Steps:
- Mix bread crumbs and milk in medium bowl. Let stand 15 min.
- Heat oven to 350°F. Add meat, 1/4 cup cheese and pepper to bread crumb mixture; mix just until blended. Shape into 36 meatballs, each about 1 inch in diameter. Place in single layer on foil-covered rimmed baking sheet.
- Bake 20 min. or until done (160°F). Meanwhile, heat pasta sauce in small saucepan on medium heat.
- Transfer meatballs to platter; top with sauce. Sprinkle with remaining cheese.

Steps:
- Heat oven to 350 degrees.
- Knead ground turkey in large bowl. Add bread crumbs, continue to knead until bread crumbs and turkey are well blended.
- Beat eggs in a separate bowl. Add eggs and cheese to turkey meat and knead all ingredients together until well blended.
- Drop golf ball sized balls of turkey mixture onto a greased skillet. Brown all sides on medium heat.
- Place browned turkey meatballs in a casserole dish. Bake for 15-20 minutes.
- Enjoy alone or with your favorite sauce.

TURKEY MEATBALLS WITH CHEESY POLENTA

Steps:
- Mix the egg and 1/4 cup polenta in a large bowl; let sit 5 minutes. Add the turkey, ricotta, 2 tablespoons each parmesan and parsley, the chopped garlic, 1/2 teaspoon salt and a few grinds of pepper; mix with your hands until combined. Form into eight 1 1/2-inch meatballs.
- Heat the olive oil in a large nonstick skillet over medium-high heat. Add the meatballs and cook, turning, until lightly browned, about 5 minutes. Transfer to a plate. Add the sliced garlic to the skillet and cook, stirring, until slightly softened, about 1 minute. Add the tomatoes and red pepper flakes and bring to a boil. Reduce the heat to medium and return the meatballs to the skillet. Simmer, stirring occasionally, until the meatballs are cooked through, about 10 minutes. Stir in the remaining 2 tablespoons parsley and season with ¼ teaspoon salt and a few grinds of pepper.
- Meanwhile, bring 4 cups salted water to a boil. Reduce the heat to medium low and add the remaining 3/4 cup polenta. Cook, stirring constantly, until the water is absorbed and the polenta is soft and creamy, 7 to 8 minutes. Stir in the remaining 1/4 cup parmesan and season with salt and pepper. Top each serving of polenta with the meatballs and sauce.

- Mix all ingredients thouroughly.
- Form 1/4 cup meat mixture into meatballs.
- Arrange 1/2 the meatballs around the edge of a dinner plate or large microwave safe plate.
- Microwave meatballs at 70% power 4 minutes 30 seconds.
- Turn over meatballs.
- Microwave at 70% power for 3 minutes.

MOIST TURKEY MEATBALLS
This is an adaptation of Kittencal's recipe#69173. I wanted to be able to enjoy meatballs without the fat and had not, until now, found a good recipe for turkey meatballs. I made her delicious ones for the kids and hubby, but changed it up with turkey and extras for me(and my waistline). They are not dry and the flavor is slightly sweet from the basil. I usually have these with homemade pasta sauce and ww pasta.

- Heat oven to 375 degrees F. Heat 1 tablespoon oil in a deep 12-inch oven-proof skillet over medium-low heat. Add the onion, mushrooms, and garlic and cook, stirring occasionally, until the mushrooms are tender and their liquid is nearly evaporated, 4 to 5 minutes. Season with 1/4 teaspoon salt and pepper to taste and set aside to cool slightly.

Top with mozzarella cheese, transfer the uncovered skillet to the oven and bake for 15 to 20 minutes, or until meatballs are cooked through and cheese has melted.
