GRILLED SALMON STEAKS
This is a terrific way to fix salmon...and it's so easy to do. The marinade mellows the fish flavor, and the dill sauce is a wonderful complement. I once served this recipe to 12 people from the Pacific Northwest who declared it was the best salmon they'd ever eaten! -Deb Essen, Victor, Montana

- In a large 9 by 13 shallow baking dish place 1 lemon slice with 1 orange slice side by side so you'll end up with 4 groups. Each salmon fillet will have its own bed of citrus. Season each fillet with salt and pepper then place each salmon fillet over the 2 slices of lemon and orange. In a small bowl mix the dill, sun-dried tomatoes and tomato oil. Divide mixture on top of the salmon fillet, then drizzle with the wine. Place the baking dish in the oven and cook for 8 to 10 minutes.

This is so easy and the salmon bakes out soooo moist! You can use white salt instead of the seasoned salt but add in about 1/4 teaspoon paprika to the mixture. This recipe can be doubled.

- Broiled Salmon Steaks with Teriyaki Sauce. Rolled salmon steak medallions take a little more time to prepare, but they’re worth the extra effort. Once broiled in the oven, they’re meaty, tender, super flakey, and go wonderfully with a homemade teriyaki sauce.
- Pan-Fried Salmon Steak. When de-boned, salmon steaks have a little pocket in the center that’s perfect for all those buttery pan drippings. With tons of fragrant spices from dried sage and black pepper, the herbal flavors shine.
- Maple Soy Grilled Salmon Steaks. Running short on time (and ingredients)? Maple soy grilled salmon is so bursting with flavors, and most of the ingredients in this dish are pantry staples.
- Mango Salsa Salmon. It’s colorful, rich in nutrition, and looks so pretty on a plate! While the salmon cooks to flaky perfection in the broiler, the mango salsa is the real star of this show.
- Grilled Salmon With Lemon and Dill Sauce. Salmon and dill are two of my favorite flavors. Salmon is delicately sweet, and dill adds a beautiful freshness to the steaks.
