My secret weapon for mid week meals - an All Purposes Chinese Stir Fry Sauce, a versatile base that makes a wonderfully glossy sauce for any stir fry, including stir fried noodles. Store it in the fridge in a jar for when you need it - just make sure to leave sufficient headroom in the jar so you can give it a good shake before using. This makes 1 1/2 cups of sauce which is enough for around 12 servings.

EASY CLASSIC CHINESE BEEF STIR FRY

- Combine the cornstarch and 2 tbsp of water in a small bowl, mix until smooth.
- Mix in remaining Sauce ingredients EXCEPT the 1/3 cup water.
- Place the beef and 2 tbsp of Sauce in a bowl and mix gently. Set aside for 15 minutes.
- Add 1/3 cup water into the remaining Sauce. Set aside.
- Heat oil in wok over high heat. Add garlic and cook for 15 seconds.
- Add onion and cook for 1 minute.
- Add the beef and cook until it changes colour from red to light brown but not cooked through.
- Add bell pepper and carrots and stir fry for 30 seconds.
- Add Sauce and cook for 30 seconds.
- Add pak choy and scallions/shallots and cook for a further 1 minute until the Sauce is thickened.
- Remove from heat immediately.
- Serve immediately with rice - or for a low carb, low cal option, try Cauliflower Rice! Garnish with sesame seeds and cilantro, if using.
CHINESE SOY SAUCE NOODLES
Steps:
- Pour the sesame oil, soy sauce, fish sauce, oyster sauce and Chinese rice wine (optional) in a small cup. Season with a pinch of pepper and sugar. Stir well and then put it aside until needed later.
- Pour the vegetable oil in large wok or non-stick pan and place it over medium heat. Once the oil is hot, add the raw onion.
- Stir fry the onion for 5 minutes until it start to soften a little. Don't burn it. Then add the noodles.
- Turn the heat high now. Stir fry the onion and noodles over high heat for a couple of minutes until the noodles are hot. Drizzle with the soy sauce mixture.
- Stir fry and toss the noodles well until the soy sauce is evenly divided and has colored the noodles.
- Then transfer the noodles onto plates. Serve hot.
