1¼ C. Almond Flour
2/3 C. Tapioca or Arrowroot Flour
1/3 C. Coconut Flour
2 TBSP Golden Monkfruit
2 tsp Baking Powder
1 tsp Xanthan Gum
1/2 tsp Baking Soda
1/2 tsp Salt
1/2 C. Cold Butter, cut into small pieces
3/4 C. Pecans
1/4 C. Dried Cranberries
2 tsp Orange zest
1/2 C. Vanilla Yogurt
1 Egg
1 tsp Vanilla
1/4 C. Monkfruit or sweetener of choice, powdered
2 TBSP Coconut Milk or Heavy Cream

Steps:

  • Preheat oven to 375F and line a baking sheet with parchment paper or silicone liner.
  • In a large bowl, whisk together almond flour, tapioca or arrowroot flour, coconut flour, golden monkfruit, baking powder, xanthan gum, baking soda and salt.
  • Cut in the butter with a pastry blender or fork until it resembles a coarse meal. Add in pecans, dried cranberries and orange zest.
  • In a small bowl, whisk egg until it's foamy. Add yogurt and vanilla. Add these liquid ingredients to the dry ingredients and stir until the dough comes together. It's o.k. if the dough is soft and somewhat sticky.
  • Turn dough out onto prepared baking sheet and shape into a 3/4inch thick circle, about 8 inches in diameter. With a sharp knife, cut into 8 triangles.
  • Bake 20-25 minutes, until firm to touch and lightly browned. Remove from oven and let cool on pan.
  • For the glaze, whisk together the powdered sweetener (you can put granulated sweetener in a magic bullet and pulse until it is powdered) and coconut milk or cream until smooth. Drizzle over cooled scones and let set 10 minutes.

½ cup cold, unsalted butter, cut into pieces
¼ cup white sugar
1 tablespoon baking powder
1 teaspoon salt
1 large orange, zested and juiced, divided
1 cup dried cranberries, or more to taste
1 cup buttermilk
1 cup powdered sugar, or more to taste

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Combine flour, butter, white sugar, baking powder, salt, and orange zest in the bowl of a food processor; pulse until butter is pea-sized or smaller. Pour buttermilk and 1/2 of the orange juice in slowly, with the processor running, until dough is sticky and all flour is absorbed. Mix in dried cranberries until evenly distributed. Reserve remaining orange juice for the icing.
  • Place dough on a lightly floured surface and gently roll to a thickness of about 1 inch. Cut dough into 12 triangles with a knife (or use a biscuit cutter for circles) and transfer to a baking sheet.
  • Bake in the preheated oven until golden brown, about 15 minutes.
  • While the scones are baking, combine reserved orange juice and 1 cup powdered sugar for icing. Stir to desired consistency, adding more powdered sugar as needed.
  • Remove scones from the oven and let sit for 5 minutes to cool. Transfer to a plate and drizzle with icing. Serve warm.

2 teaspoons kosher salt

3/4 pound cold unsalted butter, diced
4 extra-large eggs, lightly beaten
1 cup cold heavy cream
1 cup dried cranberries
1 egg beaten with 2 tablespoons water or milk, for egg wash
1/2 cup confectioners' sugar, plus 2 tablespoons
4 teaspoons freshly squeezed orange juice

Steps:

  • Preheat the oven to 400 degrees F.
  • In the bowl of an electric mixer fitted with a paddle attachment, mix 4 cups of flour, 1/4 cup sugar, the baking powder, salt and orange zest. Add the cold butter and mix at the lowest speed until the butter is the size of peas. Combine the eggs and heavy cream and, with the mixer on low speed, slowly pour into the flour and butter mixture. Mix until just blended. The dough will look lumpy! Combine the dried cranberries and 1/4 cup of flour, add to the dough, and mix on low speed until blended.

Every morning we made thousands of muffins and scones, and I discovered that we could make all the muffin batters the night before, refrigerate them and simply scoop them into muffin pans and bake them in the morning! I started using the same techniques at home: I love treating weekend guests to these cranberry-orange scones, but I also cherish the few mornings I get to sleep late, so I make the dough a day early, cut out the scones and refrigerate them. In the morning, all I do is throw them in the oven and then drizzle them with an orange glaze. Hot delicious scones for breakfast, and no stress!

1/2 cup oatmeal, preferably large flake but quick oats will work as well
1/2 cup flour
1/2 cup whole wheat flour
2 teaspoons baking powder

I started with a basic scone recipe from "The Twelve Teas of Christmas" by Emilie Barnes (page 23), but this is far from it. I began tweaking the recipe according to my own preferences, after having other scones that were too sweet, not sweet enough, too dry, too soft, not flavorful enough, etc. This is where I've settled--for now! They're quite consistent, and consistently loved. For a stronger orange flavor, you can add 1-2 tsp. orange extract and/or orange zest. You can also add a frosting or glaze made from orange juice and confectioner's sugar. Some extract, orange juice concentrate, and/or orange peel would add more flavor to that, too. I tend to make a large amount because I make them for tea parties or for my large family, but you can easily halve the recipe. Serve with clotted cream (real or fake) and jam, but they're also great with butter, or plain. I make a clotted cream substitute by softening butter and cream cheese, then mixing them in a ratio of 1:1. Yum!

