  • Preheat oven to 350 degrees F (175 degrees C). Spray a 1-quart casserole dish with cooking spray.
  • Mix corn, Cheddar cheese, black olives, green chilies, and green olives together in a bowl; pour into prepared casserole dish.
  • Bake in the preheated oven until cheese is melted and bubbling, about 25 minutes.

1/3 cup all-purpose flour
1 tablespoon white granulated sugar
1 teaspoon salt
1/4 teaspoon black pepper
1 cup evaporated milk (could use regular milk)
1 stick or 8 tablespoons or 1/2 cup butter (melted)
2 cups fresh or frozen whole kernel corn (no need to thaw)
1 14.75 ounce can creamed corn
2 eggs

Steps:

  • In a large mixing bowl whisk together the flour, sugar, salt and pepper. Add milk, melted butter, frozen and creamed corn. Stir with a spoon. Add eggs and stir.
  • Pour into a casserole dish. I used a 10 x 10 casserole dish and bake in preheated 350 degree oven for 45 to 50 minutes until the center is set and casserole is brown around the edges.
  • I usually stir this halfway through the cooking process. Makes 6 to 8 servings.

2 teaspoons baking powder
3/4 teaspoon kosher salt

3 cups 2% reduced-fat milk
8 large eggs, lightly beaten

Steps:

  • Preheat oven to 350°F with oven rack in middle of oven. Lightly coat a 13- x 9-inch glass or ceramic baking dish with cooking spray. Melt butter in a large skillet over medium-high until foamy. Add corn, onion, thyme, and garlic; cook, stirring occasionally, until lightly browned, 7 to 9 minutes. Remove from heat; stir in scallions. Let cool slightly, about 10 minutes.
  • Whisk together flour, sugar, baking powder, salt, and pepper in a small bowl. Whisk together milk and eggs in a large bowl until smooth. Whisk flour mixture into milk mixture until smooth. Stir in cooled corn mixture. Pour into prepared baking dish.

  • Preheat the oven to 350˚F.
  • In a large casserole dish, add the melted butter, Jiffy mix, corn, creamed corn, egg, and half of the cheddar cheese (about 1 cup.) Mix until everything is combined.

1 large egg (beaten)
1 stick (1/2 cup) unsalted butter (melted)
1 jalapeño (seeded and finely diced, optional)

Steps:

  • Preheat oven to 350 degrees F. Set up an oven rack into the middle of the oven.
  • Lightly grease with butter or with cooking spray a 12.25x2.5 baking dish, or a baking dish that would hold at least 7 cups of batter.
  • In a large bowl, stir and combine all the ingredients until well incorporated. Transfer the batter to the prepared baking dish and level the top with a spatula.
  • Bake for 45-50 minutes. The casserole is done when the edges are golden brown, the center is settled and it looks puffy, light, and overall done. A toothpick inserted into the center of the casserole should come one clean or with just a few crumbs attached, but no raw batter.
