4 Japanese eggplants, cut in half lengthwise
1/4 cup olive oil
1 teaspoon kosher salt
1 cup jarred marinara sauce
1 cup shredded mozzarella cheese
1/2 cup panko breadcrumbs
1/4 cup freshly grated Parmesan cheese
1/3 cup fresh basil leaves, torn
1/2 teaspoon red pepper flakes

Steps:

  • Preheat the oven to 400 degrees F.
  • Arrange the eggplant halves cut-side up on a rimmed baking sheet. Using the tip of a knife, score the flesh of the eggplant, being careful not to cut all the way through. Rub them evenly with 2 tablespoons olive oil and season with the salt. Roast until tender, 15 to 20 minutes.
  • Remove the eggplant from the oven and divide the marinara evenly over the halves. Sprinkle with the mozzarella. Mix together the breadcrumbs, Parmesan and remaining 2 tablespoons olive oil in a small bowl. Top the eggplant with the breadcrumb mixture and return to the oven until golden brown and bubbly, about 12 minutes. Sprinkle with the basil and pepper flakes.

2 eggs, beaten with a fork
1 1/2 cup panko bread crumbs
2 tablespoons extra-virgin olive oil
1 (25.0-ounce) jar marinara sauce
1 cup shredded mozzarella cheese
1/2 cup shredded Parmigiano Reggiano

Steps:

  • Place a large rimmed baking sheet in the oven; preheat the oven to 375°F.
  • Coat eggplant slices with egg, then coat each slice on both sides with panko.
  • Spread oil on the hot baking sheet and arrange eggplant slices on it in a single layer.
  • Bake 15 minutes, flip and bake another 10 minutes, or until golden brown.
  • Increase the oven temperature to 475°F.
  • In an 8x10-inch ovenproof dish, layer half of the sauce, then baked eggplant, and top with cheeses.
  • Repeat with remaining ingredients, finishing with cheese.
  • Bake until cheese melts and is golden brown in spots, about 15 minutes.

1/4 cup extra-virgin olive oil
3 medium yellow onions, peeled, halved, and cut into thin slices
6 cloves garlic, peeled and grated
Kosher salt
1 tablespoon crushed red pepper flakes
1 tablespoon granulated sugar
3 (28-ounce) cans San Marzano whole plum tomatoes
2 medium eggplants, washed and cut into 1/2-inch thick rounds (about 2 1/2 pounds)
1/2 cup all-purpose flour
Freshly ground black pepper
5 large eggs
3 tablespoons whole milk
4 cups Italian-style breadcrumbs
1 tablespoon dried oregano
1 tablespoon fresh thyme leaves
Vegetable oil, for frying, as needed, about 1 1/2 to 2 cups
1 1/2 pounds mozzarella cheese, cut into thin slices
1/2 cup grated Parmesan
1 pound provolone cheese, grated
2 handfuls fresh basil, leaves only, torn

Steps:

  • For the tomato sauce: In a large skillet, heat the olive oil over medium-high heat. Add the onion and garlic and season with salt and red pepper flakes. Cook until the onions become translucent, 3 to 5 minutes. Add the sugar and the canned tomatoes. Use a wooden spoon to break up some of the whole tomatoes and cook 10 to 15 minutes over medium heat, stirring from time to time. Taste for seasoning, the tomatoes should be fairly broken down and the flavors coming together. Cook for another few minutes if the tomatoes still taste like they need a little more time to break down. Set aside to cool.
  • For the eggplant (this step is optional, leave it out if you have limited time): Arrange the eggplant rounds in a single layer on 2 baking sheets. Sprinkle with salt on both sides of each slice and allow it to sit for about 1 hour. Salting it draws out the liquid and bitter flavor. After an hour, rinse with cold water and dry them thoroughly with a kitchen towel.
  • Put the flour in a medium bowl and season with salt and pepper. In another bowl, whisk together the eggs and milk and season with salt and pepper. In a third bowl, combine the breadcrumbs with the oregano and fresh thyme leaves and season with salt and pepper. Dip each eggplant slice in the flour and shake off any excess. Then, dip in the egg mixture, and finally in the breadcrumbs. Make sure to coat both sides of each slice of eggplant. Arrange them in single layers on the baking sheets.
  • In a large skillet, pour enough oil to accumulate about 1/2-inch in the bottom. Heat the oil until it begins to smoke lightly (alternatively, test with a thermometer and wait until the oil registers between 380 degrees F and 400 degrees F). Use a pair of kitchen tongs to add a single layer of the eggplant to the pan. Cook them until they are golden brown, about 2 minutes on each side. Remove from the oil and transfer to a baking sheet fitted with a kitchen towel so the eggplant can drain as the others cook. Season lightly with salt. Take care to reheat the oil back up to temperature before adding another batch of slices to the pan.
  • Preheat oven to 350 degrees F.
  • To assemble: In a 9 by 13-inch flameproof baking dish, spoon about 1/4 of the tomato sauce on the bottom. Top with a layer of the fried eggplant; the eggplant slices can overlap slightly. Top with about 1/3 of the mozzarella slices. Sprinkle with about 1/4 of the Parmesan and provolone cheeses. Top with a layer of torn basil leaves. Spoon sauce and repeat the layering 2 more times to make 3 layers. End with the remaining mozzarella. Carefully press the layers down firmly into the dish once assembled. Place the dish in the top part of the oven and cook until the cheese is melted and bubbly, 35 to 40 minutes. For extra browning, put the dish under the broiler for a minute or two just before serving to get an extra brown cheesy top. I always nibble on a bit of that before sharing it with my friends!

