This is an easy, no-mess, no-cleanup recipe that tastes delicious! If I don't feel like scrubbing a lot of pans after dinner, I just throw this in the oven next to some rice and vegetables, or just throw it over some lettuce and tomatoes for a nice salad, and my husband thinks I was cooking for hours! People will think you put a ton of effort into this fancy entree.

½ pound boneless salmon fillet
1 tablespoon olive oil
1 tablespoon balsamic vinegar
1 tablespoon lemon pepper seasoning
1 teaspoon lemon juice
¼ teaspoon salt

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Lay salmon fillet skin-side down on a wide piece of aluminum foil.
  • Drizzle olive oil and balsamic vinegar over salmon. Sprinkle lemon pepper, lemon juice, and salt on top. Fold foil up and over the fillet, tenting it at the top. Roll top down to seal salmon in foil. Transfer to a baking sheet.
  • Bake in the preheated oven until salmon flakes easily with a fork, about 15 minutes.

Steps:

  • Place salmon in a large resealable plastic bag; add salad dressing. Seal bag and turn to coat; refrigerate for at least 2 hours., Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. 3/4 cup pitted green olives
3 small red onions, cut into wedges
3 red bell peppers, seeded and cut into thick slices

Steps:

4 cups mixed salad greens (red leaf and herbs & spring greens salad mix)
1 -2 ounce parmesan cheese, shaved
1 -2 tablespoon sliced almonds (suggest Almond Accents brand Italian Parmesan flavored)
1 tablespoon extra virgin olive oil (I use Mt. Kofinas brand Mediterranean Blend infused Cretan olive oil)
1/4 cup caesar salad dressing (I highly recommend Cindy's Kitchen Roasted Garlic Caesar if you can find it)
1/4 teaspoon kosher salt (to taste)
1/2 teaspoon fresh ground black pepper (to taste)

Steps:

  • Preheat broiler to 425 deg F.
  • Place filet on non-stick foil in a shallow baking pan.
  • Drizzle fillet with the oilve oil; use your fingers or a brush to spread until coated.
  • Sprinkle with salt & freshly ground black pepper to taste.
  • Broil on top rack for 5-10 minutes, to desired doneness.
  • Meanwhile, chop leaf lettuce and soak together with spring mix in cold water in bowl; drain and spin dry.
  • Toss lettuce with Caesar dressing.

The base of this fully loaded Caesar salad is an easy dressing made with pantry staples. Then we amp up the flavor by grilling all the components, adding a delicate smokiness. If you've never used cedar planks for salmon, here is your chance. We're pretty sure you'll never go back to the hassle of fish sticking to the grill grates again.

1/2 cup mayonnaise
1 tablespoon Worcestershire sauce
2 teaspoons anchovy paste
2 teaspoons Dijon mustard
1 clove garlic, grated
Juice of 1 lemon
Kosher salt and freshly ground black pepper
Vegetable oil, for the cedar planks
Four 6-ounce center-cut skin-on salmon fillets
1/2 cup freshly grated Parmesan plus a piece for shaving
4 thick slices country bread
2 hearts romaine lettuce, halved lengthwise
One 12-ounce container on-the-vine cherry tomatoes
2 avocados, halved and pitted
1/2 cup fresh parsley leaves, chopped

Steps:

  • Soak two 5 1/2-by-11-inch cedar planks in water in a large bowl for 30 minutes before grilling to avoid burning.
  • Prepare a grill for medium indirect heat (for a gas grill, leave one or two burners on low or off; for a charcoal grill, bank the coals on one side of grill).
  • Whisk together the mayonnaise, Worcestershire sauce, anchovy paste, mustard, garlic, lemon juice, 1/2 teaspoon salt and several grinds of pepper in a medium bowl. Remove 2 tablespoons to a small bowl; cover and refrigerate the remaining dressing.
  • Pat the cedar planks dry with a paper towel and rub each side lightly with vegetable oil to coat. Put 2 salmon fillets on each plank and brush evenly with the 2 tablespoons dressing. Sprinkle with the Parmesan and a generous amount of salt and pepper.
  • Put the cedar planks over indirect heat, cover the grill and grill until the salmon is cooked through and the cheese is melted, about 8 minutes depending on the thickness of your salmon. Transfer the cedar planks with the salmon to a baking sheet using tongs. Set aside.
  • Put the bread, lettuce, tomatoes stem-side up and avocados cut-side down over direct heat. Grill, flipping the bread and lettuce once, until lightly charred, 5 to 7 minutes; transfer the ingredients to a large platter as done.
  • Transfer the fish to the platter with a spatula. Drizzle everything with the reserved dressing and sprinkle with the parsley. Shave some Parmesan over the top with a vegetable peeler.

