POOR MAN'S LOBSTER RECIPE
These days lobster is an expensive seafood, alternatives are welcome; such as this poor man's lobster recipe.

Steps:
- Cut the white fish fillets widthwise into 2 inch widths.
- Bring the water to the boil. Add the sugar, and the salt and stir until dissolved.
- Using tongs lower fish pieces into the boiling water.
- Cook for about 7 minutes or until the fish is just beginning to flake.
- Using a skimmer, remove the fish and place in the bowl of melted butter.
- Remove from the butter and squeeze lemon juice on the fillet pieces.
- Serve hot.

LOBSTER THERMIDOR
Steps:
- For the pickled mustard seeds: In a small pot over high heat, bring the white vinegar to a boil. Add the mustard seeds, then immediately remove from the heat and let rest for about 30 minutes. Strain seeds, reserving vinegar for another use. Set aside.
- For the lobster: Bring a very large pot of generously salted water to a boil. Place the lobsters head first into the water and cook at a rapid boil until bright red, 5 to 6 minutes. Remove the lobsters from the water and set them aside to cool.
- For the leek stuffing: Slice the leeks into 1-inch pieces and place in a large mixing bowl. Fill the bowl with cold water and, with your hands, agitate the water to dislodge any dirt and grit from the leeks. Let the grit settle to the bottom of the bowl, then use a spider or slotted spoon to gently lift the leeks out of the water and place in a colander set in the sink to drain.
- Heat the olive oil in a large saute pan over medium heat. Add the butter, leeks, a pinch of salt and a few grinds of pepper. Cook, stirring often, until the leeks are tender, 6 to 8 minutes. Stir in the mustard and red wine vinegar. Remove from the heat and set aside.
- For the assembly: Preheat the oven to 400 degrees F.
- Once the lobsters have cooled, cut them in half and take the tail and claw meat out. Cut the meat into bite-size pieces. Set aside.
- Clean out the entire inside of the lobster shells, discarding the innards and the claw shells. Divide the leeks among the empty lobster shells, then top with the lobster meat. Brush the lobster with the melted butter and finish with some pickled mustard seeds. Bake until heated through, approximately 10 minutes.
POOR MAN'S MOCK LOBSTER
Try this recipe for chicken that is marinated and grilled, dipped in butter and tastes amazingly like lobster. My Dad actually got this recipe from a friend of his, and it's too wonderful to keep it a secret! Serve with clarified butter for dipping.

- In a saucepan, combine the soy sauce, oil, garlic salt, pepper, brown sugar, mustard powder, ginger and pineapple juice. Bring to a boil, stirring to dissolve the sugar. Boil for about 5 minutes, then remove from the heat and allow to cool completely. When cooled, place the chicken into a large resealable bag and pour the marinade over it. Press out as much air as you can, seal and refrigerate for at least 2 hours to marinate.
- Preheat a grill for medium-low heat. When hot, lightly oil the grate.
- Place the chicken on the grill and discard the marinade. Cook until chicken juices run clear, 20 to 25 minutes. Turn as needed to keep the chicken from burning.

My husband loves Lobster but sadly, living in a landlocked state we have to pay high dollar for seafood. during the rougher times we we can't afford Lobster, this substitute is almost as good

- Combine everything but butter and lemon juice in mircoave safe dish.
- Cook in mircowave 15 minutes until fish flakes easily apart.
- let stand 5 minutes.
- Combine butter and lemon juice in bowlmircowave mix 2 minutes.
- remove cod from cooking broth and plate.
- Serve with lemon butter for dipping.
POOR MAN'S LOBSTER THERMIDORE
This recipe has been sitting in my "To Try" recipe file for about a year. I finally got around to trying it and was so glad I didn't have to share this meal with anyone but myself. Sooo Good! I got this recipe from Cooks.com unfortunately the person who submitted this forgot to include the directions. So I winged it. Sure hope you enjoy this as much as I did. You can use any kind of white fish. I used catfish fillets and it was excellent. I did alter the recipe for my taste. Food.com does not recognize the phrase cooking wine but that is what I use.

Steps:
- Fry fish, when done put in a casserole dish.
- Saute onions in same pan.
- Add wine with onions and cook for 30 seconds scrapping bottom of pan often.
- Add soup and milk. Cook for a minute or two stirring all the time.
- Pour soup mixture over fish in casserole. Sprinkle with bread crumbs then both of the cheeses and then sprinkle with paprika.
- Bake in 425 oven for 10-15 minutes until brown and bubbly. All ovens are different, please keep an eye on it so it does not burn.
POOR MAN'S LOBSTER
This recipe was told to me by the captain of the boat when halibut fishing. It is a very quick, simple, and tasty way to eat halibut!

Steps:
- Fill a pot with water (about a gallon).
- Add 1 cup sugar, and bring to a boil.
- Do not ever stir the mixture.
- Add chunks of halibut, do not over crowd.
- They will sink to the bottom, and then rise to the top when they are done.
- It should take just a few minutes.
- Remove with slotted spoon.
- Remember to not stir the mixture.
- Continue until all the halibut is cooked.
- Dip in melted butter and eat!

- Make 3 slits with knife into fish fillet.
- Place fish fillet in broil pan and sprinkle with the breadcrumbs, lemon juice, paprika and 3 pats of butter.
- Broil fillet for 7-8 minutes.