NO-FRY SHEET-PAN EGGPLANT PARMESAN

Skip the messy process of frying eggplant and bake it on a sheet pan instead. The thick slices get the same crisp exterior and soft interior, but you'll use a lot less oil.

4 tablespoons olive oil
2 large cloves garlic, thinly sliced
One 28-ounce can crushed tomatoes
1/4 teaspoon crushed red pepper flakes
Kosher salt
1/3 cup fresh basil leaves, chopped, plus more torn leaves for serving
1 medium-large eggplant (about 1 1/2 pounds), sliced into 1/2-inch-thick rounds
1/3 cup all-purpose flour
2 eggs, beaten
3/4 cup Italian-style breadcrumbs
1 pound fresh mozzarella, thinly sliced
1/4 cup grated Parmesan

Steps:

  • Preheat the oven to 450 degrees F.
  • Put 2 tablespoons olive oil and the garlic in a large skillet and place over medium heat. When the garlic sizzles and its edges start to brown, add the tomatoes, red pepper flakes and 3/4 teaspoon salt. Bring to a simmer and continue to cook, stirring occasionally, until the sauce thickens, about 8 minutes. Remove from heat and stir in the chopped basil.
  • Heat an 18-by-13-inch sheet pan in the oven for at least 10 minutes while you bread the eggplant. Line up 3 shallow dishes; fill one with the flour, one with the beaten eggs, and one with the breadcrumbs. Sprinkle both sides of the eggplant slices with salt. Dredge an eggplant slice in the flour (tapping off excess), then dip in the egg, and finally dredge it in the breadcrumbs. Repeat with the remaining eggplant.
  • When all the eggplant slices are breaded, carefully remove the heated sheet pan from the oven and brush it with 2 tablespoons olive oil. Place the eggplant on the sheet pan in a single layer. Bake until the undersides are crisp and browned, 8 to 10 minutes, then flip the slices and continue baking until they are golden on the second side, 8 to 10 minutes more.
  • Top the baked eggplant with the tomato sauce, mozzarella and Parmesan. Return the pan to the oven and bake, rotating halfway through, until the cheese melts and browns and the sauce is bubbly, 20 to 25 minutes. Top with torn basil before serving.

6 large eggs, beaten
2 tablespoons whole milk
Olive oil, as needed
7 cups QUICK MARINARA SAUCE, recipe follows
2/3 cup grated Parmesan, divided
1 pound fresh mozzarella, thinly sliced
3 tablespoons extra-virgin olive oil
1/2 medium onion, diced (about 1/3 cup)
5 cloves garlic, chopped
7 cups whole, peeled, canned tomatoes in puree (about two 28-ounce can), roughly chopped
2 sprigs of fresh thyme
2 sprigs of fresh basil
1 tablespoon kosher salt
Freshly ground black pepper

Steps:

