1/2 cup (100 °F to 110 °F) warm water
1 envelope (1/4 oz) active dry yeast
5 cups plus extra for dusting all purpose flour
2 tablespoons sugar
1 tablespoon baking powder
1 teaspoon baking soda
1 teaspoon salt
3/4 cup chilled vegetable shortening
2 cups buttermilk

Steps:

  • Preheat the oven to 400 °F. Grease a baking sheet with butter, oil, or cooking spray.
  • Sprinkle the yeast over the lukewarm water in a small bowl. In a large bowl, mix together the flour, sugar, baking powder, baking soda, and salt. Cut in the shortening with a pastry blender, your hands, or two knives until the mixture resembles a coarse meal. Add the yeast mixture and buttermilk and mix well.
  • Sprinkle a small handful of flour over a work surface. Turn the dough onto the floured surface and roll out to a 1-inch thickness.
  • Using a 2 1/2 €“inch round biscuit cutter, cut the dough into biscuits. Gently reroll the scraps and cut out more biscuits. Place the biscuits on the prepared baking sheet and bake until light golden brown and firm to the touch, about 12 minutes. Serve warm or at room temperature.

1/2 cup cold butter

Steps:

  • In a large bowl, dissolve yeast in warm water. Add sugar; let stand for 5 minutes. Stir in buttermilk; set aside. In a bowl, combine the flour, baking powder, salt and baking soda. Cut in butter until mixture resembles coarse crumbs. Stir in yeast mixture; mix well., Turn onto a floured surface; gently knead for 1 minute. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 30 minutes., Punch dough down. Turn onto a lightly floured surface; roll to 3/4-in. thickness. Cut with a floured 2-1/2-in. round biscuit cutter. Place 2 in. apart on a greased baking sheet. Prick tops with a fork. Cover and let rise until doubled, about 45 minutes., Bake at 375° for 15-18 minutes or until golden brown. Remove from pan to cool on a wire rack. Serve warm.

1 1/2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon kosher salt
5 tablespoons sugar
1/4 cup warm (90 to 110 degrees F) water
1/2 ounce (2 packages) active dry yeast
1 cup (2 sticks) salted butter, cold, cut into small squares, plus 4 tablespoons, melted
2 cups buttermilk

Steps:

  • Preheat the oven to 425 degrees F.
  • In a large bowl, whisk together the flour, baking powder, baking soda, salt and 3 tablespoons of the sugar.
  • In a small bowl, combine the warm water with the yeast and the remaining 2 tablespoons sugar; stir until the yeast is dissolved. Let stand until bubbles appear, 2 to 3 minutes.
  • Using your hands, mix the 1 cup cold butter into the flour, breaking the butter into small pebbles, until the mixture resembles coarse meal. Make a well in the center and add the buttermilk and the yeast mixture. Gently fold the flour into the wet ingredients. Keep mixing until a ball starts to form, then gently knead, 12 to 15 times, to create a smooth dough. Cover with a cloth or plastic wrap and let rise in a warm place for approximately 1 hour.
  • Transfer the dough to a lightly floured work surface and press out to 1- to 1 1/2-inches thick. Fold the dough in half, press again to 1- to 1 1/2-inches thick, and then fold again. Cut the dough using a 2- to 3-inch round biscuit cutter, depending personal preference. Brush the bottom of a cast-iron skillet with some of the melted butter. Place the biscuits in the skillet; brush the tops with melted butter.
  • Bake until golden brown, 18 to 22 minutes, depending on size. Brush again with melted butter and serve immediately.

Found these on another site while looking for a recipe for yeast biscuits. Tried these and they are fairly simple, rise nicely and taste very light. We had them with eggs, bacon and hot gravy with jam on the side for those that wanted it. What a nice way to start the day. Time does not include rising time.

A high-rising yeast biscuit that still tastes like a baking powder one. If I want biscuits for breakfast, I make up the batter the night before and let it rest in the bowl, covered, on the counter overnight. In the morning, I just flop it out on a floured surface, fold it a few times, pat it out, cut and bake.

