EASY CHICKEN AND SPINACH SKILLET PASTA
Easy Chicken and Spinach Skillet Pasta is a one-pot meal that will leave you wanting seconds & thirds. It is the perfect healthy and easy weeknight meal.

Steps:
- Chop & dice 1/2 an onion and add to a cast-iron skillet set on medium heat with olive oil. Sautee until translucent - about 5 minutes.
- Add in minced garlic cooking for another couple of minutes.
- Add in the roughly chopped roasted red peppers and red pepper flakes. Then stir in 1 8ounce box of Banza Chickpea pasta.
- Add 1 cup of broth to the skillet, stir and place a lid on, letting the pasta cook for 5-8 minutes. Be sure to stir every minute or so to ensure the pasta is not sticking to the skillet.
- Once the pasta is almost cooked, add a couple of handfuls of spinach to the skillet. Place the lid back on so the spinach can wilt. Continue stirring.
- Finally, add in 1 pound of cooked and chopped chicken *, parmesan and mozzarella. Stir to make sure all is combined.
- Add salt and pepper to taste and enjoy!

Steps:
- Melt butter in skillet over medium heat.
- Add onion, basil, garlic and pepper flakes.
- Cook until onion is tender about 7 minutes.
- Add chicken and saute, stirring often (about 15 minutes).
- Mix in uncooked spinach.
- Season with salt and pepper to taste.
- Heat until spinach is heated through.
- Place fettucini in bowl and toss with some of pan dripping.
- Add chicken and toss with parmesan cheese.

- Cut chicken breasts horizontally in half; pound to 1/4-inch thickness. Combine tomatoes and 3 Tbsp. dressing.
- Heat oil in large nonstick skillet on medium-high heat. Add chicken; cook 2 to 3 min. on each side or until done (165°F), drizzling with remaining dressing for the last minute. Transfer to platter; cover to keep warm.
- Add tomato mixture to skillet; bring just to boil, stirring frequently. Add spinach; cook on medium heat 2 to 3 min. or just until spinach starts to wilt, stirring constantly.
- Spoon spinach mixture over chicken. Serve with rice.

- Add 2 tablespoons olive oil to a deep 12-inch skillet or sauté pan and place it over MEDIUM heat. Add the chopped chicken and cook, stirring frequently. Season the chicken with Italian seasoning, a touch of salt, and black pepper, and continue cooking for 3 or 4 minutes or until chicken is completely cooked through. Transfer the chicken to a plate and cover to keep warm.
- Add the remaining olive oil to the pan and add the onions. Cook for 2 or 3 minutes, until softened and lightly browned. Add the garlic and cook for a minute or two until fragrant. - Stir in the half and half and mozzarella and simmer for minute or two until warmed through and the cheese has melted. Remove the skillet from the heat and stir in the fresh spinach until it wilts from the heat of the pasta. Top with Parmesan and serve.
