What makes this cold green bean salad so good is that the beans marinate while they are still warm--that way the beans soak up the vinaigrette and become more flavorful.

2 pounds fresh green beans, trimmed
½ cup balsamic vinegar
⅓ cup extra-virgin olive oil
1 small sweet onion, thinly sliced
1 clove garlic, minced
2 teaspoons chopped fresh parsley
1 teaspoon white sugar
1 teaspoon salt
freshly ground black pepper to taste

Steps:

  • Bring a large pot with lightly salted water to a boil over high heat. Add beans and cook, uncovered, until soft but still firm to the bite, 7 to 10 minutes. Check often so beans don't overcook.
  • Combine vinegar, olive oil, onion, garlic, parsley, sugar, salt, and pepper in a large bowl.
  • Drain cooked green beans and mix with dressing in the bowl while still warm. Allow to marinate at room temperature for at least 1 hour. Serve at room temperature or chilled.

500 g frozen green beans
2 -3 cloves garlic, crushed
1/4-1/2 cup extra virgin olive oil
salt
pepper

Steps:

  • Boil or steam green beans until tender-crisp (hint: use a bit of salt in the water to make the beans their greenest).
  • Meanwhile, add garlic and oil to medium-sized serving bowl.
  • Mix.
  • Once they're cooked, drain the beans and toss them in the olive oil& garlic mixture.
  • Add salt and pepper to taste.
  • If you can, let the salad sit for 30 minutes (or more) to let the flavours combine.
  • Serve at desired temperature.
  • Note: this salad is also very tasty with some finely chopped onion (preferably sweet) added with the garlic.
  • You can also use a mix of greeen and yellow beans for additional colour.

1 tablespoon extra-virgin olive oil
2 teaspoons freshly squeezed lemon juice
1 teaspoon lightly packed lemon zest
1 teaspoon rinsed and finely chopped cured anchovies (about 2 fillets)
1 medium shallot, thinly sliced
1/2 cup thinly sliced cured pitted black olives
2 tablespoons finely chopped fresh flat-leaf parsley

Steps:

  • Bring a medium pot of heavily salted water to a boil over high heat. Prepare a water bath by filling a bowl halfway with ice water.
  • Once water boils, add green beans until cooked but still firm, about 4 minutes. Place in ice water bath until cool. Drain and shake off excess water.
  • In a medium nonreactive bowl, thoroughly mix olive oil, juice, zest, and anchovies; season well with salt and pepper. Add green beans, shallot, olives, and parsley, and mix well; taste, adjust seasoning as needed. Salad can be served immediately though flavor improves as it sits.

2 tablespoons olive oil
1 cup wheat berries, soaked in water overnight, drained and thoroughly dried
Salt
3 1/2 cups water
1 pound small green beans, washed, tips snapped off by hand or cut off
2/3 cup extra-virgin olive oil
1/4 cup sherry vinegar
1/4 cup balsamic vinegar
Freshly ground black pepper

Steps:

  • Put a small saucepan over medium-high heat and add the oil. Once the oil is hot, remove the pan from the heat and add the wheat berries, then put back over the heat. Add a pinch of salt and allow the berries to toast. Add the water and cook until they start to break apart, about 45 minutes. Taste. They should be chewy but firm. Set aside.
  • Meanwhile, bring a pot large enough to hold about 6 quarts of water, to a boil over medium heat. Add salt until the water tastes like mild seawater. How will you know? Taste a drop of water.
  • Prepare an ice bath by filling a bowl, large enough to hold the green beans, with cold water. Add some ice cubes and line with a strainer. Stir the green beans into the ice bath to awaken any beans that are limp. Strain and add them to the boiling water. Cook the beans for 2 to 3 minutes. Use a slotted spoon or spider to remove them from the water, transferring them immediately to the same ice bath. Allow them to sit in the ice bath for a few minutes, swirling them gently in the water to assure they are all cooling in the cold water.
  • Transfer the green beans to a kitchen towel and pat dry. Transfer them to a serving bowl and refrigerate.
  • In a medium bowl, whisk together the olive oil, sherry and balsamic vinegar. Season the dressing with salt and pepper, to taste, and set aside.
  • When ready to serve, add the wheat berries to the beans and drizzle with the vinaigrette. Toss to combine and season with salt and pepper, if needed. Serve immediately.

(Update: After WI Cheesehead's experiment with frozen vegetables I managed to track down some fresh corn and beans. Following the directions presented here, the result is sweet crisp vegetables that you simply can't get from the freezer.)

8 ears corn
12 ounces French haricots vert or 12 ounces slender green beans, cut into 1 inch pieces
3 tablespoons cider vinegar
1/4 teaspoon salt
1/4-1/2 teaspoon pepper
2 1/2 tablespoons olive oil
1/3-1/2 cup red onion, chopped
2 tablespoons fresh parsley, chopped

Steps:

  • Prepare corn by removing husks and silk. In a large soup pot bring water to boil and add corn. Add additional water if needed to make sure the cobs are fully submersed. Cook for five to seven minutes until corn is just tender. Remove corn and set aside to cool.
  • In the same water, add the beans and cook for two to three minutes, until crisp-tender. Drain beans and shock with cold water to stop the cooking.
  • In a large bowl whisk together the vinegar, oil, salt and pepper. Add in the onions, corn, beans and parsley. Toss the salad together until it is fully mixed and coated with the dressing.
  • Cover and chill for up to four hours before serving.

  • Dissolve the chicken stock cube in the water and add the trimmed green beans.
  • Boil for about 10 minutes (they should still be fairly crisp).
  • Drain and rinse briefly under cold water.

When you steam the beans, don't overcook them; they should be bright green and still firm but cooked. I forgot to mention cooking the beans so this is an update (thanks Sugarpea)! Let the beans sit at room temperature and serve cold.

A handy little recipe that I adapted from a pretty generic looking Mexican cookbook that I have. The original recipe calls for feta cheese, so that's an option if you eat dairy. I think it's a great dish without the cheese but also plan to incorporate Recipe #364732 into it next time. Great way to use fresh beans from your garden, they are the star of the dish!

3/4 lb fresh green beans, topped and tailed
2 tablespoons red wine vinegar (or sub your favourite fruit vinegar)
1/2 cup extra virgin olive oil
2 teaspoons Dijon mustard
1 fresh garlic clove (optional)
1/2 red onion, diced
3 tablespoons fresh cilantro, chopped
2 red radishes, thinly sliced
1 teaspoon fresh oregano, chopped well (or sub 1/2 tsp dried)
1 cup cherry tomatoes, quartered (or halved)
sea salt
black pepper

Steps:

  • Bring about 2 inches of water to boil in the bottom of a steamer. Add the beans to the top part, cover and let steam until tender but still firm (about 4-5 minutes). You really want to retain their crispness. Drain and rinse under cold water to stop the cooking process. You could also dunk them into a ice water bath. Drain well and pat dry.
  • While the beans cook, whisk together the vinegar, olive oil, mustard and garlic and season to taste with S&P. (If using feta you likely won't want any salt).
  • Place the cooled beans into a bowl with the onions, cilantro, radish slices, oregano and toss together with the dressing. Adjust seasoning.
  • Transfer to a serving platter. Surround the beans with the tomato wedges for garnish. Chill until ready to serve.
