PERFECT FRIED POTATOES

Steps:
- Put the potatoes in a large pot of salted water over medium-high heat, bring to a boil and reduce to a simmer. Cook until just fork-tender, 8 to 10 minutes. Drain and transfer to a baking sheet. Let rest for 10 minutes; this will allow the potatoes to steam and release excess moisture.
- In a small bowl, mix the sea salt, pepper, smoked paprika, cayenne and onion powder.
- Fill a large Dutch oven with 2 inches of oil and heat over medium heat to 375 degrees F. Carefully add half the potatoes and fry until golden brown and crisp, 4 to 5 minutes. Right before removing the potatoes, add a sprig of rosemary and half the sliced garlic to the oil and cook for 15 seconds. With a fine-mesh strainer, remove the batch to a medium bowl. Toss with half of the seasoning mix, then transfer to a paper towel-line baking sheet to drain. Repeat with the remaining potatoes, rosemary, garlic and seasoning mix.
FAST COUNTRY FRIED POTATOES FOR ONE
This is a quick way to make country potatoes for yourself. Putting the potato in the microwave first cooks the potato before frying which makes it so quick.

Steps:
- Scrub and rinse potato clean.
- Pierce potato a few times and place in the microwave. Cook 2 minutes.
- Heat a medium size pan over medium heat. Add enough non-stick cooking spray to cover the pan.
- Slice potatoes into cubes, approximately 1 inch by 1 inch, and place in pan.
- Sprinkle potatoes with salt, pepper, onion powder and garlic powder. Stir to coat potatoes with seasonings.
- Cook potatoes, stirring occasionally, golden brown.
COUNTRY FRIED POTATOES
Steps:
- Gather the ingredients.
- Slice or dice the cooked, cooled potatoes into bite-sized pieces; set aside.
- Heat a large, heavy skillet over medium-high heat. Add the oil or shortening to the hot skillet.
- When the oil is hot, add the potatoes, spreading into a single layer. Cook without stirring or turning until the potatoes are golden brown on one side.
- Turn them over and brown on the other side.
- Sprinkle the potatoes with salt and freshly ground black pepper to taste. Serve hot.

This is my moms recipe that she uses, and now I make as well. It goes over well with the kids with ketchup, but I like them plain.

- Put the butter in a pan (I use a stick free, the butter is for taste) and melt.
- Add potatoes, and turn over every few minutes until brown. Not all need to be brown, but make sure they are cooked through. Usually takes about 15 minutes.
- Add salt and pepper sometime during frying time, to taste.

- Place the frying pan on the stove on medium heat. Add 3 tbsp of extra virgin olive oil and to this, add the 2 diced potatoes.
- Stir in seasoning mix until potatoes are well-coated. Cover the pan with lid and let sit for 5 minutes. Uncover pan and stir briefly
- Now, cover the pan with lid again and let sit for another 5 minutes. Then, uncover the pan and garnish with 1 tbsp chopped spinach.
- Serve warm.
