1 1/2 cups Gold Medal™ all-purpose flour
1 tablespoon sugar
1/4 teaspoon salt
1/2 cup butter or margarine
1 egg yolk
1/4 cup milk
8 1/2 cups thinly sliced, peeled baking apples (3 lb.; about 9 medium)
1 cup sugar
1/4 cup Gold Medal™ all-purpose flour
2 teaspoons cinnamon
1/2 teaspoon salt
1 cup chopped fresh or frozen cranberries, thawed
1 cup Gold Medal™ all-purpose flour
1/2 cup firmly packed brown sugar
1/2 cup butter or margarine, softened
1 cup caramel ice cream topping, heated
Vanilla or cinnamon ice cream, if desired

Steps:

  • Heat oven to 375°F. In large bowl, combine 1 1/2 cups flour, sugar and 1/4 teaspoon salt; mix well. With pastry blender, cut in 1/2 cup butter until mixture resembles coarse crumbs.
  • In small bowl, combine egg yolk and milk; beat well. Add to flour mixture; stir just until dry ingredients are moistened.
  • On lightly floured surface, roll dough to form 15x11-inch rectangle. Place in ungreased 13x9-inch pan. Press in bottom and 1 inch up sides of pan.
  • Place apples in large microwave-safe bowl. Microwave on HIGH for 6 to 8 minutes, stirring every 2 minutes, or until apples are fork-tender. Add 1 cup sugar, 1/4 cup flour, cinnamon and 1/2 teaspoon salt; mix well. Spoon apple mixture over crust. Sprinkle with cranberries.
  • In medium bowl, combine 1 cup flour, brown sugar and 1/2 cup butter; mix until crumbly. Sprinkle over fruit.
  • Bake at 375°F. for 45 to 60 minutes or until topping is deep golden brown, apples are tender and filling is bubbly. Cool 1 hour.
  • To serve, cut warm dessert into squares; place on individual dessert plates. Top each with caramel topping and ice cream.

1 bag (6 oz) sweetened dried cranberries
1/2 cup granulated sugar
1 tablespoon ground cinnamon
1 container (8 oz) sour cream
3 eggs
1/2 gallon vanilla ice cream

Steps:

  • Heat oven to 375°F. Spray 15x10-inch pan with cooking spray.
  • In large bowl, mix Bisquick mix, oats and brown sugar. Cut in butter, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until mixture is crumbly. Remove 1 1/2 cups crumb mixture to small bowl; stir in pecans. Set aside for topping. Pat remaining crumb mixture into bottom of pan.
  • In large bowl, toss apples, cranberries, granulated sugar and cinnamon. In small bowl, whisk together sour cream and eggs. Pour over apple mixture; toss to coat. Spoon filling over crust; sprinkle reserved crumb/nut mixture over filling.
  • Bake 45 to 55 minutes or until topping is golden brown and apples are tender. Cool 30 minutes. Cut into 8 rows by 4 rows. Serve warm with ice cream.

2 cups all-purpose flour
2 teaspoons baking powder
½ teaspoon salt
¾ cup butter or margarine
1 egg, beaten
2 cups cranberry sauce

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • In a large bowl, stir together the sugar, flour, baking powder and salt. Cut in the butter or margarine until the lumps are no larger than peas. Stir in the egg just a little bit, but allow the mixture to stay somewhat crumbly.

1/2 C granulated sugar
1/2 tsp baking powder
1/4 tsp salt
1 1/2 C all purpose flour
3/4 C old fashioned oats
1/2 C unsalted butter (cubed)
1 tsp cinnamon
1 tsp apple cider (or apple juice)
1 large egg white
1 C cranberries (fresh or frozen)
1/4 C apple cider (or apple juice)
2 Tbsp all purpose flour
3/4 C granulated sugar (divided)
2 medium baking apples
1 tsp cinnamon

Steps:

  • Preheat oven to 350°F. If serving from the pan, grease a square baking pan, with baking spray, butter or shortening.If attempting to remove and cut into slices outside of the pan, line baking pan with foil or parchment.
  • In a food processor, toss in all crust ingredients except for apple cider and the egg white. Blend until fine. Remove 1 cup of dry crust ingredients to use as the topping. Add the egg white and apple cider to food processor, blend until moist. Transfer mixture to baking pan. Pat down into a fairly flat layer. Bake bottom crust for 10 minutes.
  • Add cranberries, apple cider and 1/2 cup white sugar to a small saucepan. Cook over medium high heat, stirring frequently until bubbly and all cranberries have burst. Add flour, mix well. Allow cranberry mixture to thicken. Remove from heat.
  • Peel 2 baking apples and slice into bite size pieces. Toss in a medium bowl, sprinkle with remaining sugar and cinnamon. Toss apples to coat.
  • Pour cranberry mixture over sliced apples. Stir gently to coat apples completely.
  • Pour apple cranberry mixture over baked crust. Top off with remaining dry crust ingredients. Gently pat into an even layer.
  • Bake for 45 minutes. Let cool for at least 20 minutes, toss in the fridge for several hours to make slicing easier. Store in an airtight container for up to several days.

These cranberry bars are delicious, with a delightful balance of sweet and tart. Don't count on leftovers - these moist squares get gobbled right up!

