This is a really easy recipe that I got from my mother. It is a good meal for someone who doesn't have a lot of time.

Steps:
- Brown and tenderize the stew meat.
- Chop the onion.
- Dice the potatoes.
- Place all the ingredients in the crockpot except the stew meat.
- Add 1/3 cup water.
- Place the stew meat on top of the rest of the ingredients in the crockpot.
- Cook on low for eight hours.
QUICK AND EASY BEEF STEW
We don't eat red meat very often in our house, but every once in a while someone gets a craving for a hearty beef stew and some crusty Sourdough bread. This is my standby recipe.

- In a medium mixing bowl put flour and teaspoon each salt and pepper, mix.
- Toss the beef cubes in the flour until coated.
- In a soup pot heat the olive oil over medium high heat until the oil blooms.
- Reserving the extra flour in the bowl, add the meat to the soup pot and cook until the meat is browned on all sides.
- Add carrot, onion, and potatoes to pot sprinkling the remaining flour over the veggies to coat.
- Mix the meat, veggies, and flour thoroughly and cook for 3-4 minutes, or until veggies start to soften.
- Add all three tins of beef broth and bring to a boil.
- Boil until veggies are tender, add the worcestershire sauce, season to taste with salt and pepper.

- Season the beef cubes on all sides with salt and pepper. In a large, ovensafe pot or Dutch oven over medium-high heat, add the butter. Add the ground beef, season with salt and pepper and cook until browned, 5 to 8 minutes. Remove to a plate. Working in batches, sear the beef cubes and jalapeno halves on all sides, about 10 minutes. Remove to a bowl, leaving the fat in the pot. Toss the seared beef cubes and jalapeno with the flour.
- Preheat the oven to 250 degrees F. Add the onions, paprika and sage to the pot and cook, stirring, until the onions are tender, 5 to 7 minutes. Add the garlic, ground and cubed beef and jalapenos to the pot. Add the beef stock and 1 cup of the coffee. Season with a pinch of salt. Cover and cook in the oven until the beef is tender, about 4 hours.
- At the 4-hour mark, add the potatoes, carrots and remaining 1/2 cup coffee. Cover and continue to cook until the potatoes and carrots are tender, about 1 hour. Skim off any fat from the top, then spoon the stew over the rice. Sprinkle with parsley before serving.
SUNNY'S EASY BEEFY STEW

- In a large skillet on high heat, add the butter and ground chuck. Season with a pinch of salt and, using a wooden spoon or spatula, break it up into small chunks, not bits. Brown the meat on all sides, 6 to 8 minutes, then remove from the skillet with a slotted spoon to a plate and reserve.
- Toss the top round cubes in a medium bowl with the flour to coat. Add the cubes to the hot skillet in batches and sear on all sides, 6 to 8 minutes. Remove to the plate with the ground beef and reserve.
- Use twine to tie the thyme, sage and oregano together. Turn the slow cooker to high and add the seared beef, tied herbs, onions, beef stock, red chili flakes, peppercorns, garlic and 1 cup of the beer. Season with another pinch of salt and cover. When the liquid begins to boil, after about 30 minutes, turn the slow cooker to low and cook until the onions are tender, about 4 hours.
- At the 4-hour mark, add the potatoes, carrots and remaining 1/2 cup beer. Cover and cook until the potatoes and carrots are tender, about 2 hours. Skim any fat off the top (see Cook's Note), then spoon the stew atop your choice of serving options. Sprinkle with parsley before serving.

REALLY EASY BEEF STEW
This is an extraordinarily easy recipe and so very good on a cold day. I found it in a Better Homes and Gardens Busy Woman's Cookbook that my mother has had for years. Adjust the seasonings to your preference. I've added oregano and garlic and it's turned out well.

- In a large bowl combine stew meat and flour and stir to coat.

- Place cubed stew meat into a large bowl. Add 2 Tablespoons of cornstarch, 1 to 2 teaspoons of Italian seasoning, and 1 teaspoon of salt. Mix until all the beef is covered.
- Allow meat and cornstarch mix to sit on the counter for an hour.
- Heat your heavy bottomed pot on the stove over medium heat. Add 2 Tablespoons of light or extra virgin olive oil to the pot.
- Once oil is warm, add the beef cubes to the pot. Cook until they start to brown, then flip. Brown on each side.
- Remove the browned meat from the pot and set aside on a plate until you are ready to add it back to the stew.
- Add the chopped onions to the beef drippings in the pot. Stir them over medium low heat for about five minutes until they are soft.
- Add the chopped garlic to the pot and stir for one minute.
- Add the meat back to the pot. Add about 2 cups of the beef broth to the pot so that the meat is covered.
- Bring the meat mixture to a low simmer, cover, and cook for an hour.
- At the hour point, peel your potato and carrots. Chop them into uniform size pieces.
- Add the potatoes to the meat mixture. Add more broth if necessary, so that the potatoes and meat are covered. Bring back to a simmer.
- In a small saucepan, add the carrots and about ½ cup of water. Bring to a simmer and cook for about half an hour or until the carrots are cooked through.
- Check to see if potatoes are cooked through. When they are, add the cooked carrots to the beef stew. Salt and pepper to taste. Enjoy!

EASY CROCK POT BEEF STEW
This beef stew has a tomato based sauce, giving it a little different flavor. Cooked it up one day and got rave reviews from my husband, who is not a stew fan usually. It's also very, very easy and low in calories. I put it in a calorie calculator and it's only about 100 calories per cup. I like to put it together the night before and put the whole crock in the fridge, then in the morning I just pop it into the warmer and let it go!