  • Arrange the eggplant slices on several baking sheets and sprinkle generously all over with kosher salt. Set aside to let the bitter juices weep from the eggplant, about 1 hour.
  • Transfer the eggplant to a colander in the sink, and rinse well under cold running water. Transfer eggplant to a work surface and blot very dry with paper towels.
  • In a large bowl, whisk together the 1 1/2 teaspoons salt, breadcrumbs, oregano, thyme, and season with pepper.
  • Place the flour in a medium lipped plate or bowl. In another medium bowl, whisk the egg and milk together. Dredge an eggplant slice in the flour, then dip it in the egg, and finally dredge it in the breadcrumb mixture. Shake off any excess breading and transfer the eggplant to a baking sheet. Repeat with the remaining eggplant.
  • In a large straight-sided skillet, pour the oil to a depth of 1/2 inch. Heat the oil over medium heat until it registers 400 degrees F on a deep frying thermometer. (The oil must be heated to 400 degrees F. so that the breaded eggplant, when added, will drop the temperature of the oil to the proper frying temperature of 375 degrees F.)
  • Working in small batches, fry the eggplant slices, turning once, until golden brown, about 3 minutes per batch. Using tongs, transfer to a paper towel-lined baking sheet and season with salt to taste. Repeat with the remaining eggplant.
  • Preheat the oven to 400 degrees F. Lightly brush a 15 x 10- x 2-inch-baking dish with olive oil. Cover the bottom of the baking dish with 1/3 of the marinara sauce and arrange half of the eggplant over the sauce. Cover the eggplant with another 1/3 of the sauce. Scatter half of the Parmesan and half of the mozzarella over the sauced eggplant. Repeat with the remaining eggplant, sauce, Parmesan, and mozzarella. Bake until hot and just beginning to brown, about 30 minutes. Serve immediately.
  • Heat the oil in a medium saucepan over medium-high heat. Saute the onion and garlic, stirring, until lightly browned, about 3 minutes. Add the tomatoes and the herb sprigs and bring to a boil. Lower the heat and simmer, covered, for 10 minutes.
  • Remove and discard the herb sprigs. Stir in the salt and season with pepper to taste. Use immediately, store covered in the refrigerator for up to 3 days, or freeze for up to 2 months.

2 eggplants
4 eggs
1 cup olive oil
1 tablespoon chopped garlic
6 leaves chopped fresh basil
1/4 cup white wine
3 cups your favorite marinara sauce
12 slices provolone
12 tablespoon grated Parmesan
1 tablespoon chopped fresh parsley

Steps:

  • Slice the eggplants into twelve 1/2-inch-thick slices (total), then stack them on top of each other and cut off the eggplant skins. (Cut your slices first, then the skin, so that you don't cut too much eggplant flesh off.)
  • Beat the eggs in a bowl and put the eggplant slices in the egg wash. Preheat 2 saute pans over high heat with 1/2 cup olive oil in each pan. Take the eggplant slices from the egg wash and saute 6 slices in each pan until golden brown on each side. Once you flip the slices over, poke a couple of holes with a fork in the eggplant. Then hold the eggplant to one side of the pan and drain the oil out of each pan. Add the garlic and basil to each pan. Add 2 ounces white wine to each pan. Then add 12 ounces marinara sauce to each pan. Turn down the heat to a simmer. Turn the eggplant slices in the saute pans, making sure the sauce is on the bottom and the eggplant remains on top. Top each slice with 1 slice of provolone. Add 1 tablespoon Parmesan to each eggplant slice. Add a pinch of chopped parsley to each pan. Then cover to melt everything together. Then plate. When plating, take the eggplant out first, making sure the cheese stays on top. Surround the plated eggplant with the remaining sauce in the pan.

