CHICKEN POT PIE CASSEROLE

Chicken Pot Pie Casserole image

This is an extremely easy way to make chicken pot pie when you want comfort food. Creamy, it's an easy meal you'll make again and again. It has all the flavors of a chicken pot pie but in an easy to make casserole. The Bisquick topping has a little bit of crunch on the outside and pillowy soft inside. We could eat multiple plates...

Provided by Tina Leffelman

Categories     Casseroles

Time 50m

Number Of Ingredients 7

1 lb boneless, skinless chicken breasts
1 can(s) cream of chicken soup (10.5 oz)
1/2 can(s) (soup can) milk
2 can(s) mixed vegetables, drained (14.5 oz each)
salt and pepper, to taste
2 1/4 c Bisquick
2/3 - 1 c milk

Steps:

  • 1. Preheat oven to 350 degrees.

  • 6. Drop biscuit mixture by teaspoonfuls on top of filling mixture.
  • 7. To keep biscuits from browning too quickly, spray tops with non-stick cooking spray
  • 8. Cover pan with foil. Bake in a 350-degree oven for a total of 30-35 minutes.
  • 9. Uncover for the last 10 minutes so that biscuits can brown.

2 teaspoons olive or vegetable oil
1 cup chopped onion
4 boneless chicken breast halves cut into 1 to 2-inch cubes, about 4 cups
2 tablespoons all-purpose flour
Pinch dried thyme
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/4 teaspoon paprika
2 carrots, peeled and chopped
2 celery stalks, chopped
4 medium red potatoes, cut into 1-inch cubes
1 (14 1/2-ounce) can crushed tomatoes
1 cup reduced-sodium chicken broth
1/4 cup dry white wine
1 teaspoon Dijon mustard
1/2 cup frozen corn kernels
1 (9-inch) refrigerated pie crust
1 egg, lightly beaten

Steps:

  • Preheat oven to 425 degrees F.
  • Heat oil in a large Dutch oven or oven-proof stockpot over medium heat. Add onion and saute for 2 minutes. Add chicken and saute for 5 to 7 minutes, until browned on all sides. Remove 1/2 the cooked chicken for later in the week, cover and refrigerate. In a small bowl, combine flour, thyme, salt, pepper, and paprika. Add flour mixture to the chicken and stir to coat. Stir in carrots, celery, potatoes, tomatoes, chicken broth, wine, and Dijon mustard and mix well. Bring mixture to a boil. Cook until vegetables are tender. Transfer stew to a clean 2-quart casserole dish and stir in corn. Place pie crust on top of casserole and pinch around the edges to seal the crust to the dish. Brush the top with beaten egg and prick the surface 1 or 2 times with a sharp knife or fork to allow steam to escape during cooking. Place casserole dish on baking sheet and bake for about 8 to 10 minutes, until crust is golden.

EASY CHICKEN POT PIE CASSEROLE

Easy Chicken Pot Pie Casserole image

I love to experiment in the kitchen and everyone in my family loves chicken pot pie, but not the prepackaged over floury crust... so I had a little fun with it.

Provided by ladyangel84

Categories     Stew

Time 1h15m

Yield 1 casserole, 6-8 serving(s)

Number Of Ingredients 15

1 lb chicken breast
1 (10 1/2 ounce) can cream of mushroom soup (cream of chicken can be substituted if you don't like mushroom)
1 (7/8 ounce) packet instant chicken gravy
4 ounces cups water
1 medium onion
1 (16 ounce) package mixed vegetables
5 medium potatoes (in a hurry? use some thawed french fries)
1 (12 ounce) can flakey biscuits
1 (14 1/2 ounce) can chicken broth
1 teaspoon italian seasoning
1 teaspoon garlic salt (i recommend the California style with chunks of garlic and parsley)
1 teaspoon black pepper
1 tablespoon salted butter or 1 tablespoon margarine
1/4 teaspoon ground red pepper
3 tablespoons all-purpose flour

Steps:

  • Preheat oven to 350°F.
  • Combine broth, butter, pepper, garlic salt, red pepper, Italian season and chicken in baking dish.
  • Bake 25 minutes.
  • Once chicken is cooked remove from baking dish and place in freezer for quick cooling and save liquids. (can be done the night before!).
  • Put the liquid in a bowl and add gravy, soup, and flour. Mix until smooth.
  • Peel and chop potatoes. Rinse and put in a saucepan.
  • Add liquid mixture and water to potatoes and boil 15 minutes or until potatoes soften but don't lose their crispness.
  • Preheat oven to 400°F.
  • Peel and chop onion.
  • Chop cooled chicken into small pieces. (use your best judgement -- you know if you like big chunks or not :) ).
  • Pour liquids, potatoes, mixed veggies, onion, and chicken into large baking dish.
  • Bake 35 minutes.
  • Bake biscuits according to package directions -- (I know it says not to say that, but canned ones are the easiest and you don't need any other ingredients, and they all have different directions. I don't recommend baking the biscuits on top of the casserole because they come out half mushy -- and nobody likes mushy biscuits. Usually they're 400 degrees and if its 450 you can still bake both at the same time by just taking 8 or 10 minutes off the casserole bake time -- but watch closely!).
  • Remove from oven. Allow to cool 5 minutes. Enjoy!

  • In a large mixing bowl, combine the all-purpose flour, baking powder, salt, and sugar. Whisk or run a fork through to combine. Add the heavy cream to the dry mixture, then mix until a crumbly dough is formed.

  • Whisk/stir together the cream cheese, cream of chicken soup and nonfat milk until combined (small chunks of cream cheese may not incorporate). Stir in vegetables, chicken and pepper. Place in casserole dish.
  • Add flour, baking powder and salt to a large bowl. Cut in butter with a pastry cutter or two forks until the butter is in small pieces (smaller than peas). Stir in buttermilk until just incorporated. Use your hands to make the biscuit dough come together. Drop pieces of dough all over the top of the casserole.
  • Bake for 30-40 minutes, or until filling is bubbling and the tips of the biscuits are golden. I like to rotate my pan partway through baking so the biscuits cook evenly.

  • Pour the olive oil into a large pot or Dutch oven set over medium to medium-high heat. Add the garlic and carrots and cook until tender, stirring occasionally, for about 5 to 7 minutes. Mix in the chicken. Sprinkle the flour over the mixture and stir to combine. Cook for 2 minutes, stirring constantly. Pour in the chicken broth, then add the half-and-half and the wine (if using). Stir to combine, scraping the bottom of the pot. Increase the heat and bring to a simmer, stirring occasionally. Continue to stir occasionally while the mixture simmers for a minute or two, until thickened. Stir in the thyme, garlic powder, onion powder, salt, and pepper. Adjust the seasonings to taste. Stir in the cubed potato and the frozen green peas, then remove the pot from the heat.
  • Pour the mixture into a deep 4 1/2- to 5-quart baking dish (or a baking dish of a similar size/capacity); set aside.
  • In a large food processor, pulse together the flour, baking powder, and salt until combined. Add the buttermilk and pulse until all ingredients are fully incorporated. The dough should be very sticky but not runny.
