BLACKBERRY COBBLER
Celebrate summer with a homemade cobbler filled with delicious blackberries! If you're lucky enough to have access to fresh fruit, be sure to use it in this Blackberry Cobbler recipe. Otherwise, frozen berries will work just as well. Top off this delicious, easy Blackberry Cobbler dessert with homemade vanilla ice cream or even whipped cream for a special touch.

- In medium bowl, stir together blackberries and sugar. Let stand about 20 minutes or until fruit syrup forms. Heat oven to 375°F.
- In large bowl, stir together flour, baking powder, salt and milk. Stir in melted butter until blended. Spread in ungreased 8-inch square pan. Spoon blackberry mixture over batter.
- Bake 45 to 55 minutes or until dough rises and is golden. Serve warm with cream.

- Preheat oven to 350 degrees.
- Wash berries, mix with 1 cup sugar. Set aside.
- In 9" x 13" baking pan, mix with fork: 1 cup sugar, flour, butter, milk, baking powder, salt and cinnamon.

- Bake for 45 minutes or until brown on top.

- Preheat the oven to 350 degrees F. Grease a 3-quart baking dish with butter.
- In a medium bowl, whisk 1 cup sugar with the flour and milk. Whisk in the melted butter.
- Rinse the blackberries and pat them dry. Pour the batter into the baking dish. Sprinkle the blackberries evenly over the top of the batter. Sprinkle 1/4 cup sugar over the blackberries. - 1. In lg bowl, toss berries, lemon juice and vanilla until coated well. Heat oven to 350. Spray a 8" pan w/ cooking spray.
- 2. Spoon berry mix into pan. In another bowl, combine baking mix, brown sugar and cinnamon. Sprinkle over berry mix. Dot top of cobbler w/ butter.

- Preheat oven to 350 degrees. Grease a 3-quart baking dish.
- In a medium bowl, whisk 1 cup of the sugar with the flour, baking powder, salt and milk. Whisk in melted butter.

QUICK AND EASY BLACKBERRY COBBLER
Quick, easy, and just plain good. The pie crust is perfect contrast to the sweet berry filling. This recipe came from the website of Atty Donald Burger of Houston, Tx. and I adapted it only slightly. He sure knows how to cook!!!!! I've used Splenda with great results instead of the sugar and also have made it with blueberries. If fresh berries are not in season, substitute a 16 0z bag frozen. If you like more berries, add as much as the bowls will hold. UhHuh!

- Rinse fresh berries. In a seperate bowl, combine the sugar, cornstarch, salt, flour and cinnamon. Mix thoroughly. Combine the dry ingredients with the berries, coating the berries well.
- Use one of four single serving cobbler bowls, (2 1/2 inches by 3 3/4 inches in diameter Corningware) or as I do, a deep dish glass pie pan. Spray lightly with cooking oil spray.
- Pour the Blackberries, coated with above mix into cobbler bowls or pie plate. Place the pie crust on top and cut two holes in crust.
- I like to brush the crust with milk or 1/2 and 1/2 and sprinkle with sugar.
- Place bowls or pie plate on cookie sheet and place in oven for 30 minutes at 425 or 45 minutes at 375. Top with ice cream or whipped cream and enjoy with coffee. You're gonna like it!

I have a sweet tooth and memories of picking wild blackberries in the summer so mom could make this. Don't forget the vanilla ice cream on top of the warm cobbler! And ANYONE can do this recipe! It is so simple and if you have the berries and stuff on hand it's a great last minute drop in dinner quest dessert!
