Simple Arugula Salad with Avocado image

This fresh arugula salad packs great flavor in each bite.

5 oz baby arugula
1 to 2 vine ripe tomatoes, cut into wedges
½ English cucumber (or 1 slicing cucumber peeled), halved lengthwise, then sliced
1 shallot, sliced
1 avocado, pitted and sliced
1/4 cup extra virgin olive oil (I used Private Reserve Greek extra virgin olive oil)
Zest and juice of 1 large lemon
1 to 2 garlic cloves, minced
1 tsp dry oregano
Kosher salt (I use Diamond Crystal)
Black pepper

Steps:

  • In a large mixing bowl, add the olive oil, lemon zest and juice, garlic, oregano, kosher salt and pepper. Whisk to combine
  • To the same bowl, add arugula, tomatoes, cucumbers, shallots and sliced avocado. Toss to combine. Taste and adjust seasoning to your liking.
  • Transfer the salad to a serving platter. Serve immediately.

2 cups beets (peeled and cubed)
3 tablespoons walnuts (chopped)
3/4 cup tofu (cubed)
1 cup baby arugula leaves
2 tablespoons balsamic vinegar
2 tablespoons maple syrup
1/2 teaspoon red chili flakes
1 tablespoon olive oil (extra virgin)
salt (to taste)
black pepper (to taste)

Steps:

  • Scrub and peel the beets and cut into 1 inch cubes.
  • Heat a pan with few drops of oil or cooking spray. Place the beet cubes and also chopped walnuts as single layer.
  • Roast in low flame until walnuts turn golden and beets are well roasted and caramelized. Walnuts will get l get roasted first, remove them as they get roasted.
  • Now once the beets are well roasted and caramelized remove the roast beets to a plate.
  • In the same oil toast the tofu cubes until golden and crispy. Remove to a plate.
  • While the beets are getting cooked, rinse a handful of baby arugula leaves and spin dry or set aside few minutes. Make sure there is no moisture in the greens before adding to the salad. Roughly chop them if preferred. Place the cooked beets, roasted tofu, roughly chopped arugula leaves and walnuts in a salad bowl.
  • In another small mixing bowl mix the ingredients for dressing and whisk well.
  • Toss the dressing into the salad ingredients. Mix well.
  • Serve arugula beet salad immediately. You can add a dash of black pepper while serving.

Steps:

  • Preheat oven to 350 degrees F; on a rimmed baking sheet, toast pecans, tossing once, until fragrant, 4 to 5 minutes.

  • In a serving bowl, toss together arugula, sliced peach, and cheddar.

4 medium carrots
1 pint cherry tomatoes (halved)
1/3 cup large Parmesan cheese shavings
3 tablespoons chopped sunflower seeds or chopped nuts of choice-toasted and chopped walnuts
1 tablespoon chopped mild fresh herbs of choice (such as chives, parsley, or tarragon (optional))
2 tablespoons freshly squeezed lemon juice (about 1/2 medium lemon)
1 tablespoon balsamic vinegar
2 tablespoons extra-virgin olive oil
1/2 teaspoon kosher salt

Steps:

  • Place the arugula, carrots, and tomatoes in a large bowl.

1- 12 oz box of pasta cooked al dent
1/2 cup of cilantro chopped
1/2 cup of parsley chopped
2 green pepper chopped into small cubes
1/4 of a red onion chopped
2 stocks of celery
1 red pepper chopped into small cubes
1 cup of cherry tomatoes halved
1 cup of cheddar cheese cubed (about 4 oz)
4 cups of arugula washed and dried (about 4 large handfuls)
Salt and Pepper if desired
1/2 cup of mayo (or vegan mayo)
1/4 cup of olive oil
2 tablespoons of apple cider vinegar
1 teaspoon garlic powder.

Steps:

  • Cook the pasta to al dente per the directions on the box. Drain and cool.
  • Wash and chop the cilantro and the parsley very fine.
  • Chop into small bite-size peppers, onions, and celery. (I use the Valdivia Chopper to make a uniform size)
  • Cut the cherry tomatoes in half and cube the cheddar cheese.
  • Next, make the dressing, mix together the mayo, olive oil, apple cider vinegar, and garlic powder. Whisk until smooth.
  • In a large bowl, larger than your serving bowl, combine the cooked pasta, the chopped cilantro, parsley, peppers, onions, celery, cherry tomatoes, and cheddar cheese. Toss.
  • Add the creamy dressing and toss to coat. Then add the arugula and toss again.
