Einat Admony, the chef at Balaboosta, Taïm and Bar Bolonat, came up with a simplified version of baklava that was featured in "Food52 Genius Desserts: 100 Recipes That Will Change the Way You Bake." Instead of stacking individual layers of phyllo dough, Ms. Admony calls for rolling up the nut filling in the phyllo and slicing it into discs as you would cinnamon rolls, then baking and drizzling the slices with syrup. Like traditional baklava, they are shatteringly crisp, gooey and sweet in all the right places, but much less work. Her original recipe calls for raw peanuts, but roasted work just fine.

2 cups/405 grams granulated sugar
1/4 cup/60 milliliters honey
1 (3-inch) strip orange zest, cut with a vegetable peeler
1 cardamom pod
1/4 teaspoon rose water (optional)
6 tablespoons/85 grams unsalted butter, melted
1/4 cup plus 2 tablespoons/90 milliliters neutral oil (such as grapeseed)
8 ounces/225 grams raw or roasted peanuts
8 ounces/225 grams raw pistachios
8 ounces/225 grams raw walnuts
1/2 cup/60 grams confectioners' sugar
1 teaspoon rose water (optional)
1/8 teaspoon ground cardamom (preferably freshly ground from the seeds of about 2 pods)
1/2 teaspoon ground cinnamon
1 (1-pound/454-gram) package frozen phyllo dough, thawed completely

Steps:

  • Make the syrup: Combine sugar, 1 cup water, honey, orange zest and cardamom in a saucepan. Simmer over low heat, stirring until sugar dissolves, about 10 minutes.
  • Remove from the heat and stir in the rose water, if using. Let cool, then pour the syrup into an airtight container and refrigerate until chilled, or up to 1 day in advance.
  • Make the baklava: Heat the oven to 350 degrees, with a rack in the center. Line a baking sheet with parchment paper. Stir together melted butter and oil in a bowl, and set near where you'll be rolling the baklava.
  • In a food processor, pulse the peanuts, pistachios, walnuts, confectioners' sugar, rose water, cardamom and cinnamon until the nuts are very finely chopped and the mixture is almost pasty.
  • Lay 3 sheets of phyllo dough stacked on top of one another on the counter or cutting board with one of the short sides closest to you. Cover the unused sheets of phyllo with a damp kitchen towel as you work, or they'll dry out.
  • Very generously brush the top layer of phyllo dough with about 2 1/2 tablespoons of the butter mixture. Spread a fifth (about 1 1/4 cups/145 grams) of the nut mixture on the bottom third of the phyllo dough and pack it down. Roll the 3 phyllo sheets together away from you to form a compact log. Keep the seam side down as you work on more rolls. Repeat with the remaining phyllo dough and nut mixture to form 4 more rolls. Place the rolls on the baking sheet and freeze for 10 minutes to make them easier to slice.
  • Remove from the freezer and, using a serrated knife, cut the rolls evenly into about 1-inch slices. Arrange the slices, cut sides up and well spaced apart, on the same baking sheet and bake until golden brown, about 30 minutes, rotating the baking sheet halfway through baking.
  • Remove from the oven. While still warm, carefully transfer the baklava and arrange snugly, cut side up, in a large serving dish (a 9-by-13-will fit most, but not all the rolls). Discard the orange zest and cardamom pod from the chilled rose syrup and pour the syrup all over the baklava. Let baklava cool completely before serving. Store in an airtight container at room temperature, refrigerate for up to 1 week, or freeze for up to 1 month.

15 mini phyllo cups
1 cup pistachios (raw, chopped)
2 tsp lemon juice (or agave nectar)
1/2 tsp cinnamon (optional)
2 tbsp butter (or coconut oil)
1/4 cup water
2 tsp lemon juice
1/4 cup honey (or agave nectar)

Steps:

  • Combine water, lemon juice and honey in a saucepan. Bring to a boil, stir so the honey can dissolve. Cook for 2 minutes. Turn off the heat. Let the syrup cool to room temperature.
  • Preheat oven to 325 F. Arrange the mini cups on a baking sheet.
  • In a small bowl, combine nuts, lemon juice, butter and cinnamon. Stir to combine.
  • Divide mixture between the phyllo cups. Bake for 8-10 minutes, keeping an eye on them, so they don't burn.
  • Take out of the oven, and add about 1 tbsp of the room temperature syrup to each phyllo cup. Add more syrup if they appear too dry.
  • Let the cups cool and top with coconut flakes, melted chocolate, cacao nibs or hemp seeds. Serve immediately or refrigerate for up to 1 week.

