Easy Beef or Venison and Broccoli Stir Fry image

Can be made with beef, venison, or elk. We usually have a lot of deer and elk meat in the freezer so I use that in place of the beef. My husband LOVES it!

3 Tbsp corn starch, divided
1/2 c water plus 2 tbsp water, divided
2 clove garlic, minced
1 lb boneless beef, venison or elk round steak cliced into thin 3 inch strips.
2 Tbsp vegetable oil, divided
4 c broccoli florets
1 small onion, cut into wedges
1/3 c soy sauce
2 Tbsp brown sugar
2 tsp grated fresh ginger or 1 tsp powdered ginger
hot cooked rice
1 pinch red pepper flakes (optional)

Steps:

  • 1. In a bowl, combine 2 T. cornstarch, 2 T. water and garlic until smooth. Add meat and toss to coat.
  • 2. Heat Large skillet or wok over med-high heat, add 1 T. oil to hot pan, swirl to coat then stir fry beef to desired doneness. Remove from pan and keep warm.
  • 3. Place remaining 1 T. oil in pan and stir-fry onion and broccoli for 4-5 minutes, then return beef to pan.
  • 4. Combine soy sauce, brown sugar, ginger, 1/2 c. water, and red pepper flakes. Add to the pan. Cook and stir for 2 minutes.
  • 5. Serve over hot cooked rice.

I clipped this recipe from Taste of Home magazine several years ago and have found it to be the best-tasting easy beef and broccoli stir-fry. It is credited to Ruth Stahl. I often use charcoal chuck steak, which is very tender and lean. I also like that it doesn't call for any unusual ingredients.

3 tablespoons cornstarch, divided
1/2 cup water, plus
2 tablespoons water, divided
1/2 teaspoon garlic powder
1 lb boneless round steak or 1 lb charcoal chuck steak, cut into thin 3-inch strips
2 tablespoons vegetable oil, divided
4 cups broccoli florets
1 small onion, cut into wedges
1/3 cup reduced sodium soy sauce
2 tablespoons brown sugar
1 teaspoon ground ginger
hot cooked rice, for serving
toasted sesame seeds, for serving (optional)

Steps:

  • In a bowl, combine 2 tablespoons cornstarch, 2 tablespoons water and garlic powder until smooth.
  • Add beef and toss.
  • In a large skillet or wok over medium-high heat, stir-fry beef in 1 tablespoon oil until beef reaches desired doneness; remove and keep warm.
  • Stir-fry onion in remaining oil for 4-5 minutes until softened. Add the broccoli and cook for 3 minutes until the broccoli is tender but still crisp. Return beef to pan.
  • Combine soy sauce, brown sugar, ginger and remaining 1 tablespoon cornstarch and 1/2 cup water until smooth; add to the pan.
  • Cook and stir for 2 minutes.
  • Serve over rice and garnish with toasted sesame seeds (optional).

1/4 cup beef stock
3 teaspoons soy sauce
1 teaspoon sesame oil
3 teaspoons orange marmalade
1 teaspoon cornstarch
1 lb venison
2 teaspoons minced ginger
3 teaspoons vegetable oil
1 medium onion
1/2 lb snow peas
1 can cut baby corn

Steps:

  • Combine the broth, soy sauce, sesame oil, marmalade in a bowl.
  • In a small bowl combine cornstarch with a little bit of water.
  • Cut meat across the grain 1/8 inch thick-ya know, thin strips.
  • Heat oil in wok over high heat-when hot add onion-stir fry and add meat-stir fry add remaining veg-stir fry.
  • Add the marmalade mixture, stir, then the cornstarch mixture and cook quickly until thickened.
  • Serve over rice.
  • This can be done with Buffalo, elk or moose.

Beef and Broccoli is a favorite of mine. It's important to take your time, mix well and marinate for the full 3 hours. You wont be sorry!

