EASY CHEESE AND GARLIC SCONES
This is my favorite, very simple, recipe for savory scones. They are wonderful served hot, spread with a little butter, and eaten alongside a steamy hot soup. It's important not to over handle these scones, as they will be heavy and tough.

Steps:
- Preheat the oven to 220C. Sift the flour and the baking powder into a bowl in order to allow air into the mixture. This is an important step.
- Rub in the butter until a breadcrumb like consistency is achieved. Cold, dry hands make this step easier.
- Grate the cheese. Stir most into the flour mixture but keep a little back for sprinkling on top of the scones.
- Crack the egg into a measuring jug and whisk lightly. Top the beaten egg up with milk until the mixture reaches the half-pint or 285ml mark. Whisk again to combine.
- Make a well in the centre of the dry ingredients and pour the majority of the egg mixture into the bowl, keeping back a little to brush the scones with before baking.
- Stir the mixture to combine and then knead very briefly, just enough to bring it together. Be careful not to overwork the dough.
- Roll out the dough quite thickly (1 1/2 inches) and cut out circles with a scone cutter or a glass. Don't twist as you cut or the scones will rise unevenly. Alternatively, you can cut the dough into traditional wedges.
- Place the scones on a baking tray. Glaze the tops with the egg and milk mixture then sprinkle a little cheese over each one.
- Put straight into the very hot oven and bake for around 13 minutes or until well risen and browned. Afterwards, cool on a rack for five minutes before eating warm with butter.

- Pre-heat the oven to 220°C/430°F and line a baking tray with baking paper or a silicone baking liner and sprinkle lightly with flour. Set aside.
- In a large bowl, whisk together flour, baking powder, mixed herbs, garlic powder (if using) and salt. Add the cubed butter and using a pastry cutter or your hands, combine with the dry ingredients until the mixture resembles coarse sand. Stir through the grated cheese, reserving 1/4 cup to sprinkle on top if desired.
- Add the milk (starting with 1 cup and adding more as needed) and stir together until a shaggy dough forms. I use a butter knife for this step - that's the original way to do it and it works really well! You want the dough to hold together but not be too wet. If you accidentally add too much milk, add a little extra flour.
- Tip the dough onto the prepared baking tray and use your hands to form it into a rectangle. Cut the dough into 10 evenly sized pieces. You can also make a circle and cut the dough into triangles. It doesn't matter what shape the scones are, as long as they are all roughly the same size. Sprinkle with the remaining grated cheese.

- Make sure the butter is chilled before using in the recipe. Dice the butter into smaller pieces, then place into the freezer while measuring the dry ingredients. In a large mixing bowl, combine all the dry ingredients: flour, sugar, salt, baking powder and soda, and seasonings. Add the butter next and using a pastry butter or two large forks, cut the butter into the flour until the mixture resembles fine crumbs. You can also use a food processor for this step but be careful not to over-heat the butter; pulse slowly.
- Next, prepare the wet ingredients. Combine the sour cream, milk and eggs in a large measuring cup and whisk together until the eggs are well beaten. Make a well in the center of the butter and flour mixture and add the liquids. Use a spatula to fold all the ingredients together until a sticky dough forms (dough needs to be sticky, don't add more flour!). Add the cheddar cheese ham and chives, then mix again until the ingredients are uniform throughout.
- Line the work surface with a sheet of plastic wrap and transfer the dough onto the plastic and wrap tightly. Shape the dough into a flat disk, about 1 inch tall. Place the dough into the refrigerator to chill for at least 15 to 20 minutes, or leave until ready to bake.
- Preheat oven to 350F. Line a large baking sheet with a silicone mat or parchment paper. Remove the plastic wrap from the scone dough and using a sharp knife, section the disk into 8 equal pieces. Carefully transfer the scones onto the prepared baking pan, spacing the scones about 1 1/2 to 2 inches apart. Top each scone off with more cheddar cheese and chives.