1/8 teaspoon nutmeg
1 tablespoon cornstarch
3 Tablespoons melted butter
7 Tablespoons sugar
2 teaspoons cinnamon

Steps:

  • Preheat the oven to 375F. Grease 8 x 8 inch baking dish with non-stick spray, set aside.
  • To make the cheesecake filling beat together cream cheese, ½ cup sugar and vanilla extract until smooth and creamy, set aside.
  • To make apple pie filling stir together diced apples, ¼ cup sugar, cinnamon, nutmeg and cornstarch, until evenly coated, set aside.
  • Unroll crescent rolls and cut in two halves. Place 1 half of dough (4 crescents) at the bottom of baking dish. Pinch together the perforation and stretch the dough to make the bottom crust.
  • Spread cheesecake filling and smooth the top. Drain any excess of juice from the apple filling and
  • scatter diced apples over cheesecake filling.
  • On a sheet of baking paper spread remaining dough, seal the perforation and stretch to create the top crust. Invert the crust over apples.
  • Pour melted butter and spread on top of the crust. Sprinkle with cinnamon sugar.
  • Bake for about 35 minutes. Tent the top with aluminum foil if it starts to brown too quickly.
  • Cool completely before slicing and serving.
  • Store leftovers in the fridge.

1 tablespoon grated orange zest (2 oranges)
1/4 cup freshly squeezed orange juice
1 1/8 teaspoons ground cinnamon, divided
2 extra-large eggs, at room temperature
1 cup plus 1 tablespoon granulated sugar
1/4 pound (1 stick) unsalted butter, melted and slightly cooled
1 teaspoon pure vanilla extract
1/4 cup sour cream
1 cup all-purpose flour
1/4 teaspoon kosher salt

Steps:

  • Preheat the oven to 325 degrees F.
  • Combine the cranberries, apple, brown sugar, orange zest, orange juice, and 1 teaspoon of the cinnamon in a medium bowl. Set aside.
  • In the bowl of an electric mixer fitted with the paddle attachment, beat the eggs on medium-high speed for 2 minutes. With the mixer on medium, add 1 cup of the granulated sugar, the butter, vanilla, and sour cream and beat just until combined. On low speed, slowly add the flour and salt.

1 cup cold butter or margarine
1/2 cup chopped pecans
8 cups thinly sliced peeled apples (about 5 large)
1 cup sweetened dried cranberries
1/2 cup granulated sugar
1 tablespoon ground cinnamon
1 container (250 mL) sour cream
3 eggs
2 L vanilla ice cream

Steps:

  • Heat oven to 375°F. Spray 15x10-inch pan with cooking spray.
  • In large bowl, mix Bisquick™ mix, oats and brown sugar. Cut in butter, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until mixture is crumbly. Remove 1 1/2 cups crumb mixture to small bowl; stir in pecans. Set aside for topping. Pat remaining crumb mixture into bottom of pan.
  • In large bowl, toss apples, cranberries, granulated sugar and cinnamon. In small bowl, whisk together sour cream and eggs. Pour over apple mixture; toss to coat. Spoon filling over crust; sprinkle reserved crumb/nut mixture over filling.
  • Bake 45 to 55 minutes or until topping is golden brown and apples are tender. Cool 30 minutes. Cut into 8 rows by 4 rows. Serve warm with ice cream.

1½ cups salted butter (339 grams, room temperature (3 sticks))
1½ cups brown sugar (320 grams)
2 large egg yolks (28 grams)
1½ teaspoons pure vanilla extract (6 grams)
3 cups all-purpose flour (360 grams)
½ teaspoon kosher salt
1 cup white chocolate chips (170 grams)
1 cup chopped walnuts (113 grams)
12 ounces cranberries (340 grams, fresh or frozen)

Steps:

  • Preheat oven to 350°F. Grease a 9x13-inch baking pan with nonstick spray. Set aside.
  • Using a hand mixer, beat the butter and brown sugar together until light and fluffy.
  • Add the egg yolks and vanilla extract, beating to combine.
  • In a separate bowl, mix the flour and salt together.
  • Add the flour mixture to the wet ingredients until combined. The dough will be slightly crumbly.
  • Divide the dough into thirds.
  • Spread ⅔ of the dough in the bottom of the prepared 9x13-inch pan. Press until the dough lays flat and even along the sides. Bake for 25 minutes.
  • While the dough bakes, fold the chocolate chips and nuts into the remaining ⅓ of the dough.
  • Take the pan out of the oven and evenly spread a whole bag of cranberries over the dough, to the edges.
  • Quickly and evenly, put approximately 1-inch pieces of the remaining dough mixture on top of the baked dough and cranberries.
  • Put the pan back in the oven and bake for another 20 minutes.
  • Cover the pan loosely with aluminum foil and continue baking for another approximately 10 minutes, until it's cooked through. The top should be golden brown and the cranberries should be bubbly.
  • Let the bars cool for a few minutes before cutting. The bars can be served warm or cold.

1 can cranberry sauce with whole berries
2 Tablespoons milk

Steps:

  • Preheat oven to 350 degrees. Lightly greas a 9 x 13 baking pan. Reserve 1 cup of cake mix in a small bowl. In a medium bowl, stir together the remaining cake mix, 8 Tablespoons melted butter, and 1 egg. Spread into prepared pan. In another bowl, stir together the cranberry sauce with remaining 2 eggs and the milk. Spread over the cake batter in the baking pan. Add the flour, sugar, and cinnamon to the small bowl with the reserved cake mix, and stir thoroughly. Blend in the chopped butter and crumble mixture over the baking dish. Bake until golden, about 40 minutes. Cool on a wire rack. Cut into squares and serve.
