- Preheat the oven to 350 degrees F (175 degrees C). Spray a 9x13-inch casserole dish with cooking spray.
- Cook and stir ground beef and onion in a skillet until beef is browned and crumbly, 5 to 7 minutes. Drain off grease. Stir 1 cup Cheddar cheese, sour cream, taco seasoning, and pepper into the beef mixture until cheese is melted. Mix in red enchilada sauce, chili powder, and salt.
- Warm tortillas in the microwave for about 1 minute. Spoon about 1/4 cup of the beef mixture into the center of each tortilla. Roll tortillas up and place in the casserole dish, seam-side down. Spoon any leftover sauce, black beans, and olives over the tortillas. Sprinkle remaining cheese over the top.
- Bake in the preheated oven until cheese is melted and filling is bubbling, about 20 minutes.

- Preheat oven to 375 degrees.
- Cook beef, onion and garlic in large skillet until beef is browned then drain.
- Stir in salsa, beans, enchilada sauce and olives.
- Bring to a boil.
- Reduce heat to low; cook, stirring frequently, for 5 to 6 minutes.
- Layer half of corn tortillas on bottom of greased 13 x 9-inch baking dish.
- Cover with half of meat sauce and sprinkle with 1 cup cheese.
- Repeat layers.
- Bake, covered, for 20 minutes.
- Remove cover and bake for additional 5 minutes or until bubbly and cheese is melted.

- Preheat an oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish, and pour the salsa into the bottom of the dish. Set aside.
- Cook and stir the ground beef in a skillet over medium heat for about 10 minutes, until meat is browned and crumbly. Drain the grease from the beef, and add the salsa con queso to the skillet, stirring to mix well. Place about 2 tablespoons of the beef mixture down the center of each tortilla, roll the tortillas, and place them seam side down on top of the salsa in the baking dish. Sprinkle the shredded cheese on top of the enchiladas.
- Bake for 15 to 20 minutes in the preheated oven, until the cheese is browned and the enchiladas are hot and bubbling.

- In a medium bowl combine the soup, chicken, sour cream and green onions. Mix together. In another small bowl combine the salsa and green chile peppers and mix.

- Brown beef, with onions and jalapenos.
- Drain; add the Taco mix as directed.
- Spray a casserole-baking dish with oil spray.
- (Large enough dish to be able to place tortillas flat).
- Add the flour tortillas in layers.
- Spread each tortilla with 1-2 tablespoons of beans.
- Distribute desired amount of meat mixture on beans.
- Spread beans and meat with 2-3 tablespoons of enchilada sauce.
- Add some olives.
- Add some cheese.
- Continue to layer until desired amout of tortillas are used, stopping with beans, meat, sauce, and cheese.
- Cover and bake in 350 degree oven until hot and bubbly (about 45 min) or heat until hot in microwave.
- Cool 15-20 min. before serving.
- It will set up better.
- This will reheat in microwave in no time, it also, freezes well in single serving section.
- Thaw before reheating.
- I like to save a little sauce and cheese to use before reheating, the casserole absorbs them.

- Preheat oven to 400º F. Brown turkey and onion in a large saucepan. Drain any grease and add pepper, chili powder and tomato sauce.
- Lightly spread tortillas with the spreadable butter and cut into fourths.
- Spray a casserole dish with cooking spray. Alternate laying tortillas (butter side down) in the casserole dish, then a layer of meat sauce, then a layer of olives and then finally a layer of cheese. Repeat the layers three times.

- Preheat oven to 350° and spray a 9 x 13 baking dish with a non-stick cooking spray. Set aside.
- In a large frying pan or skillet, heat oil over medium high heat.
- Add chicken and onions to pan, sprinkle with seasonings and pepper. Stir.
- Cook chicken until it is no longer pink and onions are tender. Drain any excess grease, if needed, and return to pan.
- Add ⅔ can of the olives into the chicken mixture saving the remaining olives for the top.

- Cover with aluminum foil and bake in preheated oven for 40-50 minutes, removing the foil during the last 10 minutes of baking.
- Carefully remove from oven and serve hot. Garnish with sour cream, sliced avocado, cilantro, green onions and/or salsa.

- Brown and mince the ground beef in a skillet over medium heat until cooked through; drain excess grease.
- Next, add the seasonings and green chiles to the cooked beef and stir to mix until combined. Set meat mixture aside.
- Add enough enchilada sauce to the bottom of a 8½ x 11½ baking dish to glazed the bottom (less than ¼ cup). Pour the remaining enchilada sauce into a large bowl.
- Take 4 of the flour tortillas and one by one coat in the enchilada sauce and place in the bottom of the casserole dish (see post for tips) to form the bottom layer.

- Preheat the oven to 350degrees F.
- For the sauce: In a saucepot over medium heat, add the oil, onions and a pinch of salt. Saute until the onions are tender and translucent. Add the tomato paste at this point and turn the heat up a bit, if needed, to cook the paste. Stir and cook until it deepens in color, and then add the cumin, thyme and garlic. Stir to blend and cook until fragrant. Then add the beef broth and crushed tomatoes. Raise the heat to bring the mixture to a boil, and then lower to a simmer and cover, simmering for 20 minutes more. (The sauce can be stored and frozen at this point.)
- For the beef filling: Meanwhile, in a large pan with straight sides, add the olive oil over medium-high heat. When the oil begins to swirl, add the onions and green and yellow bell peppers. Add the garlic and cook until tender, about 4 minutes more. Add the ground beef, broth, cumin, onion powder, thyme, tomatoes and Spanish seasoning, allowing time between each addition to blend. Season with a pinch of salt and a grind or 2 of pepper (the Spanish seasoning adds salt content, so be careful to not over season). Stir and break down the beef into bits using a spoon or fork. Cook until the beef is cooked through, 8 to 10 minutes. (The beef can be stored and frozen at this point.)
- To assemble the casserole: Toss the shredded cheeses together to blend and set aside. Add 1/2 cup of the red sauce to a 9 1/2-inch deep-dish baking dish and spread to coat the bottom evenly. Top with 6 tortillas, overlapping to cover the bottom of the casserole dish. Layer the dish by next adding half of the beef mixture and 1/2 cup of the shredded cheeses, spreading evenly in the casserole. Next, dunk 6 tortillas, one by one, in the warm red sauce and layer over the cheese and beef, overlapping where needed. Top with the remaining beef, another 1/2 cup of the shredded cheeses and another layer of tortillas dunked in the red sauce. Pour the rest of the sauce over the top, spread evenly and finish with the remaining shredded cheese. Place dish on a baking sheet and bake until the cheese is melted and the sauce bubbles, 25 to 30 minutes. If baking the dish from the freezer, add 15 to 20 minutes to the cook time, or until it's bubbly. Cover loosely with foil if it's browning too quickly. Serve hot.
