¼ cup chopped onion
2 cups shredded Cheddar cheese, divided
½ cup sour cream
1 tablespoon taco seasoning
1 pinch salt and ground black pepper to taste
2 ½ cups red enchilada sauce
1 ½ teaspoons chili powder
cooking spray
1 (10 ounce) package flour tortillas
1 (15 ounce) can black beans, rinsed and drained
1 (6 ounce) can sliced black olives, drained

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a 9x13-inch casserole dish with cooking spray.
  • Cook and stir ground beef and onion in a skillet until beef is browned and crumbly, 5 to 7 minutes. Drain off grease. Stir 1 cup Cheddar cheese, sour cream, taco seasoning, and pepper into the beef mixture until cheese is melted. Mix in red enchilada sauce, chili powder, and salt.
  • Warm tortillas in the microwave for about 1 minute. Spoon about 1/4 cup of the beef mixture into the center of each tortilla. Roll tortillas up and place in the casserole dish, seam-side down. Spoon any leftover sauce, black beans, and olives over the tortillas. Sprinkle remaining cheese over the top.
  • Bake in the preheated oven until cheese is melted and filling is bubbling, about 20 minutes.

2 garlic cloves, finely chopped
1 3/4 cups thick & chunky salsa
1 3/4 cups refried beans
1 1/4 cups enchilada sauce (10-ounce can)
1/2 cup sliced ripe olives
10 (6 inch) corn tortillas, sliced in half, divided
2 cups shredded mild cheddar cheese, divided (8 ounces)
sliced green onion (optional)

Steps:

  • Preheat oven to 375 degrees.
  • Cook beef, onion and garlic in large skillet until beef is browned then drain.
  • Stir in salsa, beans, enchilada sauce and olives.
  • Bring to a boil.
  • Reduce heat to low; cook, stirring frequently, for 5 to 6 minutes.
  • Layer half of corn tortillas on bottom of greased 13 x 9-inch baking dish.
  • Cover with half of meat sauce and sprinkle with 1 cup cheese.
  • Repeat layers.

1 pound ground beef
1 (15.5 ounce) jar prepared salsa con queso
20 (8 inch) flour tortillas
1 (8 ounce) package shredded Cheddar-Monterey Jack cheese blend

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish, and pour the salsa into the bottom of the dish. Set aside.
  • Cook and stir the ground beef in a skillet over medium heat for about 10 minutes, until meat is browned and crumbly. Drain the grease from the beef, and add the salsa con queso to the skillet, stirring to mix well. Place about 2 tablespoons of the beef mixture down the center of each tortilla, roll the tortillas, and place them seam side down on top of the salsa in the baking dish. Sprinkle the shredded cheese on top of the enchiladas.

4 cooked skinless, boneless chicken breast halves, chopped
8 ounces sour cream
½ cup chopped green onions
3 cups salsa
1 (4 ounce) can diced green chiles
4 cups shredded Monterey Jack cheese
12 (8 inch) flour tortillas

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch baking dish.
  • In a medium bowl combine the soup, chicken, sour cream and green onions. Mix together. In another small bowl combine the salsa and green chile peppers and mix.
  • Cover the bottom of the baking dish with 4 tortillas. Add 1/2 of the chicken mixture, 1/2 of the salsa mixture, and 1 1/2 cups of shredded cheese. Repeat layers. Add another layer of 4 tortillas and top with the remaining 1 cup of cheese.

5 -6 flour tortillas (I use the large ones)
1 1/2 lbs ground beef or 1 1/2 lbs chicken
1 package taco seasoning
chopped onion (to taste)
sliced or chopped jalapeno (optional)
1 can refried beans
1 can enchilada sauce
sliced black olives (optional)
2 -2 1/2 cups grated cheddar cheese (Sharp or Mexican are good)
cooking spray

Steps:

