QUICK AND EASY CREAM SAUCE

The title says it all. This is a base sauce that you can elaborate on in many different ways. You could add tomatoes, onions, prosciutto, etc. This time around I had some leftover pasta, and I wanted something fast. If you have time, it's nice to add chicken or shrimp. I have made this with shrimp before, and it was delicious. I will include that recipe after the sauce recipe.

1 tablespoon minced garlic
2 cups whipping cream
1/4 cup fresh basil, minced or 1 teaspoon dried basil
1/4 cup parmesan cheese
1/4 teaspoon black pepper
1/8 teaspoon red pepper flakes (optional)

Steps:

  • You can use a pan or a pot. I used a pot this time, but whenever I do shrimp or chicken I use a pan.
  • Add cream.
  • Bring to a boil; reduce heat and simmer for 15 minutes, stirring frequently.
  • Add basil, cheese, pepper and pepper flakes.
  • Pour sauce into a bowl; add pasta and toss well.

1 cup of Mexican chorizo (removed from the casing)

2 tbsp olive oil (preferably extra virgin)
4-6 cloves garlic (adjust to taste), minced

  • GARLIC CREAM SAUCE (with OPTIONAL PARMESAN) Heat the olive oil in a sauce pan over medium heat. Add the minced garlic and while constantly moving it around with a wooden spoon, sauté if for 30-40 seconds or until fragrant and just beginning to turn golden. Add the heavy cream, stir, bring to gentle simmer and simmer until the sauce thickens to your liking. Remove from heat. Add the grated Parmesan (optional) and stir until it melts and blends in with the sauce. Season with salt and pepper to taste. CHORIZO CREAM SAUCE In a non-stick pan over medium heat begin to brown the chorizo while gently breaking it up with a wooden spoon. When mostly cooked through, remove any excess fat with a small spoon (may not need to). Add the heavy cream, stir, bring to simmer and cook for another couple of minutes. Taste and adjust seasonings. HONEY MUSTARD CREAM SAUCE In a sauce pan over medium heat add the heavy cream, mustard and honey. Whisk until combined and simmer briefly until the sauce thickens to your liking. Season with salt and pepper to taste. SPICY CREAM SAUCE (CAJUN OR RED PEPPER FLAKES) In a sauce pan over medium heat add heavy cream and chicken base. Stir to combine and bring to simmer. Add Cajun seasoning OR red pepper flakes (plus optional Parmesan). Simmer until sauce thickens to your liking or thicken with slurry. SIMPLE CHEESE CREAM SAUCE Add the heavy cream to a sauce pan, place on stove and heat over the highest setting of low available before you get to medium-low. Add garlic salt and dried oregano and stir. Once you observe the cream forming a skin on the surface, it is hot enough. In batches add the shredded cheese and stir to combine. Add the next batch only after the previous one has been incorporated. When the sauce is smooth, remove from the heat and serve immediately. Leftovers of this sauce must be warmed up on low, with a bit of extra heavy cream, otherwise the fat from the cheese might cause it to separate. WHOLE GRAIN MUSTARD CREAM SAUCE In a small saucepan over medium heat combine the heavy cream and the whole grain mustard. Bring bring to simmer and let reduce for a couple of minutes until it reaches your desired thickness.

1 tablespoon oil
3 garlic cloves
1 tablespoon flour

Steps:

  • Heat butter and oil in a saucepan until the butter is melted.
  • Add garlic to saucepan and stir until fragrant. I recommend using ready to use pre-diced garlic or garlic paste. If you don't have these then try to get your garlic as fine as possible.
  • Add flour to garlic and butter mixture in saucepan and stir until fully incorporated.
  • Add heavy cream and chicken broth to the saucepan and continue cooking over medium-low heat, stirring frequently, for approximately 10 minutes.

  • This sauce goes fantastic with pork chops and chicken breasts. Serve immediately over fully cooked chicken or pork chops.

2 teaspoons cornflour
2 tablespoons oil
4 ounces sliced mushrooms
4 tablespoons white wine

  • Slice the chicken into thin strips and toss in the seasoned cornflour.
  • Heat the oil in a pan and fry the chicken pieces until golden brown.

1 tbsp olive oil
1/2 cup onions (diced )
3 fresh garlic cloves (chopped)
1 tbsp tomato paste
1 tsp dried basil
1 tsp dried oregano
1/2 tsp kosher salt
pinch of red pepper flakes (more for additional heat)
1 cup heavy cream
1/2 cup milk (recommend 2% or whole)
2 cups jarred marinara (use your favorite brand)
1 lb. your favorite pasta (spaghetti, penne, rigatoni....) (cooked per package instructions)

Steps:

  • In a pot over medium/low heat add 1 tbsp olive oil, soften 1/2 cup diced onion and 3 chopped garlic cloves, it will take about 5-8 minutes.
  • Add in the 1 tsp dried basil, 1 tsp dried oregano, 1/2 tsp kosher salt, pinch red pepper flakes and 1 tbsp tomato paste. Stir it around the pot until the tomato paste coats the onions and garlic.
  • Stir in the 1 cup heavy cream and 1/2 cup milk. Lightly simmer over medium/low heat for about 5-8 minutes, until it will coat the back of a wooden spoon.
  • Stir in 2 cups of your favorite jarred marinara until it is completely mixed with the cream mixture. Taste for additional salt/pepper and serve over your cooked pasta.

VANILLA CREAM OR SAUCE

Here's a quick and easy Parmesan cream sauce that makes pasta taste simply divine! It uses just a ingredients you might already have on hand.

1 tablespoon salted butter* (double all ingredients to serve with 1 pound pasta)
1 garlic clove, grated
1 tablespoon all purpose flour
1 cup 2% milk
1/4 teaspoon kosher salt
2 tablespoons shredded Parmesan cheese

Steps:

  • Measure out all ingredients in advance; the cooking process happens fast! If serving with pasta, cook 8 ounces pasta while you make the sauce.
  • In a small or medium saucepan over medium heat, melt the butter. Add the grated garlic and cook 30 seconds until fragrant but not browned.
  • Add the flour and whisk constantly for 1 minute to 90 seconds, until bubbly and golden. Do not overcook it: the flour can turn brown within a few seconds. Keep an eye on it!
  • Add a splash of milk and whisk it in: the sauce will instantly turn chunky. Constantly whisking, continue to add splashes of milk and whisk them in until the entire quantity is incorporated and the sauce is smooth.
  • Reduce the heat and whisk until the sauce thickens and no longer tastes like raw flour, about 5 minutes. Add the salt and Parmesan cheese. Taste and add a pinch or two more salt if desired.
  • If serving with pasta, drain the pasta, then add the sauce. Add a splash or two of milk to loosen the sauce and come to just the right creamy consistency. Taste and a few more pinches of salt, if necessary. (The sauce is best freshly made, so we don't recommend making it in advance).

4 skinless, boneless chicken breast halves
1 teaspoon dried oregano
1 teaspoon dried basil

This is the easiest vanilla sauce recipe ever! It contains only 3 ingredients and goes perfectly on just about anything sweet!

1/3 cup (65 g /2.3 oz) granulated sugar
1-2 teaspoons pure vanilla extract ((or 1 vanilla bean - read above post))
Optional: up to 1/2 cup ((1 stick/113 g) butter for more flavor and a thicker, creamier consistency)

Steps:

  • Place all ingredients in a saucepan and bring to a boil over medium heat, stirring constantly. Reduce heat to medium-low and continue to cook, stirring occasionally, until the mixture thickens, 10-15 minutes (or keep cooking until desired consistency).
