1/2 cup shredded fontina cheese
2 bacon strips, cooked and crumbled

Steps:

  • In a small bowl, whisk the eggs. Coat a large skillet with cooking spray. Add eggs; cook and stir over medium heat until completely set., Place tortillas on a griddle. Spoon eggs over half of each tortilla; sprinkle with cheese, bacon and onion. Fold over and cook over low heat until cheese is melted, 1-2 minutes on each side. Serve with sour cream and salsa.

1 pound thin bacon
Butter, for the pan
1 onion, diced
1 red bell pepper, diced
1 jalapeno, seeded and diced
1/4 cup half-and-half
8 large eggs
Salt and freshly ground black pepper
3/4 cup freshly grated Cheddar
3/4 cup freshly grated Monterey Jack cheese
6 whole-wheat tortillas
Avocado slices, for topping, optional
Sour cream, for serving
Store-bought or homemade pico de gallo or salsa, for serving

Steps:

  • Fry the bacon in a skillet over medium heat until crisp. Remove to a paper towel-lined plate and pour off the excess grease.
  • Return the skillet to the stove over high heat. Add a couple tablespoons of butter. When it's melted and the skillet is hot, add the onions, bell peppers and jalapenos. Stir the veggies around and cook until starting to soften and turn golden brown.
  • Meanwhile, mix together the half-and-half, eggs and some salt and pepper in a bowl. Pour the egg mixture into the skillet with the veggies. Scoot the eggs around the skillet with a spatula, cooking slowly, until the eggs are done. Turn off the heat and set aside.
  • To assemble the quesadillas, set a griddle or skillet over medium-low heat and add some butter. Toss together the grated Cheddar and Monterey Jack in a bowl. Put a tortilla on the griddle and add a layer of cheese, a layer of the cooked eggs and veggies, a layer of bacon slices, a layer of avocado if using and another layer of cheese. Top with a second tortilla. Cook on both sides, flipping carefully, until the cheeses are totally melted and the filling is hot. Repeat with the other tortillas and ingredients.
  • Slice the 3 quesadillas into 4 wedges each. Serve on a plate with sour cream and pico de gallo or salsa (or grab them and head out the door!).

2 large eggs
1 Pinch salt and pepper
1/4 cup shredded cheese ((1 oz) Mexican cheese, medium cheddar or mozzarella)
3 oz breakfast Sausage (2 patties)
2 slices ham ((2 oz) chopped)
2 slices bacon ((2 oz), sliced)

Steps:

  • Heat a non-stick pan over medium heat. Cook Sausage or Bacon until browned and cooked through then remove to a plate. If using cooked ham, you can heat it up or just add it over the cheese in step 4. Wipe excess oil from skillet if needed. Reduce heat to low.
  • In a measuring cup, add 2 eggs with a pinch of salt and pepper, or add seasoning to taste. Beat with a fork. Add beaten eggs and swirl to spread evenly over the bottom of the pan. Cook over low heat until When eggs are nearly cooked through (if you tilt the pan they shouldn't run).
  • Sprinkle the top with 2 Tbsp shredded cheese then cover with a tortilla. The cheese will make the tortilla stick to the egg. Use a large spatula to get under the egg and quickly flip over.
  • Sprinkle another 2 Tbsp of cheese or add cheese to taste. Sprinkle your cooked protein (sausage, bacon or ham) over half of the surface and fold the tortilla in half. Sautee on both sides until golden brown.* Remove from skillet and use a pizza cutter to cut quesadilla into wedges and serve warm.

I *love* quesadillas, so I came up with this one for a quick and easy breakfast. You can substitute add or take away pretty much anything. It's easily modified for the pickiest of eaters. Toppings are not included in nutritional facts.

2 flour tortillas (can use corn)
1 egg
1 slice ham (any meat)
1 tablespoon milk
1/4 cup four cheese blend
cooking spray
salt and pepper
salsa (optional)
sour cream (optional)

Steps:

  • Crack egg into small bowl.
  • Salt and Pepper and desired.
  • Add Tbs milk and whisk until scrambled.
  • Spray a regular dinner plate with nonstick cooking spray.
  • Place one tortilla on plate.
  • Sprinkle liberally with shredded cheese.
  • Pour egg mixture on top of cheese in a spiral shape.
  • Place in microwave for one minute.
  • Cut meat into small pieces (less than bite size).
  • Sprinkle on top of egg and cheese from microwave, and top with some more cheese.
  • (I tend to add onions and jalapeno peppers here; totally optional).
  • Place 2nd tortilla on top and microwave for 30 secs - 1 minute (until egg is done to your liking and cheese is melted).

cooking spray
6 eggs
¼ cup milk
½ pound shredded Cheddar cheese (such as Kraft®)
¼ cup butter
24 flour tortillas, at room temperature

Steps:

  • Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease. Let sausage cool.
  • Spray a large skillet with cooking spray; warm over medium-high heat. Beat eggs with milk in a bowl. Pour into the skillet; cook and stir until eggs are set, about 5 minutes. Set aside to cool.