SUPER EASY EGGPLANT PARMESAN

This recipe is so easy it's crazy. You don't even have to fry the eggplant before you assemble the casserole. I think it gives great taste and texture this way. Also saves a lot of calories! 2 large eggplant (cut into ¼-inch thick rounds)
2 eggs (beaten)
¼ cup almond milk
1½ cups panko breadcrumbs
1¼ cup grated Parmesan cheese (divided)
2 teaspoons oregano
2 tablespoons fresh thyme
½ teaspoon red pepper flakes
½ teaspoon sea salt (more for sprinkling)
Freshly ground black pepper
Extra-virgin olive oil (for drizzling)
28 ounces Marinara Sauce
2 large balls fresh mozzarella (thinly sliced)
⅓ cup fresh basil leaves

Steps:

  • Preheat the oven to 400°F and line 2 baking sheets with parchment paper.
  • In a medium-sized shallow dish, whisk the eggs and almond milk.
  • In another medium-sized shallow dish, combine the panko, 1 cup Parmesan cheese, oregano, thyme, red pepper flakes, salt, and several grinds of pepper.
  • Dip the eggplant slices into the egg mixture and then into the panko mixture. Place onto the baking sheets, drizzle with olive oil, and bake for 18 minutes or until tender and golden brown.

  • Pre-heat a fan forced oven to 180 degrees celcius. Rub a lasagne dish with olive oil. Slice the eggplant into thin slices. Sprinkle with salt and leave for five minutes before patting them down with paper towel to remove any moisture. .
  • Line the bottom of the lasagne dish with one layer of eggplant. Spoon over enough tomatoes to cover, sprinkling over a little bit of the garlic. Repeat with all the eggplant and tomatoes to create your layers. Wrap tightly with foil and bake for 45 mins or until tender.

1 medium onion (minced)
4 large garlic cloves (minced)
5.5 ounce can tomato paste
28 ounce can crushed tomatoes
2 teaspoons honey
3 ounces grated parmesan cheese (vegetarian, if needed) (about 1 ½ cups )
12 ounces grated mozzarella cheese (about 3 cups)
Minced basil (for garnish)

Steps:

  • Preheat your oven to 425 degrees. Line 2 baking sheets with parchment paper.
  • Cut the tops off the eggplants then cut them into ½ inch thick slices. Lay them on the baking sheets, drizzle them with 2 tablespoons of the olive oil and sprinkle them with 1 teaspoon of salt. Roast in the oven for 25 minutes.
  • While the eggplants are cooking, heat the remaining 2 tablespoons of oil in a medium-sized pot. Add the onion and cook until it is translucent, about 5 minutes. Add the garlic and tomato paste and cook for 3-4 minutes, or until the tomato paste begins to smell fragrant. Add the crushed tomatoes, honey, and 1 teaspoon of salt and bring to a boil.   • Put the pan into the oven and bake until the eggplant parmesan is bubbly and the cheese starts to brown, about 20 minutes. Remove the pan from the oven and let it rest for at least 15 minutes (or up to 30 minutes) before cutting into it.

Easy Baked Eggplant Parmesan image

This Easy Baked Eggplant Parmesan puts a healthier spin on this usually fried Italian favorite.

Number Of Ingredients 9

1 medium-large eggplant (sliced into 1/4-inch thick rounds)
1.5 cups Panko bread crumbs
1.5 TBSP Italian herb seasoning
1.5 TBSP Freshly and finely grated parmesan cheese (You can also use pecorino romano.)
1 tsp kosher salt
2 eggs (beaten + a splash of water)
1 25 oz jar of tomato sauce (Feel free to use your favorite homemade sauce instead.)
2 cups grated mozzarella provolone blend (Or just mozzarella works.)
Fresh basil leaves (for garnish, Leave them whole or julienne them.)

Steps:

  • Preheat the oven to 425°F. Cover two baking sheets with parchment paper and set aside.
  • In a shallow bowl, beat the eggs until cohesive. Add a splash of water and beat again to mix. Set aside. In another shallow bowl, mix the Panko bread crumbs, Italian herbs, freshly grated parmesan, and kosher salt. Create somewhat of an assembly line with your sliced eggplant, egg wash, crumb mixture, and parchment-covered baking sheets.
  • One at a time, dip your eggplant rounds into the egg wash, dredge them into the crumb mixture, then place them onto a baking sheet. Repeat this step for each eggplant round. When done, bake the eggplant rounds for 20-25 minutes or until golden crisp, flipping them over halfway through. When done, remove them from the oven and set them aside.
  • Evenly coat the bottom of a cast iron skillet or baking dish with a thin layer of tomato sauce. Then, lay down your first layer of eggplant rounds. Add a heaping TBSP of tomato sauce over each round, and then sprinkle some shredded cheese over top. Then place down your second layer of eggplant rounds. I like to keep the eggplant rounds evenly stacked so that's it's easier to scoop up for a serving when it's done. Again, add a heaping TBSP of tomato sauce over each round, and top them with cheese. Repeat these steps until you're out of rounds. Smother the topmost rounds with tomato sauce and cheese.
  • Cover with tin foil and set in the oven to bake for 10 minutes. After 10 minutes, remove the foil and bake for another five minutes, or until the cheese starts to bubble and turns lightly golden. When done, remove from the oven and set aside to cool for about five minutes.
  • Garnish with fresh basil and serve with your favorite pasta, fluffy rice, on a bun, or on it's own.

