CHOCOLATE COVERED CHERRIES
Steps:
- Line a cookie sheet with parchment paper or waxed paper. Pat cherries dry with paper towels.
- Melt chocolates separately in stainless steel bowl set over pan of simmering water, stirring until smooth.
- Holding stem of cherry, dip cherry into melted chocolate to coat. You can coat half of cherry in white chocolate and half in semisweet chocolate, if desired. Transfer chocolate-dipped cherry to prepared cookie sheet. Repeat with remaining cherries and melted chocolate.
- Refrigerate for about 40 minutes, or until set.

I've been making this recipe for many years. I'm not sure where it originally came from. The recipe is somewhat time consuming, but well worth it. I usually make two batches because one just isn't enough. This candy is easy to make and it also makes a great gift.

- Drain juice from cherries, set cherries aside until ready to use. To make fondant: Using a electric mixer at medium speed beat together butter, corn syrup and vanilla in a mixing bowl until smooth. Gradually add salt and 3 cups of the sugar, mixing well. When mixture becomes too stiff to beat, stir with spoon. Add 1/2 - 1 cup of sugar to make a mixture that can be kneaded. Form mixture into 10" roll. Wrap in plastic wrap and refrigerate roll until firm.
- Cut roll into 1" slices. Cut each slice into quarters. Flatten each piece in palm of hand; place cherry in center. Fold up fondant around cherry until it is completely covered. Place on waxed paper-lined baking sheet. Chill until firm.
- Melt milk chocolate in the top of double boiler over hot water. Cool slightly. Holding each fondant-covered cherry by the stem, quickly dip it in the melted chocolate until the fondant is covered. Place on waxed paper-lined baking sheets. Refrigerate until chocolate sets. Store in air-tight container in the refrigerate. Make 40-50 cherries, depending on the size of the cherries.

My friend makes these and they are good as long as you leave them sit a few days, up to a week (juicier). I have never made these myself, so I'm only posting her instructions... This is a quick and easy treat to make anytime of the year... but the holidays are the best time to make them! What friend, relative, neighbor or acquaintance wouldn't love to receive these on an assorted dessert platter?! So simple and very little clean-up involved. - In a small bowl combine confectioners sugar, softened butter, milk and extract. Kneed until you form a pliable "gooey dough". Roll into 3/4"-1" balls, then smash flat to make a 2" circle.
- Line a baking sheet with wax paper. IMPORTANT: Be sure that each cherry is completely patted dry. Place 1 cherry in the center of each circle. Carefully enclose the cherry with the circle of "gooey dough" (leave the stem exposed), and place them stem side up on the baking pan. Loosely cover and refrigerate overnight.
- Place chocolate chips and shortening into a microwave safe bowl. Heat for 30 seconds, stir, heat 30 seconds, stir, etc -- until melted and stir again. Let sit 1 minute.
- Hold the cherries by the stem and dip into chocolate, covering every bit of cherry (so no liquid will drain out once set). Allow excess chocolate to drain off and return each to the wax paper lined baking sheet.
- Refrigerate baking sheet immediately just until chocolate has hardened, then transfer to room temp sealed container. Best served AFTER ONE WEEK for juiciest cherries. Keeps up to 6 weeks in a sealed container.

- Pour cherries, with their juice, into a glass bowl. Cover cherries with rum. Cover with plastic wrap and store in the refrigerate for 1 week.
- Drain and dry rum-infused cherries.

- Cream butter and beat in marshmallow creme and salt.
- Add powdered sugar.
- Turn and kneed until mixed thoroughly.
- Refrigerate the mixture for 2 hours .
- De-stem, drain and dry the cherries.
- Cover each individual cherry with some of the marshmallow mixture until completely covered and freeze solid. (usually about an hour).
- Melt chocolate in double broiler. (you can also use your microwave on a very low power setting, just be careful not to burn the chocolate).

CHOCOLATE COVERED CHERRIES
This is a recipe given to me by a friend of my moms. She makes them for Valentines Day. I highly recommend using cherries with stems, the covering process is a little slower but you will be rewarded with a built in "handle" when it comes to dipping. Using paraffin in the chocolate will result in a smooth surface on your candy. These have to be done about 2 weeks before serving so the fondant can soften into a liquid.

- Combine all ingredients in a stand up mixer and mix until smooth. You will need to knock it down every so often. If you don't have a mixer, use your hands. This is a very stiff dough.
- Let stand 1 hour. Pinch of small amounts, flatten slightly and press around each cherry, sealing well. Place on waxed paper to dry. Let stand about 30 minutes, turn cherries over and dry another 30 minutes.
- Combine chocolate and paraffin in double boiler until melted and smooth. Dip balls into chocolate mixture. Place on waxed paper to harden.
- Keep cherries in a cool, dry place for 2 weeks before serving. Do not store in the refrigerator as this will discolor the chocolate coating.

- Set aside.
- Place sifted powdered sugar in bowl.
- Combine melted butter,evaporated milk vanilla,and salt.
- Pour over powdered sugar and mix well.

- Add more powdered sugar slowly,if need to form dough.
