Provided by Kellie

Categories     Dinner

Time 30m

Number Of Ingredients 20

2 cups low fat milk
2 cups water
1 teaspoon Kosher salt
1 cup yellow cornmeal grits
2 tablespoons salted butter
1 cup shredded white cheddar cheese
4 slices bacon (chopped)
1 1/2 pounds shrimp (peeled & de-veined)
1 1/2 cups chopped onion
3 cloves garlic (minced)
3 tablespoons cornstarch
1 1/2 cups low sodium chicken broth
1 cup heavy cream
1 tablespoon butter
1 teaspoon cayenne pepper
1 teaspoon hot sauce
1/2 teaspoon Kosher salt
1/2 teaspoon freshly ground black pepper
1/2 cup chopped green onions
1/4 cup chopped fresh parsley

Steps:

  • In a large pot over medium heat, add the milk, water and salt. Bring to a simmer. Whisk in the grits and continue whisking until they begin to thicken. (This will help eliminate lumps.) Continue to cook the grits for 10 to 15 minutes, stirring occasionally, until thickened. Stir in the butter and cheese. Cover and set aside.
  • In a large skillet, cook the bacon over medium-high heat until crisp. Transfer to a paper towel lined platter using a slotted spoon to drain.
  • Return the skillet to the heat and add the shrimp to the pan. Cook for 1 to 2 minutes on each side. Transfer the shrimp to a platter and keep warm.
  • Add the onions to the skillet and cook until softened. Stir in the garlic and cook for 1 minute. Sprinkle the cornstarch over the onions/garlic and cook for an additional minute. Whisk in the chicken stock and cook until the sauce begins to thicken. Whisk in the cream, butter, cayenne pepper, hot sauce, salt and pepper. Continue cooking until the sauce starts to thicken more. Return the shrimp to the pan and cook for 3 to 4 minutes- making sure not to overcook the shrimp. Stir in the bacon, green onions and parsley.
  • SERVE:
  • Spoon about 1 cup grits onto a plate and top with 4 to 5 shrimp. Pour about 1 cup gravy over the shrimp. Repeat with remaining grits and shrimp. Serve immediately.

Yield 4 serving(s)

Number Of Ingredients 8

1 1/2 lbs shrimp, peeled and deveined
1 tablespoon Old Bay Seasoning (optional)
3 cups water
1 cup quick-cooking grits
1 teaspoon salt
1/2 teaspoon garlic powder
4 ounces cheddar cheese, shredded
2 teaspoons red pepper flakes

  • Add remaining ingredients to grits and stir to melt cheese.
  • Dish grits into individual bowls and top with shrimp.

Shrimp and Cheddar Grits image

Provided by Food Network Kitchen

Categories     main-dish

Time 45m

Yield 4 servings

Number Of Ingredients 20

1 bay leaf
Kosher salt and freshly ground pepper
1 cup old-fashioned grits (not instant or quick-cooking)
1/4 cup heavy cream
2 tablespoons unsalted butter, cut into pieces
1/2 cup grated sharp white cheddar cheese
2 tablespoons extra-virgin olive oil
2 links fully cooked andouille sausage (about 6 ounces total), cut into 1/2-inch pieces
4 scallions, chopped (white and green parts separated)
2 stalks celery, chopped, plus 1/4 cup leaves
1 small red bell pepper, chopped
1 pound large shrimp, peeled and deveined
Kosher salt
3 cloves garlic, minced
1 teaspoon chopped fresh thyme
2 tablespoons tomato paste
1 tablespoon fresh lemon juice, plus more if needed
2 teaspoons Worcestershire sauce
2 tablespoons unsalted butter
2 tablespoons chopped fresh parsley

Steps:

  • Make the grits: Combine 4 cups water, the bay leaf, 1 teaspoon salt and a few grinds of pepper in a medium saucepan over medium heat. Bring to a simmer, then gradually add the grits, whisking constantly. Reduce the heat to medium low and cook, stirring occasionally with a wooden spoon, until tender, about 20 minutes. Discard the bay leaf. Stir in the heavy cream, butter and cheese. Remove from the heat; cover to keep warm. If the grits seem too thick, thin with water, 1 to 2 tablespoons at a time.
  • Meanwhile, make the shrimp: Heat the olive oil in a large skillet over medium heat. Add the sausage and cook, stirring, until browned, 2 to 3 minutes. Add the scallion whites, chopped celery and bell pepper and cook, stirring, until just starting to soften, about 3 minutes. Add the shrimp and season with salt. Cook, stirring, until the shrimp are almost cooked through, about 3 minutes.
  • Push the shrimp and vegetables to the edge of the skillet. Add the garlic, thyme and tomato paste to the center and cook, undisturbed, until sizzling, 1 minute. Add 1/2 cup water, the lemon juice and Worcestershire sauce and stir everything together. Bring to a simmer and cook until the shrimp are just cooked through and the sauce is slightly reduced, 3 minutes. Add the butter and swirl the pan until melted. Add the parsley, scallion greens and celery leaves and toss. Season with salt. Add more lemon juice, 1/2 teaspoon at a time, if needed.
  • Divide the grits among 4 shallow bowls. Top with the shrimp mixture.

3/4 cup quick grits
1 1/2 cups grated pepper jack cheese
1 1/2 cups grated sharp Cheddar
1/2 cup mascarpone
4 tablespoons butter
1 tablespoon olive oil
1 1/2 pounds peeled and cleaned jumbo shrimp
1 tablespoon Cajun seasoning
Kosher salt and freshly ground black pepper
6 strips bacon, chopped

CHEESY GRITS AND SHRIMP

Cheesy Grits and Shrimp image

I know it sounds like a very bad recipe. That's what I thought too. Crazy thing is *it's really good!. I got it from my mom (who got it from a friend) and after months of bugging me to try it, I did. I was shocked that I liked it. My husband has given it to a few guys at work and all love it.

Categories     One Dish Meal

Time 30m

Yield 4 serving(s)

Number Of Ingredients 12

4 cups chicken broth
1/2 teaspoon salt
1 cup grits (not instant)
1 cup shredded cheddar cheese
1 cup shredded monterey jack cheese (with or without peppers)
2 tablespoons butter
6 green onions, chopped
1 green bell pepper, chopped
1 minced garlic clove
1 1/2 lbs shrimp (peeled and cooked)
1 (10 ounce) can Rotel Tomatoes (drained)
1/4 teaspoon salt

Steps:

  • Prepare grits in broth and salt according to package.
  • Reserve a 1/4 cup of both cheeses for topping and combine the rest.
  • In large fry pan saute onion, garlic, and bell pepper in the butter.
  • Add to grits (after grits are prepared).
  • Combine Rotel, shrimp, 1/4 salt with grits.
  • Pour into a 2-quart casserole; sprinkle with reserved cheese.
  • Bake at 350°F for 30-45 minutes. Let stand for 5 minutes and then serve.
  • NOTE: This is rather spicy and I don't handle "hot" to well, so I also tried it with diced tomatoes and not Rotel. It was okay, but to me better with the Rotel.