2 1/4 teaspoons instant yeast
1/4 cup water
2 1/2 cups flour
1 teaspoon baking powder
1/2 teaspoon baking soda

1/2 cup shortening
1 cup buttermilk (or milk with 1 Tbs. vinegar added)

Steps:

  • Dissolve yeast in water, set aside.
  • Mix dry ingredients in order given, then cut in shortening until it's the size of small beans.
  • Stir in the buttermilk and yeast mixture. Dough will be very sticky.
  • Cover bowl with towel and let sit until ready to use. (At least 1 hour, but it is fine if it sits for a couple hours.)
  • Scrape out onto well floured board. Flip the dough over and knead or fold lightly (4-6 times).
  • Roll out about 1/2" thickness and cut with sharp biscuit cutter. (Cutting with a dull cutter or water glass "seals" the dough and won't let the biscuit rise as they should.)
  • Place on lightly greased baking sheet and let raise slightly (10-30 minutes).
  • Bake at 400º F until light brown, 10-12 minutes.

Angel biscuits are so easy to make that they're often called "bride biscuits." They have three different types of leavening, so they always rise up fluffy and tall.

Yield makes 12 biscuits

Number Of Ingredients 10

1/4 cup lukewarm water
1 package active dry yeast
2 1/2 tablespoons sugar, plus more for yeast
2 1/2 cups all-purpose flour, plus more for working dough
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon table salt
1/2 cup vegetable shortening
3/4 cup buttermilk
2 tablespoons butter, melted

Steps:

  • Combine the warm water, yeast, and a pinch of sugar in a small bowl. Let sit for 5 minutes, until it becomes frothy and foamy.
  • Whisk together the flour, sugar, baking powder, baking soda, and salt in a medium bowl. Cut in the shortening in small bits, and stir until the mixture resembles small crumbly peas. Add the buttermilk and the yeast mixture, and stir together, using a wooden spoon, until the dough just comes together.
  • Remove the dough to a floured work surface, and knead briefly for about 1 minute, until the dough is smooth and uniform in appearance. (It's important not to overwork your dough, or you will be left with tough biscuits.) Pat the dough out to a 3/4-inch thickness. Using a 2-inch biscuit cutter dipped in flour, punch out dough rounds, patting and shaping the leftover dough to create more rounds.
  • Arrange the biscuits on a parchment-lined sheet tray, cover with a clean tea towel, and let rise for 30 to 45 minutes, until doubled in bulk.
  • Preheat your oven to 400 degrees F. Brush each biscuit with melted butter. Bake until golden brown, about 15 minutes. Serve warm.

4 1/2 teaspoons active dry yeast (from two 1/4-ounce envelopes)
1/4 cup warm water (100 degrees to 110 degrees)
5 cups all-purpose flour, plus more for dusting
1 tablespoon baking powder
1 teaspoon baking soda
2 1/2 tablespoons sugar
1 teaspoon coarse salt
2 sticks cold unsalted butter, cut into small pieces, plus 1/2 stick butter, melted and cooled, for brushing
2 cups buttermilk

Steps:

  • Preheat oven to 450 degrees. Line a baking sheet with parchment; set aside. Dissolve yeast in warm water and let stand until foamy, 5 to 10 minutes.
  • Whisk together flour, baking powder, baking soda, sugar, and salt in a large bowl. Transfer half of mixture to a food processor and add butter. Pulse until mixture resembles coarse meal with some blueberry-size clumps. Return to remaining flour mixture in bowl and mix to combine. Make a well in center of bowl and add yeast mixture and buttermilk. Stir until a dough forms, then turn out onto a floured work surface. Knead until dough is smooth and no longer sticky, about 5 minutes.
  • Roll out dough to 1/2-inch thick and cut out 1 1/2-inch rounds with a biscuit cutter. Set rounds 1 inch apart on baking sheet, brush tops with melted butter, and bake until lightly golden (do not let brown), 10 to 12 minutes. Serve warm or at room temperature.