5 cups flour (white, whole wheat, or a combination)
5 teaspoons baking powder
3/4 cup sugar (white or demerara)

1 1/4 cups butter, softened to room temperature
1 cup orange juice
1 cup dried sweetened cranberries

  • Optional: Soak cranberries in the orange juice to plump them while you make the dough, for a few minutes, a few hours, or overnight before starting the recipe.
  • Mix dry ingredients together, then cut in butter until mixture resembles coarse crumbs.
  • Stir in orange juice and cranberries. Mix lightly until dough comes together. If it seems too dry, add more orange juice, but just one spoonful at a time. Texture should be like biscuit dough. Don't overmix.
  • Dump the dough out on an oiled or floured surface. Oil or flour your hands, pat the dough together, then divide into four balls.
  • Place each ball on an ungreased cookie sheet (or use a little cooking spray, just on the spots where you place the dough), then smooth and flatten each one to a 6-inch round about 1 inch thick.
  • Sprinkle rounds with sugar if desired (it makes the tops sparkly--I use demerara sugar if I have it). Using an oiled knife, cut each round into 6 wedges.
  • Bake at 425 degrees for about 20-25 minutes, or until lightly browned. Let cool on pan for a few minutes, then use a small serrated knife to separate the scones and transfer them to a rack or cloth-lined basket.
  • You can also make drop scones by dropping spoonfuls of dough onto a cookie sheet. (I like to use an ice cream scoop--the kind that will push the dough out. It makes them round and consistently sized.) These don't bake so long (maybe 15 minutes), so watch them closely.
  • I have normally made these in a heavy-duty mixer (Bosch), and when I had to make them by hand, it was much more challenging to avoid over-mixing while getting enough liquid incorporated. The finished texture was quite different. I had to bake them longer because they were doughy in the middle, and then they got too brown. So perhaps if you don't have a mixer, you should pat them thinner (maybe 3/4 inch) and add a little more baking powder to help the rise.

My co-workers love these orange-cranberry muffins and requested them first for our annual bake sale at work. I've gotten requests from friends to bring these when visiting or for parties.

2 cups all-purpose flour
½ cup white sugar
1 large orange, zested
1 teaspoon baking powder
½ teaspoon salt
¼ teaspoon baking soda
½ cup frozen unsalted butter
¾ cup dried cranberries
½ cup sour cream
1 large egg
3 tablespoons orange juice, or more as needed
1 teaspoon vanilla extract
3 tablespoons white sugar

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Line a baking sheet with parchment paper.
  • Combine flour, 1/2 cup sugar, orange zest, baking powder, salt, and baking soda in a large mixing bowl. Grate frozen butter into dry ingredients using a box grater. Combine well, incorporating butter into dry ingredients until it looks like a coarse crumble. Stir in cranberries until combined.
  • Combine sour cream, egg, orange juice, and vanilla extract in a small mixing bowl. Mix until smooth. Stir into dry ingredients and combine until dough just holds together and there are no dry ingredients at bottom of bowl; do not overmix.
  • Turn out dough and form into a 10-inch circular mound, pressing flat to about 3/4-inch thickness, and sprinkle with remaining 3 tablespoons sugar. Cut circle into 8 triangles and spread apart slightly on the prepared baking sheet.
  • Bake in the preheated oven until golden, 17 to 20 minutes. Serve warm or at room temperature.

2 cups flour
1 tablespoon baking powder
1 teaspoon salt
1/4 cup sugar
1 teaspoon orange extract
1 1/4 cups half-and-half
1 cup fresh cranberries
1/2 cup white chocolate chips
2 tablespoons skim milk

Steps:

  • Combine all dry ingredients in a bowl.
  • Mix half and half with the orange extract.
  • Pour half and half mixture into the dry ingredients and combine with a fork. Do not over mix. Add in the cranberries. The mixture should be dry so add some flour if necessary.
  • Roll out the dough onto a lightly floured surface and slice into wedges.
  • Bake at 400 degrees for about 13-15 minutes. While baking, melt the white chocolate in the microwave and stir in the milk. When scones are done, drizzle glaze over the scones.

1 orange, zest of
3 -4 tablespoons fresh orange juice
1/2 cup dried currant
3 cups unbleached white flour
5 tablespoons sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup cold unsalted butter
1 egg yolk
2/3 cup buttermilk
1 tablespoon milk
1/4 cup small pecan pieces, coarsely chopped

Steps:

  • Preheat the oven to 400°F Plump the currants in the orange juice. Sift the dry ingredients together. Cut the butter into small pieces and cut it into the dry ingredients using a pastry blender or 2 knives until it resembles coarse meal. Add the currants and juice.
  • Stir the zest into the buttermilk, add it to the dry ingredients, and stir until the mixture is moistened.You may need to add a little more buttermilk. Do not overmix.
  • Turn the dough out onto a floured board and gently form into a round about 1 inch high. Cut the round into 8 wedges and place 1 inch apart on a baking sheet stacked on top of another sheet. (The double pan is necessary to keep the bottoms from browning too quickly.) Whisk the egg yolk and milk together and lightly brush the scones with the mixture. Sprinkle with the pecans. Bake until the scones are ligthly browned, about 20 minutes.
  • VARIATION: Apricot-Walnut Scones: Chop 1/2 cup dried apricots into small pieces and use them in place of the currants. Plump the apricots in the orange juice and prepare the scones as directed, substituting walnuts for the pecans.
