BAKED CREAMY CHICKEN THIGHS
Seasoned Chicken thigh baked in the oven until juicy with a crispy skin. The pan juice mixed with cream makes a rich sauce perfect to pour over the thighs.

Steps:
- Preheat oven to 400 degrees F (200 degrees Celcius)
- Pat dry chicken thighs with a kitchen towel.
- In a bowl add all the ingredients mentioned under seasoning. Add in the chicken thighs and toss. Chicken thighs need to coated evenly with the seasoning.
- In a 9X13 baking dish, pour in the stock. Arrange the seasoned chicken thighs in a single layer.
- Bake in pre heated oven for 20 minutes.
- Remove the pan from the oven, bast chicken thighs with the pan juice. (spoon some of the pan juices on chicken thighs)
- Remove chicken thighs from the baking pan to a plate.
- To the pan juice in the baking pan add heavy cream, dijon mustard, and parmesan cheese. MIx well.
- Put the chicken thighs bake to the baking pan in a single layer. Bake for another 25 minutes.

- Preheat the oven to 200 degrees F. Heat a large skillet over medium-high heat. Season the chicken with salt and pepper. Add 1 tablespoon oil to the skillet. Dredge 2 chicken cutlets in flour, shake off any excess and place in the skillet. Cook until golden, about 1 1/2 minutes per side; transfer to a baking dish. Repeat with the remaining 1 tablespoon oil and the other 2 chicken cutlets. Cover the dish loosely with foil; place in the oven while you prepare the vegetables.
- Add the butter to the hot skillet, then add the scallions and mushrooms; cook, stirring occasionally, until the mushrooms brown, about 4 minutes. Pour in the broth and bring to a boil, scraping up any browned bits with a wooden spoon. Cook until the liquid is reduced by half, about 3 minutes. Add the cream and boil until the sauce thickens slightly, 3 to 4 more minutes. Stir in the snap peas and heat through; season with salt and pepper. Serve the chicken topped with the creamy vegetables.

CREAM SAUCE CHICKEN THIGHS

- Pat dry the chicken.
- In a small mixing bowl combine flour, garlic powder, onion powder, italian seasoning, parsley, salt, and pepper.
- Coat chicken with the flour mixture.
- Heat oil in a large, 12-inch skillet set over medium heat.
- Add chicken to the hot oil and cook for 5 minutes; flip over and continue to cook for 6 to 7 minutes, or until cooked through.
- Remove chicken from skillet.
- Set skillet back over medium heat and stir in the chicken broth; mix and stir, scraping up all the browned bits from the bottom of the pan.
- Add the cream cheese; cook and whisk for 2 to 3 minutes, or until cream cheese is melted and sauce is thickened.
- Return chicken to the skillet; turn to coat and continue to cook for 2 minutes, or until heated through.
- Garnish with parsley and bacon.
- Serve.

- Sprinkle chicken with seasoned salt and pepper. In a large nonstick skillet, heat oil over medium heat. Add chicken; cook until a thermometer reads 170°, about 6 minutes on each side. Remove from pan; keep warm., In same pan, cook and stir shallots until tender. Add wine; bring to a boil. Cook until wine is reduced by half. - In 10-inch nonstick skillet, heat oil over medium-high heat. Add chicken; cook 8 to 10 minutes, turning once, until golden brown. Remove chicken from skillet; set aside. Drain all but 1 tablespoon drippings from skillet. Add mushrooms to drippings; cook and stir about 5 minutes or until softened.
- Stir in milk and contents of sauce mix pouch (from Hamburger Helper box). Arrange chicken thighs in single layer over mushrooms. Reduce heat; cover and simmer about 10 minutes, stirring occasionally.
- Stir in sugar snap peas. Cook uncovered 3 to 4 minutes or until juice of chicken is clear when center of thickest part is cut (180°F) and peas are crisp-tender.

- 1. In lg skillet, heat oil over med-high heat. Add chicken and cook about 10 mins, turning once, until browned. Remove chicken to a platter.
- 2. Drain all but 1 tbsp drippings from pan. Add mushrooms to pan and cook until soft, about 5 mins. Stir in milk and sauce packet. Arrange chicken in 1 layer over mushrooms. Reduce heat. Cover, simmer 10 mins, stirring occasionally.
- 3. Stir in peas and cook 4 mins. Fill a 2-quart saucepan 1/2 full of water. Bring to a boil. Stir in pasta from stroganoff box. Boil, stirring occasionally, until pasta is tender. Drain. Place pasta on lg platter. Top w/ chicken, sauce, mushrooms and peas.