1 pound salmon fillet (preferably wild), skin removed
1/4 cup mayonnaise
1 tablespoon seafood seasoning, such as Old Bay
3 tablespoons fresh lemon juice
2 teaspoons Dijon mustard
1 teaspoon Worcestershire sauce
2 cloves garlic
Kosher salt and freshly ground pepper
1/4 cup extra-virgin olive oil
12 1/2-inch-thick slices baguette
2 small romaine lettuce hearts, roughly chopped
4 ounces sugar snap peas, sliced on an angle (about 1 cup)

Steps:

  • Preheat a grill to medium high. Cut the salmon into 1 1/2- to 2-inch pieces (about 16 total). Gently toss the fish in a large bowl with 1 tablespoon mayonnaise to coat. Sprinkle with the seafood seasoning and toss to coat. Set aside.
  • Make the dressing: Combine the remaining 3 tablespoons mayonnaise, the lemon juice, mustard, Worcestershire sauce, 1 clove garlic, 1/2 teaspoon salt and a few grinds of pepper in a mini food processor or blender and process until the garlic is blended. With the machine running, add 3 tablespoons olive oil in a slow stream to make a smooth dressing. Refrigerate until ready to use. Lightly brush the bread with the remaining 1 tablespoon olive oil and season with a pinch each of salt and pepper.
  • Grill the salmon, turning, until lightly charred on both sides and just cooked through, 3 to 7 minutes, depending on the thickness of the fish (turn the fish only when it releases easily from the grill so it doesn't break apart). Grill the bread slices, flipping once, until marked and lightly toasted, about 1 minute. Rub the warm bread with the remaining garlic clove.
  • Combine all but 2 tablespoons of the dressing with the romaine and snap peas in a large bowl and toss well. Divide among shallow bowls and top with the salmon pieces and remaining dressing. Serve with the grilled baguette.

6 ounces haricots verts beans
One 1-pound salmon fillet, skinned
1 tablespoon olive oil
1 lemon, zested and juiced
3/4 cup good-quality bottled Caesar dressing
1 tablespoon chopped capers
1 tablespoon minced fresh parsley plus parsley leaves, for garnish
1 teaspoon finely chopped fresh chives
4 hearts romaine lettuce, halved and cored
4 hard-boiled eggs, cooled, peeled and halved
2 cups cherry tomatoes, halved lengthways
1/4 cup pitted olives
1/2 cup grated Parmesan

Steps:

  • Boil the potatoes in a pot of salted water until tender, about 10 minutes, then halve and set aside to cool.
  • Cook the haricots verts in a small pot of boiling salted water for 2 minutes, then remove and plunge into ice water. Drain and pat dry. Set aside.
  • Preheat the oven to 425 degrees F and line a baking sheet with foil.
  • Put the salmon on the prepared baking sheet, skin-side down. Brush with the olive oil and sprinkle with 1 teaspoon salt and 1/2 teaspoon pepper. Bake until cooked through, about 10 minutes.
  • Squeeze the juice of the lemon over the salmon and set aside to cool slightly, then flake into large chunks with a fork.
  • Make the dressing: Add the Caesar dressing to a small bowl, then add the capers, minced parsley, chives and lemon zest. Mix together and set aside.
  • Arrange the halved romaine lettuces on a large platter. Group the green beans, eggs, potatoes, tomatoes, olives and salmon on top and around the lettuces.
  • Drizzle over some of the dressing. Garnish with the Parmesan and parsley leaves.

Easy 5-Ingredient Roasted Salmon image

Moist and tender salmon with a slightly sweet and salty crust-it's the perfect bite! This recipe is easy and a nice choice to serve for guests who aren't used to eating salmon. Garnish with lemon slices and fresh parsley and serve alongside rice pilaf or roasted sweet potatoes.

nonstick cooking spray
2 tablespoons butter, softened, or more to taste
1 ½ tablespoons molasses
1 (2.5 pound) salmon fillet
1 tablespoon Greek seasoning (such as Cavender's®)
1 medium lemon, juiced, divided

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Line a rimmed baking sheet with foil and spray with nonstick spray.
  • Stir butter and molasses together in a small bowl.
  • Lay salmon, skin-side down, on the prepared baking sheet. Spread butter mixture evenly over the salmon. Sprinkle with Greek seasoning and drizzle with ½ of the lemon juice.
  • Roast in the preheated oven until salmon flakes easily with a fork, 17 to 20 minutes.
  • Sprinkle with remaining lemon juice and serve.
