- Fry the bacon in a skillet over medium heat until crisp. Remove to a paper towel-lined plate and pour off the excess grease.
- Return the skillet to the stove over high heat. Add a couple tablespoons of butter. When it's melted and the skillet is hot, add the onions, bell peppers and jalapenos. Stir the veggies around and cook until starting to soften and turn golden brown.
- Meanwhile, mix together the half-and-half, eggs and some salt and pepper in a bowl. Pour the egg mixture into the skillet with the veggies. Scoot the eggs around the skillet with a spatula, cooking slowly, until the eggs are done. Turn off the heat and set aside.
- To assemble the quesadillas, set a griddle or skillet over medium-low heat and add some butter. Toss together the grated Cheddar and Monterey Jack in a bowl. Put a tortilla on the griddle and add a layer of cheese, a layer of the cooked eggs and veggies, a layer of bacon slices, a layer of avocado if using and another layer of cheese. Top with a second tortilla. Cook on both sides, flipping carefully, until the cheeses are totally melted and the filling is hot. Repeat with the other tortillas and ingredients.
- Slice the 3 quesadillas into 4 wedges each. Serve on a plate with sour cream and pico de gallo or salsa (or grab them and head out the door!).

- Heat a non-stick pan over medium heat. Cook Sausage or Bacon until browned and cooked through then remove to a plate. If using cooked ham, you can heat it up or just add it over the cheese in step 4. Wipe excess oil from skillet if needed. Reduce heat to low.
- In a measuring cup, add 2 eggs with a pinch of salt and pepper, or add seasoning to taste. Beat with a fork. Add beaten eggs and swirl to spread evenly over the bottom of the pan. Cook over low heat until When eggs are nearly cooked through (if you tilt the pan they shouldn't run).

- Crack egg into small bowl.
- Salt and Pepper and desired.
- Add Tbs milk and whisk until scrambled.
- Spray a regular dinner plate with nonstick cooking spray.
- Place one tortilla on plate.
- Sprinkle liberally with shredded cheese.
- Pour egg mixture on top of cheese in a spiral shape.
- Place in microwave for one minute.

- Heat a large skillet over medium heat. Chop the bacon and add to the skillet, cooking until crisp. Remove some (but not all) of the grease.
- Crack the eggs into a bowl and add a splash of water or milk. Whisk until smooth.
- Add eggs to the skillet with the bacon and season with salt and pepper. Cook over medium heat, scrambling into small pieces, until desired doneness.
- Cover one flour tortilla with a thin layer of shredded cheese. Top with some of the scrambled eggs and bacon.

- In a bowl, whisk eggs with salt and black pepper.
- Melt 1 teaspoon of butter in a non-stick 10-inch frying pan over medium-low heat. Let it melt and get a little frothy.
- Pour eggs into the pan. Allow the eggs to cook for 30 seconds or so before running the spatula along the edge of the eggs, then dragging the spatula through the eggs (from the edge of the pan to the centre). As the eggs cook, and you drag the spatula through them, they'll form large, soft curds (start to solidify). Cook the eggs for about 2 to 3 minutes or so, continuing to drag the spatula through the eggs until they're cooked through. The eggs should be moist, but have no runny/liquid egg remaining. Transfer the eggs to a plate (so they don't overcook) and set aside.
- Lay tortillas on your countertop and distribute the cheddar cheese among them (on one side of each tortilla). Distribute eggs over top of cheese. Top eggs with black beans, hot peppers, avocado slices and green onion. Fold over the tortilla so you have a half-moon shape.
- Wipe out pan. Heat 1/2 teaspoon of butter in the pan over medium-low heat.
- Once butter has melted, cook quesadillas. Place two quesadillas in the pan and cook on one side for about 1 to 2 minutes or so. Carefully flip quesadillas to the other side and continue to cook for another 1 to 2 minutes or until the outside is golden brown and crispy and the cheese is melted inside. Repeat the process to cook remaining 2 quesadillas (adding remaining 1/2 teaspoon of butter and melting first).Note: Carefully watch as you are cooking them to ensure they don't burn.
- Cut each quesadilla in half (there will be 8 pieces in total).
- Serve with sour cream, Greek yogurt, salsa or guacamole (if desired). Enjoy!

- Cook the tomatoes: Peel and finely dice the tomatoes. Melt the butter in a pan, when it's bubbling add the tomatoes (with all the juices and seeds) and cook for about 2-3 minutes until soft and thickened (they can't be runny).
- Cook the eggs: Beat the eggs and season them with salt and pepper. Add the eggs to the pan, cook over low heat until almost cooked - they shouldn't be runny but also not cooked through.
- Assemble the quesadillas: Sprinkle 1/4 of the cheese on one tortilla, top with 1/2 eggs, then sprinkle another 1/4 of the cheese and cover with a second quesadilla. Repeat with the other ingredients.
- Brown the quesadillas: Heat 1 teaspoon of frying oil in a pan, when hot add one quesadilla into the pan. Cook over medium-high heat for a minute or so or until the quesadilla is golden brown (move the quesadilla once or twice to make sure it doesn't stick to the pan). Using a wide spatula, turn the quesadilla on the other side and cook until browned (you can also help yourself with a plate). Take off the pan and repeat with the other quesadilla.

- Cook Potato Hash: In a large skillet, add the olive oil, the bacon, cubed potatoes and chopped onion. Stir everything together and cook on medium until the potatoes are fork tender and browned. Season with salt and pepper.
- Cook the Eggs: Add 1 tbsp of butter to a clean skillet and melt over medium-low heat. Whisk the eggs in a bowl with a bit more salt and pepper, then pour in the skillet. As eggs begin to set, gently move spatula across bottom and side of skillet to form large, soft curds and cook until they thicken and no more visible liquid egg remains. Remove to a plate and set aside.
- Assemble Quesadillas: Place a tortilla on a clean cutting board and layer it with ⅛ of potato hash, ¼ cup cheese, and ⅛ of the scrambled eggs. Fold in half and press down gently. Place on a large baking sheet. Repeat with remaining tortillas and ingredients. If not all quesadillas fit on your baking dish, use another.