Steps:

  • Preheat oven to 350°. Butter a 9 x 13 inch baking dish. Toss together cinnamon and nuts. Unroll phyllo and cut whole stack in half to fit the dish. Cover phyllo with a damp cloth while assembling the baklava, to keep it from drying out.
  • Place two sheets of phyllo in the bottom of the prepared dish. Brush generously with butter. Sprinkle 2 to 3 tablespoons of the nut mixture on top. Repeat layers until all ingredients are used, ending with about 6 sheets of phyllo. Using a sharp knife, cut baklava (all the way through to the bottom of the dish) into four long rows, then (nine times) diagonally to make 36 diamond shapes.
  • Bake in preheated oven 50 minutes, until golden and crisp. While baklava is baking, combine sugar and water in a small saucepan over medium heat and bring to a boil. Stir in honey, vanilla and lemon zest, reduce heat and simmer 20 minutes. Remove the baklava from the oven and immediately spoon the syrup over it. Let cool completely before serving. This recipe was given to me years ago by a friend who was known as the "go to person" for desserts at work. It does takes some short cuts & purists may not like that. But it sure does taste good & it is SO much easier than traditional baklava. I prefer this recipe to the ones with honey.

1 box phyllo dough, thawed
1 cup butter, melted
1 cup sugar
1/2 cup water
1 teaspoon lemon juice
1 cup finely chopped walnuts

Steps:

  • Place 1 cup sugar, water,& lemon juice in a pan& bring to boil.
  • Simmer for 5 minutes, stirring occasionally.
  • Cool.
  • Lay out phyllo dough, cut in half& trim to fit a 9 by 13" pan.
  • Place 1/2 of dough in pan.
  • Combine filling ingredients, and spread over phyllo dough.
  • Cover with 2nd half of dough.
  • With a serrated knife, cut into triangles.
  • Drizzle evenly with melted butter.
  • Bake at 350 degrees for appproximately 30 minutes, till golden brown.
  • Remove from oven& pour cooled syrup over hot baklava.

5 sheets phyllo dough*
1 tablespoon butter
1/2 cup walnuts
1/2 cup pistachios
1 tablespoon butter
3 tablespoons honey, plus more for serving

Pinch of kosher salt
12 phyllo cups (above, or purchased)

Steps:

  • Preheat the oven to 375°F. Melt the tablespoon butter. On a clean workspace, place 1 phyllo sheet, taking care to handle it delicately. Using a pastry brush, gently brush the top with butter. Carefully place the next sheet on top of the first sheet (as exact as possible), smooth it out, and brush the top with butter. Repeat for all 5 sheets, brushing the top sheet with butter as well.
  • With a pizza cutter, cut the large piece of layered phyllo dough into 12 rectangles by cutting the long side into 4 even strips and the short side into 3 even strips (trim off rough edges if necessary).
  • Take each rectangle and mold it into the cup of a mini muffin tin. Bake for 10 minutes, until golden. Remove from the oven and let cool slightly.
  • Chop the walnuts and the pistachios. Melt the butter. In a medium bowl, stir together the chopped nuts, melted butter, honey, cinnamon and a pinch of kosher salt until evenly combined. Place the nut filling evenly into each cup.
  • Bake the cups for 10 minutes, or until the nuts are fragrant and lightly toasted. Remove and drizzle with extra honey before serving. Serve immediately.

1/2 cup pistachios
1/4 cup pecans
1/4 cup almonds
1 whole lemon (zest ONLY)

1 tablespoon butter (melted)
1 pinch salt
1/2 teaspoon vanilla
1/4 cup honey
1 tablespoon hot tap water

Steps:

  • Preheat the oven to 350°. Place the phyllo cups on a parchment paper lined baking sheet then set aside.
  • Finely chop the nuts by hand or pulse in the food processor (you want a 'rustic chop' - not completely ground) then transfer the nuts to a medium size bowl.
  • Stir in the lemon zest, sugar, cinnamon, melted butter, a small pinch of salt and the vanilla then set aside.
  • In a small bowl, blend the honey and hot tap water. Reserve 2 tablespoons of the honey-water then pour the remaining over the nuts and stir to combine well.
  • Fill the phyllo cups with about 1 tablespoon of the nut mixture each dividing it equally then bake for 8-10 minutes or until the nuts are lightly toasted.
  • Remove the Baklava Cups from the oven then drizzle the reserved honey over the top of the cups. Cool completely then store in an airtight container.

I made the most wonderful Baklava on ethnic night in gourmet class. I hadn't made it in a while and started craving it when I saw this little shortcut in a magazine at the doctor's office. (The best part about the wait is scanning the magazine rack!) Also, if you want to get even more fancy and creative, top with a dollop of Nutella or chocolate fudge, or even an chocolate mint bar.

