CHEF JOHN'S EASY APPLE PIE
Not your traditional apple pie, this filling is caramelized apples held together with a very glossy, just-thick-enough apple syrup.

Steps:
- Preheat oven to 425 degrees F (220 degrees C).
- Melt butter in saucepan over medium heat. Stir in white sugar, brown sugar, salt, cinnamon, and water. Bring the syrup to a boil, stirring constantly to dissolve sugar, then remove from heat.
- Unroll pie crusts, press one into a 9-inch pie dish, and place the apples into the crust. Unroll the second crust on a work surface, and cut into about 8 1-inch wide strips. Criss-cross the strips over the apples, or weave into a lattice crust. Crimp the bottom crust over the lattice strips with your fingers. Spoon caramel sauce over pie, covering lattice portion of top crust; let remaining sauce drizzle through the crust.
- Bake in preheated oven for 15 minutes. Reduce heat to 350 degrees F (175 degrees C), and bake until the crust is golden brown, the caramel on the top crust is set, and the apple filling is bubbling, 35 to 40 more minutes. Allow to cool completely before slicing.

EASY DUTCH APPLE PIE
The first apple pie I ever made; easy and simple directions. And real apples, no canned apple pie filling! I made this for dessert when company was over and I figured if I screwed up, I could always pass it off as apple cobbler with ice cream served over it, but it came out great, looked and tasted like a real apple pie!

- Combine flour, brown sugar, butter/margarine and oats; set aside 1 cup for the topping.
- Press remaining crumb mixture into an ungreased 9 inch pie plate; set aside.
- For the pie filling: combine sugar, cornstarch and water in a saucepan until smooth, bring to a boil.
- Cook and stir for 1 minute or until thickened.
- Remove from heat and stir in apples and vanilla.
- Pour filling mixture into crust and top with the 1 cup crumb mixture.
- Bake at 350 degrees for 45 minutes or until crust is golden brown.

This is my mother's apple pie. This is the recipe I use all the time and I love it. I also use a dash of nutmeg so if you wish you can put that in too.

- Prepare your pastry for a two crust pie. Wipe, quarter, core, peel, and slice apples; measure to 6 cups.
- Combine sugar and cinnamon. The amount of sugar used depends on how tart your apples are.
- Arrange apples in layers in pastry lined pie plate. Sprinkle each layer with sugar and cinnamon. Dot top layer with small pieces of butter or margarine. Cover with top crust.
- Place on lowest rack in oven preheated to 450 degrees F (230 degrees C). Bake for 10 minutes, then reduce oven temperature to 350 degrees F (175 degrees C). Bake for 30 to 35 minutes longer. Serve warm or cold.

- Heat oven to 350 degrees. In a large bowl, whisk together flour, baking soda and salt.
- In a mixer bowl fitted with the paddle attachment, cream butter, sugar, vanilla, cinnamon and nutmeg. Add the egg and mix until smooth.

- In a deep bowl, add flour, salt, butter, one egg yolk and brown sugar. Mix everything together, as much as you can, and then knead the dough. It's more like squeezing than kneading. If it is too small, roll it a few more times to get the crust that will correspond to your 9 inch pan.
- Bake the bottom crust for 10 minutes. Meanwhile, roll the second half of the dough. Add chopped apples, sugar and cinnamon and cover the pie with the second half of the dough. Make eight cuts on the top dough, like pizza slices. This is a very important step as it will prevent your pie crust to turn out soggy. Beat the egg white with some tap water and brush the top pie crust. Bake for one hour at 180 degrees Celsius or 350 F. Leave it to rest for about 30 minutes.
