These banana donuts are easy to make, baked in the oven, not fried, and are dusted with spiced sugar and served warm.

Number Of Ingredients 18

~~ For the Donuts ~~
1 3/4 cups flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1/4 teaspoon baking soda
1/4 teaspoon ground nutmeg
1/4 teaspoon cinnamon
1 cup (about 3 medium sized) bananas, mashed
2 large eggs
1/2 cup sugar
1/4 cup vegetable oil
2 Tablespoons milk
1 teaspoon vanilla
~~For the Spiced Sugar~~
1/4 cup sugar
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon cloves

Steps:

  • Preheat oven to 350 degrees, and spray 2 non-stick six unit doughnut pans.
  • In one bowl whisk together all of the dry donut ingredients, in another bowl whisk together all of the wet ingredients. Pour the wet ingredients into the dry ingredients, and stir together until combined.
  • Spoon batter into prepared pans, filling about 3/4 full.
  • Bake 12-14 minutes, or until toothpick inserted in center comes out clean.
  • While baking prepare spiced sugar.
  • Cool in pan for about 5 minutes, remove and generously dust donuts, both sides, with spiced sugar.
  • Serve warm.

Baked Banana Donuts are soft, sweet, easy to make, and lighter than fried, with your choice of a decadent chocolate glaze or a coating of cinnamon sugar!

1 1/4 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup (1 stick) unsalted butter (softened)
1/2 cup sugar
1 egg (at room temperature)
2 teaspoons pure vanilla extract
1 cup mashed banana (from approximately 2 large or 3 medium overripe bananas)
1/2 cup Greek yogurt OR sour cream (at room temperature)
½ cup sugar
2 teaspoons ground cinnamon
6 tablespoons butter (melted)
3 tablespoons butter (salted or unsalted)
1 1/2 tablespoons light corn syrup
3/4 cup chocolate chips
1/2 teaspoon pure vanilla extract

Steps:

  • Adjust oven racks to center position and preheat oven to 425°F. Spray two 6-cavity donut pans with nonstick cooking spray and set aside.
  • In a large bowl, whisk together flour, baking soda, and salt. In another bowl, use an electric mixer to beat the butter until smooth, and then beat in the sugar until light and fluffy. Blend in the egg, vanilla, mashed bananas, and sour cream until fully incorporated (batter may look curdled at this point...it will smooth out with addition of flour). Gently mix in the dry ingredients until just blended. Evenly divide the batter between the prepared donut pans.
  • Bake for 7 to 9 minutes until the tops of the donuts spring back when lightly touched. Allow donuts to cool for 5 minutes in pans before turning them out onto a cooling rack.
  • FOR THE CINNAMON SUGAR COATING: In a medium bowl, combine the sugar and cinnamon. Place the melted butter in a shallow bowl. Dip one side of each donut in the butter, and then press into the cinnamon sugar. Serve warm or at room temperature.
  • FOR THE CHOCOLATE GLAZE: Place a small saucepan over medium-low heat and melt together the butter and corn syrup. Remove the pot from the heat and add the chocolate chips, stirring until they are smooth and completely melted. Stir in the vanilla. If necessary, transfer to a bowl for dipping (or you can dip the donuts directly into the pot). While the glaze is still warm and thin, dip one face of each donut into the glaze. Place glaze-side-up on a plate or cooling rack. For optimal flavor and texture, serve sooner than later.

1½ cups all-purpose flour
2 Tablespoons granulated sugar
1 teaspoon baking powder
1 teaspoon vanilla
1 pinch of salt
2 large eggs
⅔ cups whole milk
3 Tablespoons olive oil
3 ripe bananas
Enough oil for deep frying I used sunflower oil
Powder sugar to dust the doughnuts

Steps:

  • In a mixing bowl, combine together flour, sugar, baking powder, salt.
  • Separately, combine the eggs, milk, olive oil and vanilla. Beat lightly.
  • Pour the liquid ingredients over the dry ones and mix together.
  • Mash the bananas with a fork and add them to the batter.
  • Heat up oil to a temperature between 360-375F.
  • Using a tablespoon, pour the batter in the oil and let the doughnut cook for about 2 minutes on each side until brown, on medium heat.
  • Remove them from the pan and drain them on paper towels.
  • Tip: Do not crowd the doughnuts in the pan. 3-4 doughnuts should be enough for one batch.
  • Serve them hot or cold dusted in powder sugar.

Cooking spray
1 1/2 cups whole-wheat pastry flour
1 teaspoon baking powder
1/2 teaspoon baking soda
3/4 teaspoon ground cinnamon
1/2 teaspoon salt
1 cup mashed ripe bananas (2 to 3 bananas)
1/2 cup low-fat plain yogurt
1/2 cup vegetable oil
1/2 cup packed light brown sugar
2 large eggs
1 teaspoon vanilla extract
1/2 cup mini semisweet chocolate chips
1 stick unsalted butter, melted
1/3 cup granulated sugar

Steps:

  • Preheat the oven to 425 degrees F. Generously coat a mini doughnut pan with cooking spray. Whisk the flour, baking powder, baking soda, 1/2 teaspoon cinnamon and the salt in a large bowl. Whisk the mashed bananas, yogurt, vegetable oil, brown sugar, eggs and vanilla in a separate bowl. Stir the banana mixture into the flour mixture until just combined; stir in the chocolate chips.
  • Transfer the batter to a large resealable plastic bag and snip off one corner. Pipe the batter into the prepared pan, filling each cup almost all the way. Bake until golden brown, 7 to 8 minutes. Let cool in the pan2 to 3 minutes; remove the doughnuts to a rack to cool completely. Letthe pan cool, then coat with more cooking spray and repeat with the remaining batter.
  • Put the melted butter in a shallow bowl. Mix the granulated sugar and the remaining 1/4 teaspoon cinnamon in another shallow bowl. Dip one side of each doughnut in the butter, letting the excess drip off, then immediately dip it in the cinnamon sugar. Store in an airtight container up to 2 days.
  • You can also make these in a mini muffin pan; bake 8 to 10 minutes.

⅜ cup milk
2 tablespoons shortening
½ cup white sugar
1 egg
½ teaspoon vanilla extract
2 cups sifted all-purpose flour
½ teaspoon baking soda
¼ teaspoon salt
1 quart oil for deep frying
½ cup confectioners' sugar for dusting

Steps:

  • Stir the vinegar into the milk, and let stand for a few minutes until thick.
  • In a medium bowl, cream together the shortening and sugar until smooth. Beat in the egg and vanilla until well blended. Sift together the flour, baking soda, and salt; stir into the sugar mixture alternating with the vinegar and milk. Roll dough out on a floured surface to 1/3 inch thickness. Cut into doughnuts using a donut cutter. Let stand for about 10 minutes.
  • Heat the oil in a large deep skillet to 375 degrees F (190 degrees C). Fry doughnuts in the hot oil until golden, turning over once. Drain on paper towels. Dust with confectioners' sugar while they are still warm, and serve immediately.
