Just like bruschetta on bread but using pasta. I got this recipe from "Sam the cooking guy". This recipe is quick and easy and taste GREAT! I used penne noodles rather than spaghetti noodles.

Steps:
- Cook pasta according to package directions.
- Remove seeds from tomatoes and chop roughly.
- Put tomatoes in a bowl with the garlic, basil and olive oil - season with salt & pepper.
- Drain pasta, add to bowl and toss well with tomato mixture.
- Serve with shredded parmesan cheese.

BRUSCHETTA CHICKEN PASTA
This bruschetta chicken pasta is a super easy weeknight dinner packed full of chicken, cherry tomatoes, and fresh flavor. You can serve this dish hot or as a cold bruschetta pasta salad.

- Cook the pasta in salted boiling water according to the package directions until al dente. (Usually about 8-9 minutes.) Remove 1/4 cup of pasta water from the pot and place to the side for the sauce. Strain and set aside the pasta in a collander.
- Slice the chicken breast longways so that you have two wide thin chicken cutlets from each chicken breast.
- Mix together the salt, pepper, oregano, basil and garlic powder and season one side of the chicken breasts with half of the mixture.. Add 2 tablespoons of olive oil to a large skillet or dutch oven to heat.
- Add the chicken pieces herb side down. season the other side of the chicken with half of the herb mixture. Cook for 3-4 minutes then flip. Cook the chicken pieces until golden brown on each side and no longer pink in the middle, about 9-10 minutes total.
- Turn the heat down to medium low. Add ¼ cup of olive oil to the pan and all of the sliced cherry tomatoes. Next add the vinegar, ½ teaspoon of garlic powder, ½ teaspoon salt and a pinch of pepper. Cook over medium low heat for about a minute.
- Add the pasta and 1/4 cup of pasta water to the tomatoes and mix well until combined.
- Slice the chicken in thin strips, and add on top of the pasta. Top generously with parmesan cheese. Fresh chopped basil or parsley is also delicious on top. Enjoy!

This Bruschetta Pasta is everything you love about bruschetta, bursting with a no-cooking-required fresh tomato sauce and tossed with pasta.

- In a large bowl, combine the olive oil, vinegar, capers, and garlic. Season with salt and pepper.
- Add the tomatoes and mozzarella.
- Give a good toss. Let this marinate for 30 minutes if possible. I do this if I have time, if I don't I do this while the water is boiling for the pasta.
- Toss in the basil and parsley. I reserve a little for adding at the very end.
- Cook the pasta in a pot of salted water.
- Make sure to reserve at least 1/4 cup of the cooking liquid.
- Add the pasta and the reserved pasta water. Toss well. Check for seasoning. Add salt and pepper as needed.
- Sprinkle the reserved herbs on the top. Add the pine nuts and some Parmesan cheese.

- Heat the oil in large high sided skillet over medium-high heat. Add the cubed chicken and 1 tablespoon of the seasoning mix. Cook, stirring often for 5 minutes or until browned and fully cooked. Remove chicken from the pan and transfer to a large bowl. Set aside.
- Add the onion to the skillet and cook for 3 minutes or until softened and translucent.
- Add the stock, tomatoes and remaining seasoning mix to the skillet, bring to boil and stir to release browned bits from bottom of skillet. Stir in the uncooked pasta and cook for 15 to 20 minutes, stirring occasionally until the pasta is fully cooked.
- Return the chicken to skillet. Stir in the mozzarella and cook for 2 minutes or until thel chicken is heated through. Sprinkle with chopped basil if desired and serve immediately.

- Combine ingredients in a medium bowl.
- Season generously with salt and pepper and let sit for out on the counter while you prep and cook the chicken and pasta.
- Cook pasta to al dente according to package instructions. Drain the water and return pasta to the pan. Drizzle with a tablespoon of olive oil and toss to keep the pasta from sticking together as it sits. Set aside.
- Meanwhile, heat 1 tablespoon of olive oil or butter in a large skillet over medium heat.
- Season chicken breasts with salt and pepper and add them to the skillet. Cook about 4-5 minutes per side or until chicken is no longer pink and registers 165 degrees on a meat thermometer. Depending on the thickness of the breasts it could take up to 8 minutes per side. Transfer to a plate to rest, covered with foil to keep warm.
- To the skillet, add 1 tablespoon of olive oil and the bruschetta mixture. Cook, stirring often, just long enough to heat through; 1-2 minutes. Turn off the heat and add the pasta to the pan. Toss to coat, adding more olive oil if needed.
- Slice chicken breasts and add to the pasta.
- Divide into bowls and serve immediately, garnished with fresh basil. Drizzle with balsamic glaze, and added shredded Parmesan or Mozzarella, if desired.

- Whisk together the Balsamic Marinade/Sauce ingredients. Transfer 2 tablespoons to a freezer safe bag or bowl with the chicken. Marinate at room temperature for 15-30 minutes or in the refrigerator for up to 4 hours.
- Meanwhile, cook pasta al dente according to package directions in generously salted water. Remove 1 cup pasta water before draining. Drain and rinse the pasta, then toss with a drizzle the untouched balsamic sauce to prevent the pasta from sticking together.
- Heat 1 tablespoon olive oil in a large skillet over medium heat. Add chicken and cook until browned on all sides, but not cooked through, transfer to a plate (it will finish cooking later in the sauce).
- Reduce heat to medium-low. Heat 1 tablespoon olive oil in the chicken drippings. Add tomatoes, onions and garlic. Cook until the tomatoes begin to burst, 5-8 minutes, stirring constantly and scraping up any brown bits on the bottom of the pan.
- Add the chicken back to the pan along with remaining sauce (not touched by the raw chicken). Simmer until slightly thickened and the chicken is cooked through, 1-2 minutes.
- Stir in fresh basil and Parmesan. Stir in pasta until well coated, adding some reserved pasta water a little at a time if needed to reach desired consistency. Taste and season with additional salt, pepper and/or red pepper flakes to taste.

- Preheat oven to 400 degrees F (200 degrees C).
- Combine tomato, basil, and red onion in a small mixing bowl; stir well. Season with freshly ground black pepper. Set aside.