Steps:

  • Slice eggplant into 1 inch thick rounds, place in a shallow bowl, salt on both sides and set aside.
  • In a saucepan add 2 tablespoons olive oil ,chopped garlic and chopped onion and cook until onion is clear.
  • add 2 cups tomato puree and 1 tsp oregano leaves.
  • add salt and pepper to taste, stir, reduce heat and let simmer,.
  • rinse eggplant and pat dry.
  • dip eggplant in flour, dip in lightly beaten egg,then dip in breadcrumbs.
  • add oil to skillet and fry eggplant till golden brown on each side.
  • take 1/2 of the fried eggplant rounds and set in a baking pan or casserole dish.
  • add sauce onto each round.
  • add some shredded mozzarella to each one.
  • add another eggplant round.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Dip eggplant slices in egg, then in bread crumbs. Place in a single layer on a baking sheet. Bake in preheated oven for 5 minutes on each side.

2 medium eggplants (about 1 pound)

olive oil or vegetable oil, for pan frying
2 1/2 cups marinara sauce
8 ounces mozzarella cheese, thinly sliced
1/2 cup grated parmesan cheese or 1/2 cup romano cheese

Steps:

  • Trim the eggplants and cut them into 1/4 inch thick slices.
  • Layer the slices in a colander, sprinkling each layer with salt.
  • Let drain for 30 minutes.
  • Rinse the eggplant and pat dry.
  • Pour about 1/2 inch oil a large deep skillet and heat over medium heat.
  • Fry the slices, in a single layer, turning once, until browned on both sides.
  • Drain on paper towels.
  • Preheat the oven to 350.
  • Spread a thin layer of tomato sauce in a shallow baking dish.
  • Make a layer of eggplant slices, overlapping them slightly.
  • Top with a layer of mozzarella, another layer of sauce, and a sprinkle of grated cheese.
  • Repeat the layering, ending with eggplant, sauce, and grated cheese.
  • Bake for 45 to 60 minutes, or until the sauce is bubbling and the mozzarella is melted.
  • Let stand for 10 minutes before serving.

1 small eggplant
Salt for sweating the eggplant
2 eggs
3/4 cups Italian seasoned bread crumbs
1/4 cup olive oil
1 1/2 cups spaghetti sauce
1/2 cup shredded mozzarella cheese
2 Tablespoons grated Parmesan cheese
Parsley or Basil for garnish (optional)

Steps:

  • Peel the eggplant and cut it into 8 equal slices.
  • Arrange a layer of eggplant slices in a colander in a sink or over a plate. Sprinkle generously with salt. Let stand 30 minutes.
  • Rinse the eggplant slices well and pat dry with paper towels.
  • In a shallow bowl, whisk the egg until well beaten. Place the breadcrumbs in a second shallow bowl.
  • Dip each eggplant slice in the beaten egg, coating both sides, and then dredge with breadcrumbs.
  • Dip each eggplant slice into the egg a second time and then coat both sides with more breadcrumbs.
  • Heat the olive oil to 375 degrees F (190 C) in an electric skillet. Click for a 16 inch electric skillet.
  • Fry the coated eggplant slices in the hot oil about 2 minutes per side until golden. Drain on paper towel.
  • Preheat the oven to 350 degrees F (180 C).
  • Spray an 8 x 8 inch baking dish with non-stick spray. Arrange half the eggplant slices in the bottom of the dish. Click for an 8 x 8 baking dish.
  • Spread half the sauce over top.
  • Sprinkle with half of the mozzarella.
  • Top with half of the Parmesan. Repeat layers.
  • Bake 20 minutes or until the mixture is bubbly and heated through.
  • Garnish with the parsley or basil, if desired.
