EASY ARMENIAN STYLE PITA SANDWICHES
Don't remember where this one came from, but I've been making these for years. Very refreshing and tasty, great for a hot summer dinner with salad on the side. When it's really hot, I like these with cold, fresh tomato slices stuffed inside.

Steps:
- Fry ground beef or ground Bison in 10-12 inch skillet over medium heat, breaking up until it is fine and no pink remains. Drain off any excess grease and return to skillet.
- Add onion soup packet and water. Stir to distribute evenly. Reduce heat to low and simmer covered until onion is tender, about 15-20 minutes and replacing the cover when done stirring.
- Turn off heat. Stir in yogurt. Let sit 5-10 minutes until heated through - do NOT allow to boil - remove from heat, if necessary.
- Stir in mint, cover and let sit for 3-5 more minutes.
- Spoon into pita bread halves and serve. Add sliced tomato if desired.

These chicken souvlaki pitas are a favorite at our house, especially in summer. With just a few ingredients and a grill, we can enjoy a gourmet-style Greek dinner that's a snap to put together. - Cut 3 lemons crosswise in half; squeeze juice from lemons. Transfer to a large bowl or shallow dish. Whisk in oil, garlic, oregano, salt and pepper. Add chicken; turn to coat. Refrigerate 1 hour. , Drain chicken, discarding marinade. Thinly slice remaining lemon. On 6 metal or soaked wooden skewers, alternately thread chicken and lemon slices. Grill kabobs, covered, over medium heat or broil 4 in. from heat until chicken is no longer pink, turning occasionally. Remove chicken from kabobs; discard lemon slices. Serve chicken in pita pockets with tzatziki sauce and toppings of your choice.

GARDEN VEGETABLE PITA SANDWICHES
This is a terrific summer lunch! You can add other stuff to the filling like ham, chicken, turkey, shrimp, crab or hard-boiled eggs. This recipe comes from 'Sunset Quick Meals from Fresh Foods'. Serve this with potato chips.

- In a bowl, combne lettuce, carrot, cheese, onions, tomato and avocado.
- In a cup, stir together mayo, chile sauce and relish.
- Pour mayo mixture over vegetables and toss gently to blend.
- Fill pita bread halves evenly with vegetable mixture, packing gently.
- Serve.

ARMENIAN STEAK TARTARE (CHEE KUFTA)
This is a mouth watering awesome Armenian style steak tartare called Chee kufta by my Aunt Sophie. She made this for me special when I was visiting her, which was very often! It's important to use very, very lean beef and make sure you have the butcher ground it very fine, twice. Knead it as recipe says to: 5 minutes! No, you won't get sick if you prepare it correctly!

Steps:
- Combine vegetables and basil together and mix well.
- In a large bowl combine 2 cups of chopped vegetables and mix the bulgur, water, tomato sauce and salt.
- Mix well and let stand 10 minutes.
- Add meat and blend well.
- Knead about 5 minutes, moistening your hands with cold water at intervals.
- Taste for salt.
- Add more if necessary.
- Shape as desired and place on platter.
- We liked it squished flat with a fork and spread liberally with fresh chopped parsley and green onions as garnish.
- Eat with pita bread or crusty french bread, YUM!