1/2 cup almonds
1/2 cup walnuts
1/4 cup chopped dried apricots
1/4 cup plain bread crumbs
2 tablespoons sugar
1 1/2 teaspoons ground cinnamon
1/4 teaspoon ground cloves
Pinch of salt
1 stick butter, melted, divided
3 tablespoons honey
12 sheets phyllo dough

Steps:

  • Special equipment: 2 mini-muffin tins
  • Preheat the oven to 350 degrees F.
  • Place the almonds, walnuts, apricots, bread crumbs, sugar, cinnamon, ground cloves, and salt in a food processor. Run the machine until the mixture is very finely chopped. Transfer the mixture to a small bowl. Add 2 tablespoons of the melted butter and the honey and stir to combine.
  • On a dry work surface place 1 sheet of phyllo. Using a pastry brush and the remaining melted butter, lightly cover the entire sheet of phyllo with melted butter. Cover the first sheet with a second sheet of phyllo and brush with melted butter. Continue until there is a stack of 6 sheets of phyllo. Cut the stacked phyllo rectangle into 12 equal pieces (Cut lengthwise into 4 pieces and widthwise into 3 pieces.)
  • Gently press each cut piece of phyllo into the mini-muffin tin cups. Press 1 tablespoon of the nut mixture into each of the phyllo cups. Gather the ends of each of the phyllo squares and twist to make a sachet shape. Continue shaping the remaining sachets in the other mini-muffin tin. Bake until the edges of the phyllo are golden, about 20 to 25 minutes. When cool enough to handle, remove the baklava sachets and transfer to a serving plate.

In college I worked for a Greek man & was absolutely addicted to the baklava he made. I asked him for his recipe & was determined to learn how to make it & make it easier...this is what I came up with & I am finally putting it somewhere I can find it. SO YUMMY!

5 teaspoons cinnamon
3 teaspoons ground cloves
3 cups walnuts, coarsly chopped
1 lb sweet unsalted butter, melted
1 lb phyllo pastry sheet
1 cup sugar
1/3 cup water
orange peel, 3-inch strip
lemon peel, 3-inch strip
1 cinnamon stick
1/3 cup honey
1/2 lemon, juiced

Steps:

  • Preheat oven to 350 degrees.
  • In a medium bowl, mix the cinnamon, clove & walnuts together. Set aside.
  • Brush the bottom of a 12x20 baking dish with butter.
  • Place one pastry sheet in the dish & brush it with butter. Repeat this process so that 6 pastry sheets line the bottom of the dish.
  • TIP: I pour my lukewarm butter in a spray bottle & mist the butter over the phyllo sheets. It prevents tearing & goes by so much quicker! Make sure you buy a misting bottle, not one that just streams -- it will make a big mess!
  • Sprinkle 1/3 of the nut mixture over top of the pastry sheets. Repeat this process so there are 3 layers of the nut mixture & 4 layers of the 6 buttered pastry sheets.
  • Cut the baklava into diamond shapes (making parallel horizontal lines in the dish & making diagonal lines vertically in the dish).
  • Bake baklava for 40 minutes or until golden brown.
  • While cooking, heat the sugar, water, orange peel, lemon peel & cinnamon stick to a boil & then simmer for 5 minutes.
  • Add honey and bring mixture to a boil.
  • Remove pan from heat and add lemon juice.
  • Stir together and set aside to cool.
  • Remove lemon peel, orange peel and cinnamon stick.
  • Spread the cooled syrup evenly over the hot baklava.
  • Cover with a dish towel and let sit for one hour before serving.

2 boxes mini filo shells, 15 shells each
1/2 cup water 1/4 cup honey
Special equipment: 2 (12-cup) mini cupcake pans, food processor

Steps:

  • Preheat oven to 350 degrees F.
  • Arrange the pistachios, walnuts, and almonds on a baking sheet and toast in the oven until golden and fragrant, about 8 minutes. Let nuts cool slightly and add to a food processor along with the lemon zest, 3 tablespoons of sugar, butter, cinnamon, salt, and vanilla and pulse to combine.
  • Place mini fillo shells in wells of 2 mini cupcake pans. Add 1 teaspoon of the nut mixture into each shell. Bake until filling is hot, about 10 minutes.
  • Meanwhile, in a small saucepan over medium heat add the water, 1/4 cup sugar and honey and bring to a boil. Reduce heat to a simmer and cook until reduced and slightly thickened, 8 to 10 minutes. Pour 1 teaspoon syrup into each cup and allow it to soak in, then repeat with another teaspoon. Refrigerate at least 5 hours, or overnight.

