1 cup caramel bits
1/4 cup packed brown sugar
2 tablespoons Gold Medal™ all-purpose flour
1 teaspoon ground cinnamon
1/2 pouch (17.5-oz size) Betty Crocker™ oatmeal cookie mix (about 1 1/2 cups)
1/4 cup cold butter or margarine, cut into pieces
1/4 cup caramel topping

Steps:

  • Heat oven to 375°F. Spray 8-inch square (2-quart) glass baking dish with cooking spray.
  • In large bowl, mix pears, caramel bits, brown sugar, flour and cinnamon until evenly coated. Spread in dish. In same bowl, place cookie mix. Cut in butter, using pastry blender (or pulling 2 table knives through mix in opposite directions), until mixture looks like coarse crumbs. Crumble over pears.
  • Bake 45 minutes or until pears are tender and topping is golden brown. Drizzle with caramel topping.

1-1/4 cups all-purpose flour
1 cup quick-cooking oats
1 cup packed brown sugar
1 teaspoon ground cinnamon
1/2 cup butter, melted
20 caramels
1 tablespoon milk
3 medium pears, peeled and sliced
Whipped topping and additional cinnamon, optional

Steps:

  • In a small bowl, combine the flour, oats, brown sugar and cinnamon. Stir in butter (mixture will be crumbly); set aside 1 cup. Press the remaining mixture into an ungreased 8-in. square baking dish., In a small saucepan over low heat, cook and stir caramels and milk until caramels are melted and mixture is smooth. Remove from the heat. Arrange pears over crust; spoon caramel mixture over pears. Sprinkle with the reserved crumb mixture., Bake at 350° for 30-35 minutes or until the pears are tender and top is golden brown. Serve warm. Garnish with whipped topping and cinnamon if desired.

Steps:

  • Preheat the oven to 375 degrees F.

1 1/2 cups graham cracker crumbs
1 cup coarsely chopped pecans, divided
2 tablespoons granulated sugar
1/4 cup butter, melted
32 ounces cream cheese, softened
1 cup firmly packed brown sugar
2 tablespoons flour
1 tablespoon vanilla
1/2 cup sour cream
3 eggs
1 (14 ounce) bag caramels, divided
2 tablespoons water, divided

Steps:

  • Mix crumbs, 1/2 cup pecans, granulated sugar and butter.
  • Line 13x9-inch baking pan with foil; press crumbs firmly onto bottom of pan.
  • Bake at 350 degrees for 10 minutes.
  • Beat cream cheese, brown sugar, flour and vanilla with electric mixer on medium speed until well blended.
  • Mixture will be pretty thick.
  • Add sour cream; mix well.
  • Add eggs, one at a time, mixing on low speed after each addition just until blended.
  • Place 36 caramels and 1 tablespoon water in microwavable bowl.
  • Microwave on high 1 minute or until caramels are completely melted when stirred.
  • Add melted caramels to cream cheese batter; stir until well blended.
  • The caramel will become kind of stringy through the batter as the caramels cool.
  • Pour over crust.
  • Bake at 350 degrees for 40 minutes or until center is almost set.
  • Sprinkle cheesecake with remaining 1/2 cup pecans.
  • Refrigerate 4 hours or overnight.
  • ****The recipe calls for melting the remaining caramels and 1 Tbsp of water and drizzling over it, but I did this when I made it and found that the caramel immediately cools and becomes very very sticky.
  • I think next time I make it, I will use some caramel ice cream topping to drizzle on top instead.

  • Microwave caramels and milk in a microwave-safe bowl on HIGH 2 minutes, or until melted, stirring after 1 minute.
