EASY CHICKEN & MINUTE RICE CASSEROLE

Very much a comfort food dish. Easily prepared by ingredients most of us have on hand in our pantry. So easy to make. You can also easily edit the recipe choosing soups you prefer, this is my favorite combination.

Number Of Ingredients 7

1 (10 3/4 ounce) can cream of chicken soup
1 (10 3/4 ounce) can cream of mushroom soup (could substitute cream of celery)
1 (10 3/4 ounce) can 2% low-fat milk, using one of the soup cans to measure (note, this is ONE can total NOT per can of soup as the soup directions may indicate)
3 -4 boneless chicken breasts, chicken tender strips work too
1 cup uncooked instant Minute Rice
lemon pepper (optional)
salt & pepper

Steps:

  • Preheat oven to 350 degrees (see baking instructions for alternate methods).
  • Mix the 2 cans of soup, 1 can milk, and 1 cup of uncooked rice together. Add salt & pepper to taste.
  • Pour above mixture into a 13x9x2 casserole dish.
  • Cut the chicken into strips (about the width of a chicken tender/finger).
  • Push the chicken strips down into the soup & rice mixture in the casserole dish so they are completely emerged.
  • Sprinkle top with lemon pepper/salt/black pepper.
  • Bake at 350 degrees 35-40 minutes or until chicken is finished. NOTE that cooking time will vary depending on how you choose to cut up the chicken. If using whole chicken breasts cook at 375 degrees for 45 minutes, or until finished.
  • You may also choose to make this in a crock pot, if so, cook on low 7-8 hours.
  • My family loves this recipe and it is SOOOO easy to make, plus I usually have all of these ingredients on hand which makes for a quick meal.
  • I love the flavors of the rice so much that sometimes I will make it without the chicken as a quick and easy side dish!

2 tablespoons unsalted butter
2 cloves garlic, finely chopped
4 scallions, sliced
2 cups broccoli florets
2 cups shredded rotisserie chicken (skin removed)
1 cup medium-grain white rice
1 plum tomato, chopped
Kosher salt and freshly ground pepper
2 cups low-sodium chicken broth
1/4 cup sour cream
1 cup diced dill havarti cheese (about 4 ounces)
1/4 cup grated parmesan cheese (about 1 ounce)

Steps:

  • Preheat the oven to 425 degrees F. Melt the butter in a large ovenproof skillet over medium heat. Add the garlic and about three-quarters of the scallions and cook, stirring occasionally, until soft, about 2 minutes. Add the broccoli, chicken, rice, tomato, 1 teaspoon salt, and pepper to taste; stir to combine.
  • Whisk the chicken broth and sour cream in a bowl, pour into the skillet and bring to a simmer. Stir in half each of the havarti and parmesan. Cover tightly with a lid or aluminum foil, transfer to the oven and bake until the rice is tender and most of the liquid is absorbed, about 20 minutes.
  • Turn on the broiler. Uncover the skillet and sprinkle with the remaining havarti and parmesan, then broil until golden, about 2 minutes. Sprinkle with the reserved scallions.

This takes no time to prepare, I have tryed this using different flavor soups, I find that cream of chicken and celery are the best, or use 2 cans cream of chicken, I also like to add the garlic powder and also a pinch of cayenne pepper to the soup mixture :)

Steps:

  • Set oven to 350 degrees F.
  • Grease a medium-size casserole dish.
  • Mix the first 6 ingredients in a bowl.
  • Add the uncooked rice to the soup mixture; mix until combined.
  • Transfer the soup/rice mixture to the casserole then spread out in the dish.
  • Place the chicken on top of the mixture.
  • Sprinkle with the dry onion soup.
  • Cover with foil and bake for 1 hour 30 minutes or until rice is cooked and the chicken is done.
  • Allow to stand for 10 mins before serving.

4 tablespoons butter, divided
3 tablespoons flour
1 teaspoon dried thyme
1 cup chicken broth
1 cup milk
2 cups diced cooked chicken
1/4 teaspoon salt
1/8 teaspoon black pepper
2 cups cooked rice
3/4 cup frozen peas, thawed
1 tablespoon dry breadcrumbs
1 tablespoon grated parmesan cheese

Steps:

  • Melt 3 tablespoons of butter in a saucepan over medium heat, whisk in flour and thyme and cook for 1 minute.
  • Gradually stir in broth and milk, stirring until thick and smooth.
  • Stir in chicken and add salt and pepper; set aside.
  • Grease a 1 1/2 quart shallow baking dish.
  • Spread rice in prepared baking dish, sprinkle with the peas and then pour creamed chicken mixture over.

6.9 oz box chicken rice a roni, lower sodium
1 Tbsp butter
2 c water
1 cut up chicken or your favorite pieces (i used skinless chicken breasts)
1/2 pkg dry onion soup mix (lipton)
10 3/4 oz. can(s) condensed cream of mushroom soup (1 can)
paprika for garnish

Steps:

  • 1. Pre-heat oven to 300 degrees. In a skillet, melt butter and combine rice & vermicelli mix. Sauté over medium heat until vermicelli is golden brown, stirring frequently.
  • 2. Place rice mixture in a 9" x 13" casserole pan. Add seasoning packet from Rice A Roni and 2 cups water to rice and stir well.
  • 3. Place chicken pieces in casserole.
  • 4. Sprinkle the Dry Onion Soup all over chicken.
  • 5. Spread chicken with Condensed Cream of Mushroom Soup.
  • 6. Lightly sprinkle with Paprika to add color.
  • 7. Cover with foil and bake for 1 hour. Then uncover and bake for an additional 30 minutes.

1 1/2 cups frozen peas (250 grams)

8 chicken thighs (2lbs, bone-in, skin on)
3 tablespoons mayonnaise (45 grams)
2 1/2 cups chicken stock (590 ml, boiling)

Steps:

  • Preheat oven to 400 degrees F. Add the uncooked rice and frozen peas to a 9x13" baking dish or roasting pan (3 quart capacity) with 2 teaspoons of the seasoning and the salt. Stir to combine.
  • Arrange chicken thighs over the rice, skin side up (trying to leave as much of the skin out of the liquid as possible).
  • In a small bowl, combine the remaining 2 teaspoons of seasoning with mayo and brush the mixture over the chicken thighs. Pour the boiling chicken stock into the pan around the chicken.