  • Brown beef, with onions and jalapenos.
  • Drain; add the Taco mix as directed.
  • Spray a casserole-baking dish with oil spray.
  • (Large enough dish to be able to place tortillas flat).
  • Add the flour tortillas in layers.
  • Spread each tortilla with 1-2 tablespoons of beans.
  • Distribute desired amount of meat mixture on beans.
  • Spread beans and meat with 2-3 tablespoons of enchilada sauce.
  • Add some olives.
  • Add some cheese.
  • Continue to layer until desired amout of tortillas are used, stopping with beans, meat, sauce, and cheese.
  • Cover and bake in 350 degree oven until hot and bubbly (about 45 min) or heat until hot in microwave.
  • Cool 15-20 min. before serving.
  • It will set up better.
  • This will reheat in microwave in no time, it also, freezes well in single serving section.
  • Thaw before reheating.
  • I like to save a little sauce and cheese to use before reheating, the casserole absorbs them.

1 cup salsa

  • Preheat oven to 350°. In a large skillet, cook ground beef over medium heat until no longer pink, breaking it into crumbles; drain. 1 medium onion (diced)
1/2 tsp. pepper
1 Tbsp. chili powder
1 8-oz can tomato sauce
4 flour tortillas
2 Tbsp. light spreadable butter
1 4-oz can sliced olives, drained
1 1/2 cup grated cheddar cheese
1/2 cup water

Steps:

  • Preheat oven to 400º F. Brown turkey and onion in a large saucepan. Drain any grease and add pepper, chili powder and tomato sauce.
  • Lightly spread tortillas with the spreadable butter and cut into fourths.
  • Spray a casserole dish with cooking spray. Alternate laying tortillas (butter side down) in the casserole dish, then a layer of meat sauce, then a layer of olives and then finally a layer of cheese. Repeat the layers three times.

1 medium yellow or white onion (diced )
3 garlic cloves (chopped )
1 tsp kosher salt
2 tsp chili powder
1 tsp cumin
3 tbsp water
1/3 cup fresh cilantro **OPTIONAL (chopped )
2 10 oz cans red enchilada sauce (If you make your own sauce you will need about 2 1/4 cups.)
15 corn tortillas
8 oz block of cheddar cheese, shredded

Steps:

  • Preheat the oven to 350°
  • In a large skillet brown and crumble the ground beef, drain any excess grease.

Steps:

  • Preheat the oven to 350F.
  • Spray a large non-stick skillet with cooking spray and heat oven medium-high heat. Add ground beef, onion and garlic and cook, stirring occasionally, for 5 minutes, or until the beef is cooked. Drain excess fat.

1 tablespoon olive oil

½ teaspoon red pepper flakes
28 oz can green enchilada sauce
3.8 ounce can sliced black olives
16 oz block Colby Jack cheese, (shredded)
24 corn tortillas

Steps:

  • Preheat oven to 350° and spray a 9 x 13 baking dish with a non-stick cooking spray. Set aside.
  • In a large frying pan or skillet, heat oil over medium high heat.
  • Add chicken and onions to pan, sprinkle with seasonings and pepper. Stir.
  • Cook chicken until it is no longer pink and onions are tender. Drain any excess grease, if needed, and return to pan.
  • Add ⅔ can of the olives into the chicken mixture saving the remaining olives for the top.

A delicious simple layered beef enchilada casserole recipe that is a real crowd pleaser. Serve this enchilada casserole along with your favorite toppings and side dishes.

1 pound Ground Beef ( I used an 80/20 blend)
1½ teaspoon Salt
1 teaspoon Ground Black Pepper
1 teaspoon Chili Powder ( I use McCormick )
⅛ teaspoon Cumin
1 teaspoon Oregano
½ Onion Powder
½ Garlic Powder
10 ounce Can Mild Enchilada Sauce
2 tablespoons Mild Diced Green Chiles
1 Small Yellow Onion, diced
12 Flour Taco Tortillas (use corn tortillas if preferred)
8 ounces Shredded Mexican Blend Cheese

Steps:

  • Preheat oven to 350°F (176°C)
  • Brown and mince the ground beef in a skillet over medium heat until cooked through; drain excess grease.
  • Next, add the seasonings and green chiles to the cooked beef and stir to mix until combined. Set meat mixture aside.
  • Add enough enchilada sauce to the bottom of a 8½ x 11½ baking dish to glazed the bottom (less than ¼ cup). Pour the remaining enchilada sauce into a large bowl.
  • Take 4 of the flour tortillas and one by one coat in the enchilada sauce and place in the bottom of the casserole dish (see post for tips) to form the bottom layer.
  • Next, add about ⅓ of the meat mixture on top of the tortillas layer along with some of the diced onions then top with some of the shredded cheese. Repeat layers twice more ending with the meat mixture, onions and a final top layer of the shredded cheese.
  • Cover the casserole with aluminum foil and bake for 45 minutes. Allow the enchilada casserole to cool about 15 minutes before serving.

Sunny takes enchiladas to new heights with this tall, layered pie- well-seasoned beef gets stacked with red sauce, corn tortillas and two kinds of cheese. Put the baking dish on a baking sheet in the oven to catch any cheese drips-this pie's a bubbly one.

1/2 cup minced onion
Kosher salt
2 tablespoons tomato paste
1 clove garlic, minced
1 teaspoon ground cumin
1/2 teaspoon chopped fresh thyme leaves
1 (28-ounce) can crushed tomatoes
3/4 cup beef broth
2 tablespoons olive oil
1/2 cup chopped onion
1/2 cup finely chopped green bell pepper
1/2 cup finely chopped yellow bell pepper
2 cloves garlic, minced
1 1/2 pounds ground beef
1 teaspoon onion powder
1 teaspoon ground cumin
1 teaspoon chopped fresh thyme leaves
1 packet Spanish seasoning blend (recommended: Sazon)
2 Roma tomatoes, seeded and chopped
1/4 cup beef broth
Kosher salt and freshly ground black pepper
1 1/2 cups shredded Cheddar cheese
1 1/2 cups shredded Monterey Jack cheese
18 (5-inch) corn tortillas

Steps:

  • Preheat the oven to 350degrees F.
  • For the sauce: In a saucepot over medium heat, add the oil, onions and a pinch of salt. Saute until the onions are tender and translucent. Add the tomato paste at this point and turn the heat up a bit, if needed, to cook the paste. Stir and cook until it deepens in color, and then add the cumin, thyme and garlic. Stir to blend and cook until fragrant. Then add the beef broth and crushed tomatoes. Raise the heat to bring the mixture to a boil, and then lower to a simmer and cover, simmering for 20 minutes more. (The sauce can be stored and frozen at this point.)
  • For the beef filling: Meanwhile, in a large pan with straight sides, add the olive oil over medium-high heat. When the oil begins to swirl, add the onions and green and yellow bell peppers. Add the garlic and cook until tender, about 4 minutes more. Add the ground beef, broth, cumin, onion powder, thyme, tomatoes and Spanish seasoning, allowing time between each addition to blend. Season with a pinch of salt and a grind or 2 of pepper (the Spanish seasoning adds salt content, so be careful to not over season). Stir and break down the beef into bits using a spoon or fork. Cook until the beef is cooked through, 8 to 10 minutes. (The beef can be stored and frozen at this point.)
  • To assemble the casserole: Toss the shredded cheeses together to blend and set aside. Add 1/2 cup of the red sauce to a 9 1/2-inch deep-dish baking dish and spread to coat the bottom evenly. Top with 6 tortillas, overlapping to cover the bottom of the casserole dish. Layer the dish by next adding half of the beef mixture and 1/2 cup of the shredded cheeses, spreading evenly in the casserole. Next, dunk 6 tortillas, one by one, in the warm red sauce and layer over the cheese and beef, overlapping where needed. Top with the remaining beef, another 1/2 cup of the shredded cheeses and another layer of tortillas dunked in the red sauce. Pour the rest of the sauce over the top, spread evenly and finish with the remaining shredded cheese. Place dish on a baking sheet and bake until the cheese is melted and the sauce bubbles, 25 to 30 minutes. If baking the dish from the freezer, add 15 to 20 minutes to the cook time, or until it's bubbly. Cover loosely with foil if it's browning too quickly. Serve hot.
