. Pour over 325ml warm water, then mix (with a spatula or your hand), until it comes together as a shaggy dough. Make sure all the flour has been incorporated. Cover and leave for 10 mins.
  • Lightly oil your work surface and tip the dough onto it. Knead the dough for at least 10 mins until it becomes tighter and springy - if you have a stand mixer you can do this with a dough hook for 5 mins. Pull the dough into a ball and put in a clean, oiled bowl. Leave for 1 hr, or until doubled in size.
  • Tip the dough onto a lightly floured surface and roll into a long sausage shape. Halve the dough, then divide each half into four pieces, so you have eight equal-sized portions. Roll each into a tight ball and put on a dusted baking tray, leaving some room between each ball for rising. Cover with a damp tea towel and leave in a warm place to prove for 40 mins-1 hr or until almost doubled in size.
  • Heat the oven to 230C/210C fan/gas 8. When the dough is ready, dust each ball with a bit more flour. (If you like, you can glaze the rolls with milk or beaten egg, and top with seeds.) Bake for 25-30mins, until light brown and hollow sounding when tapped on the base. Leave to cool on a wire rack.

A dear friend gave me this recipe, swearing that it is too easy to mess up- and she was right! It was delicous, better than anything fresh from the bakery!

1/4 ounce dry active yeast (1 packet)
1/4 cup warm water
1/4 teaspoon sugar
1 cup hot water
1 1/2 tablespoons granulated sugar
1/2 tablespoon salt
1/4 cup oil
2 1/2-3 cups all-purpose flour

Steps:

  • Dissolve yeast, warm water, and sugar in a small bowl.
  • In a large bowl or stand mixer, combine hot water, granulated sugar, salt, and oil. Add 1 1/2 cups of flour to the mixture in the large bowl/mixer and mix well. Stir in yeast mixture.
  • Add 1 - 1 1/2 cups more flour and mix until well blended. (At this point your dough will still be quite sticky). Leave in bowl and let rise for 1 hour, mixing a few strokes a couple of times during the hour.
  • Divide dough into 2 (or 3 if you want smaller loaves) pieces. Roll out each piece on a floured surface into the length desired then roll up length wise like a jelly roll.
  • Put on a greased cookie sheet, sealed side down, and tuck the ends under. Slash the top diagonally across the top every couple of inches with a sharp knife. Brush with egg white. Preheat oven to 400 degrees Fahrenheit. Let loaves rise 30 more minutes.
  • Bake for 25 - 30 minutes.