1 Tbsp lemon juice (from 1/2 small lemon)
1/3 cup water
1/4 cup honey
30 shells (2 boxes, 15 count each) Athens® Mini Fillo Shells
2 cups nuts (we used 1 1/2 cups walnuts + 1/2 cup salted pistachios)
1/2 tsp cinnamon
3 Tbsp unsalted butter (melted)
1/4 cup chocolate chips ( melted to drizzle for garnish (optional))

Steps:

  • Preheat Oven to 350˚F. In a small saucepan, combine syrup ingredients: 1/2 cup sugar, 1 Tbsp lemon juice, 1/3 cup water and 1/4 cup honey. Bring to a boil over med/high heat, stirring until sugar dissolves then reduce heat and keep at a light boil for 4 min without stirring. Remove syrup from heat and let cool at room temperature while prepping baklava cups.
  • In a food processor, pulse together 2 cups nuts to coarsely chop. Transfer to medium mixing bowl and stir in 1/2 tsp cinnamon. Add 3 Tbsp melted butter and stir to combine.
  • Arrange 30 mini phyllo cups on rimmed baking sheet and divide nut mixture between the cups (about 2 tsp per cup), patting down the tops with your fingers. Bake 10 min at 350˚F.
  • Once out of the oven, immediately spoon cooled syrup over nuts, adding 1 tsp to each one to let the syrup soak in then repeat with another 1/2 teaspoon of syrup until all syrup is used up. Let rest at room temperature for 6 hrs or overnight for flavors to meld and cups to soften. Serve as is or drizzled with chocolate.

Bite-sized crisp phyllo pastry cups are filled with sticky spiced baklava syrup and pistachios with a hint of lemon-irresistible.

2 to 3 sheets of store-bought phyllo pastry dough, thawed
1 tablespoon olive oil, to brush the pastry
4 ounces shelled pistachios
1 teaspoon ground cinnamon
1/4 cup plus 1 tablespoon agave
4 ounces light brown sugar
1 tablespoon fresh lemon juice
1 lemon, zested

Steps:

  • Preheat the oven to 350 degrees F (180 degrees C).
  • Cut the phyllo sheets into forty-eight 2-inch squares. Take one phyllo square and brush with the oil. Lay a second square on top at a 45-degree angle and brush again with the oil.
  • Fit it into one cup of a 24-cup mini muffin tin. Repeat to fill the remaining mini muffin cups.
  • Blitz the pistachios and cinnamon in a food processor until finely chopped. Spoon equal amounts into each prepared pastry cup.
  • Bake for about 8 minutes until the pastry is crisp and golden.
  • To make the syrup, gently simmer the agave, sugar and lemon juice in a medium or small saucepan over high heat until it coats the back of the wooden spoon, about 3 minutes.
  • Once the phyllo cups are out of the oven, spoon equal amounts of syrup into each phyllo cup.
  • Grate over a little lemon zest to garnish. Let cool slightly before serving.

Fabulous little dessert that takes just minutes to prepare using pre made phyllo cups. Saw this recipe on Sunny Andersons Cooking for Real, tried it that night and it will go into my rotation of desserts that I actually make. Simple, delicious and super easy, what more can you ask for!

1/2 cup pistachios (I used more pistachios, less other nuts)
1/2 cup walnuts (I used pecans instead of both walnuts and almonds)
1/2 cup almonds
1 lemon, zested
1/4 cup plus 3 tablespoons sugar
2 tablespoons butter, melted
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/4 teaspoon vanilla extract
2 (15 count) boxes miniature phyllo cups
1/2 cup water
1/4 cup honey

Steps:

  • Special equipment: 2 (12-cup) mini cupcake pans, food processor.
  • Preheat oven to 350 degrees F.
  • Place pistachios, walnuts and almonds on a baking sheet and toast in oven until golden and fragrant, about 8 minutes.
  • Let nuts cool slightly and add to a food processor along with the lemon zest, 3 tablespoons of sugar, butter, cinnamon, salt, and vanilla and pulse to combine.
  • Place mini phyllo shells in wells of 2 mini cupcake pans.
  • Add 1 teaspoon of the nut mixture into each shell.
  • Bake until filling is hot, about 10 minutes.
  • Meanwhile, in a small saucepan over medium heat add the water, 1/4 cup sugar and honey and bring to a boil. Reduce heat to a simmer and cook until reduced and slightly thickened, 8 to 10 minutes.
  • Pour 1 teaspoon syrup into each cup and allow it to soak in, then repeat with another teaspoon.
  • Refrigerate at least 5 hours, or overnight. (I only managed to refrigerate for about 20 minutes and then they all just disappeared!).

  • Make the baklava in a greased with oil oven dish with a diameter of 12″ (30 cm). Take 5 sheets of the phyllo pastry, put them on the bottom of the oven dish and fold the edges, sprinkle with some of the walnuts and 2 tablespoons of the semolina .
  • Top with another 5 phyllo pastry sheets, walnuts and semolina again and repeat. Distribute walnuts, phyllo pastry sheets and semolina for at least three layers. Melt the butter , cut the baklava into diamonds and then pour the hot butter over it.
  • Preheat the oven to 338°F (170 °C) and place the baklava to bake for about 50 minutes or until golden-brown. Remove it from the oven and pour on the cold syrup.