Number Of Ingredients 11

3/4 lb beef, cut into very thin strips, pencil thin and no longer that 2 inches in length
3 cups broccoli florets, bite sized
2 garlic cloves, minced
2 tablespoons soy sauce (not lite)
2 1/2 tablespoons white sugar
1/2 teaspoon black pepper
1 egg white, beaten until frothy
1 tablespoon cornstarch
2 tablespoons sherry wine
1/4 cup oyster sauce
3 -4 tablespoons vegetable oil

Steps:

  • In a medium mixing bowl add together the beef strips and soy sauce.
  • Mix to be sure all the beef is coated.
  • Add the sugar and pepper, stirring for 3 minutes to be sure each piece is evenly coated and sugar is dissolving.
  • Add the whipped egg white and slowly stir in the cornstarch, again stirring for 3 minutes to make sure the beef is evenly coated.
  • You DO NOT want to see any sugar or cornstarch.
  • Cover and let stand in the fridge for 3 hours, stirring well after 1 and 1/2 hours.
  • Bring a large pot of water to boil.
  • Bring a wok to medium high heat.
  • Par boil the broccoli for 1 minute.
  • Drain in colander in sink.
  • Add 2 T. oil and garlic to wok and quickly"mush" around.
  • Stir fry the broccoli until tender crisp, around 5-6 minutes tops.
  • Remove broccoli to a bowl.
  • Add the remaining oil if needed and stir fry the meat until just under done.
  • Return broccoli to wok and stir.
  • Add the sherry and oyster sauce.
  • Stir fry for 1 minute making sure broccoli and beef is thoroughly coated with sauce.
  • Serve over hot white rice.

1/2 lb beef flank steak, sliced thinly across grain
1 tablespoon light soy sauce
1/8 teaspoon black pepper
1/8 teaspoon sambal oelek (optional)
1/4 teaspoon sesame oil
1 tablespoon cornstarch or 1 tablespoon tapioca starch
1 lb fresh broccoli, broken into florets and then sliced in half
4 tablespoons peanut oil, divided
1/2 teaspoon salt
1/2 cup water
2 garlic cloves, crushed

Steps:

  • In a mixing bowl, mix together soy sauce, pepper, Sambal Oelek, sesame oil and corn starch.
  • Add sliced beef, coat well and let marinate for 15 minutes.
  • In a WOK, heat 2 tablespoons of peanut oil until smoke begins to rise.
  • Add broccoli florets and salt, stir well.
  • Now add 1/2 cup of water, cover with a lid and cook on high heat for 3 - 4 minutes or until steam starts to escape from the edge of the lid.
  • Remove broccoli and any liquid to a bowl.
  • Reheat WOK to high heat, add the remainder 2 tablespoons of peanut oil.
  • When hot, add garlic and brown for 1 minute, stirring often.
  • Add sliced beef and marinade and stir-fry until the color of meat changes, about 1 minute.
  • Return broccoli and liquid to the Wok and mix; stir-fry for 30 seconds.
  • Serve hot.

1 cup Yoshida gourmet sauce
1 lb lean boneless sirloin steak
1 tablespoon cornstarch, dissolved in
2 tablespoons water
1 tablespoon vegetable oil
1 (16 ounce) bag frozen chopped broccoli, thawed

Steps:

  • Slice sirloin into thin slices.
  • Put slices into a zip bag, add 1/2 cup Gourmet Sauce, shake bag to cover all sides of meat; refrigerate for 30 minutes.
  • Combine second 1/2 cup Gourmet Sauce with dissolved cornstarch; set aside.
  • Head oil in a large wok until hot.
  • Add steak and stir fry 3-4 minutes.
  • Add broccoli and stir fry for 2 minutes.
  • Stir in sauce and cornstarch mixture; cook until sauce thickens and boils.
  • Serve over rice.

  • Place the broccoli in a large saucepan with ½ cup of water. Cover and bring to a boil over high heat. Steam the broccoli for 2-3 minutes, until brightly colored. Drain and set aside.
  • Heat 1 tsp of sesame oil in a large wok over high heat. Strain the beef from the marinade and add it to the wok (reserving marinade). Stir fry the beef until cooked through. Remove the beef from the wok.
  • Add 2 tsp oil to the wok and reduce the heat to medium high. Add the garlic and ginger. Sauté for 15 seconds. Add the broccoli and stir fry for 1 minute.

  • Put the sliced venison in a bowl and mix in the ginger, cooking wine, garlic, and 1 1/2 tablespoons of soy sauce. Make sure all the meat has some of this good stuff on it. Now sprinkle over the cornstarch and mix again very well. Let this sit as little as 10 minutes, or as long as an hour or two in the fridge.
  • When you're ready, heat your wok or heavy saute pan over the highest heat on the hottest burner until it's good and hot. Add the lard or peanut oil and the moment it begins to smoke, add in all the venison. Spread the venison out in the pan in one layer if possible, and let it sit for 30 seconds.
  • Now stir fry the venison for 2 minutes, moving the meat constantly. Add all the remaining ingredients except the sesame oil, plus about 3 tablespoons of water. Stir fry 1 to 2 minutes more, until the sauce has thickened a bit.
