Steps:

  • Preheat the over to 350°F (180°C)
  • Cut the baguette in half and place bread cut-side up on a prepared baking sheet.
  • Take your tomato sauce and spread a layer of sauce over each piece of the baguette.
  • Once complete, you can sprinkle mozzarella cheese over each piece.

2 tablespoons olive oil
1 medium red onion, sliced
1 tube (13.8 ounces) refrigerated pizza crust
3/4 cup barbecue sauce
2 cups shredded cooked chicken breast
6 bacon strips, cooked and crumbled
1/4 cup crumbled Gorgonzola cheese
2 jalapeno peppers, seeded and minced
1 teaspoon paprika
1 teaspoon garlic powder
2 cups shredded part-skim mozzarella cheese

Steps:

  • Preheat oven to 425°. In a large skillet, heat oil over medium heat. Add onion; cook and stir 4-6 minutes or until softened. Reduce heat to medium-low; cook 20-25 minutes or until deep golden brown, stirring occasionally., Unroll and press dough onto bottom and 1/2 in. up sides of a greased 15x10x1-in. baking pan. Bake 8 minutes., Spread barbecue sauce over dough; top with chicken, cooked onion, bacon, Gorgonzola cheese and jalapenos. Sprinkle with paprika and garlic powder; top with mozzarella cheese. 1 teaspoon extra-virgin olive oil, plus more for brushing
1/2 pound prepared pizza dough, at room temperature
1/3 cup plus 2 tablespoons dark barbecue sauce
1 8-ounce skinless, boneless chicken breast
Kosher salt and freshly ground pepper
2/3 cup grated smoked gouda cheese (about 3 ounces)
2/3 cup grated part-skim mozzarella cheese (about 3 ounces)
1/2 small red onion, thinly sliced
Fresh cilantro, for topping

Steps:

  • Brush a large bowl with olive oil. Shape the pizza dough into a ball, add it to the bowl and turn to coat with the oil. Cover tightly with plastic wrap and set aside in a warm place, 30 to 40 minutes.
  • Position racks in the upper third and middle of the oven. Place a pizza stone or inverted baking sheet on the top rack and preheat the oven to 425 degrees F for at least 30 minutes.
  • Meanwhile, lay out a sheet of parchment paper and brush with olive oil. Transfer the ball of dough to the parchment and roll it out into a 10-inch round, stretching it with your hands as needed. Lightly brush the dough with olive oil, cover with another piece of parchment and set aside to let rise slightly, about 30 minutes.
  • While the dough rises, mix 2 tablespoons barbecue sauce and 1 teaspoon olive oil in a small bowl. Put the chicken in a baking dish, season with salt and pepper and brush with the barbecue sauce mixture. Bake on the middle oven rack until cooked through, about 20 minutes. Let cool, then cut into 1/2-inch cubes.
  • Uncover the dough and spread with the remaining 1/3 cup barbecue sauce, leaving a 3/4-inch border. Top with the chicken, gouda, mozzarella and red onion. Slide the pizza (on the parchment) onto a pizza peel or another inverted baking sheet, then slide onto the hot stone or baking sheet; bake until the cheese melts and the crust is golden, 20 to 25 minutes. Sprinkle with cilantro.

1/4 cup yellow cornmeal
1 pound pizza dough, homemade or store-bought
1/2 cup plus 2 tablespoons favorite bbq sauce (we love Stubb's)
2 cups leftover shredded rotisserie chicken
1 cup shredded smoked cheddar cheese
1 cup shredded whole milk mozzarella cheese
1/2 cup diced red onion
Kosher salt and freshly ground pepper, to taste
3 tablespoons chopped fresh cilantro leaves

Steps:

  • Preheat oven to 450 degrees F. Lightly coat a baking sheet or pizza pan with olive oil. Working on a surface that has been sprinkled with cornmeal, roll out the pizza into a 12-inch-diameter round. Transfer to prepared baking sheet or pizza pan. Using a small ladle, spread bbq sauce over the surface of the dough in an even layer, leaving a 1/2-inch border. Top with chicken, cheeses and onion; season with salt and pepper, to taste. Place into oven and bake for 20-24 minutes, or until the crust is golden brown and the cheeses have melted. Serve immediately, garnished with cilantro, if desired.

1/3 cup barbecue sauce (I love to use honey barbecue)
1 thin pizza crust, prebaked
3 plum tomatoes, sliced
1 cup monterey jack cheese, shredded
2 tablespoons chopped fresh cilantro

Steps:

  • Preheat oven to 450°F.
  • In a small bowl, mix the shredded chicken and barbecue sauce. Make sure all chicken gets covered in sauce!
  • Place pizza crust on ungreased cookie sheet. Spread chicken mixture over crust.
  • Arrange tomato slice on top of chicken. Sprinkle entire pizza with cheese.