1/2 tsp crushed red pepper
1 jalapeno, chopped
1/2 cup chopped arugula
handful basil leaves or some chopped dill
1/2 cup shredded cheese
2 flour tortillas

Steps:

  • In a small bowl mix the cream cheese, garlic, tomato paste, cumin, coriander and crushed red pepper, a tsp of water until smooth.
  • Add the chicken, basil (or dill), chopped jalapeno and the arugula to the mix.
  • Spread 1/2 of the mixture on one half of a flour tortilla and top with cheese of your choice - mine was mozzarella. Repeat for the other tortilla.
  • Fold each tortilla in half and toast in a non-stick pan with olive oil until golden brown. Flip and toast on the other side as well.
  • Slice in 3-4 pieces and serve like this, or with guacamole.

6 slices bacon
6 large eggs
salt and freshly ground black pepper (, to taste)
8 ounces cheddar cheese (, grated or sliced thin)
8 large flour tortillas
salsa, sour cream and guacamole

Steps:

  • Heat a large skillet over medium heat. Chop the bacon and add to the skillet, cooking until crisp. Remove some (but not all) of the grease.
  • Crack the eggs into a bowl and add a splash of water or milk. Whisk until smooth.
  • Add eggs to the skillet with the bacon and season with salt and pepper. Cook over medium heat, scrambling into small pieces, until desired doneness.
  • Cover one flour tortilla with a thin layer of shredded cheese. Top with some of the scrambled eggs and bacon.
  • Top with some more shredded cheese and place another flour tortilla on top.

6 large eggs
2 teaspoons unsalted butter (divided)
pinch salt
pinch freshly ground black pepper
1 cup shredded cheddar cheese
1/4 cup no salt added canned black beans (rinsed and drained)
1 hot pepper (sliced thin (variety of your choice))
1/2 avocado (pitted, peeled and sliced thin)
1 to 2 stalks green onion (finely chopped)
4 flour tortillas (each about 6 to 7 inches in diameter)
Sour cream
Plain Greek yogurt
Salsa
Guacamole

Steps:

  • In a bowl, whisk eggs with salt and black pepper.
  • Melt 1 teaspoon of butter in a non-stick 10-inch frying pan over medium-low heat. Let it melt and get a little frothy.
  • Pour eggs into the pan. Allow the eggs to cook for 30 seconds or so before running the spatula along the edge of the eggs, then dragging the spatula through the eggs (from the edge of the pan to the centre). As the eggs cook, and you drag the spatula through them, they'll form large, soft curds (start to solidify). Cook the eggs for about 2 to 3 minutes or so, continuing to drag the spatula through the eggs until they're cooked through. The eggs should be moist, but have no runny/liquid egg remaining. Transfer the eggs to a plate (so they don't overcook) and set aside.
  • Lay tortillas on your countertop and distribute the cheddar cheese among them (on one side of each tortilla). Distribute eggs over top of cheese. Top eggs with black beans, hot peppers, avocado slices and green onion. Fold over the tortilla so you have a half-moon shape.
  • Wipe out pan. Heat 1/2 teaspoon of butter in the pan over medium-low heat.
  • Once butter has melted, cook quesadillas. Place two quesadillas in the pan and cook on one side for about 1 to 2 minutes or so. Carefully flip quesadillas to the other side and continue to cook for another 1 to 2 minutes or until the outside is golden brown and crispy and the cheese is melted inside. Repeat the process to cook remaining 2 quesadillas (adding remaining 1/2 teaspoon of butter and melting first).Note: Carefully watch as you are cooking them to ensure they don't burn.
  • Cut each quesadilla in half (there will be 8 pieces in total).
  • Serve with sour cream, Greek yogurt, salsa or guacamole (if desired). Enjoy!
