Categories     condiment

Time 1h7m

Yield About 8 cups

Number Of Ingredients 11

3 tablespoons vegetable oil
1 large onion, chopped
12 cloves garlic (about 1 head), peeled and finely chopped
2 tablespoons tomato paste
1/4 teaspoon red pepper flakes
2 ham hocks
2 (28-ounce) cans crushed tomatoes
1 3/4 cups red wine vinegar
1 1/2 cups firmly packed light brown sugar
2 1/2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper

Steps:

  • Heat the oil in a medium saucepan over medium-high heat. Add the onion and cook, stirring, until tender, about 8 minutes. Stir in the garlic, tomato paste, and crushed pepper and cook until fragrant, about 2 minutes.
  • Add the ham hocks, tomatoes, vinegar, sugar, salt, and pepper. Bring to a boil. Lower the heat, and simmer, uncovered, stirring occasionally, until deep red in color and has thickened, about 20 to 25 minutes. Adjust seasoning salt with pepper. Sauce will keep covered in the refrigerator for up to 3 days or freeze for up to 1 month.

EASY AND QUICK BARBECUE SAUCE

Easy and Quick Barbecue Sauce image

This is very fast and simple; basic but a family favorite. I've included tips for "kicking it up a notch". We use this all year long, either for grilling or broiling.

Provided by akcooker

Categories     Low Protein

Time 7m

Yield 2 cups

Number Of Ingredients 7

1 cup ketchup
1/4 cup brown sugar, packed
1/4 cup yellow mustard
1/4 cup Worcestershire sauce
1/4 cup finely chopped onion (optional)
1/4 cup finely chopped bell pepper (optional)
1/4 cup finely chopped celery (optional)

Steps:

  • Combine first four ingredients in microwave safe 2-cup measure or bowl.
  • (If adding any of the optional ingredients, saute in small saucepan, then add the first four ingredients.) Stir to combine completely and microwave on high for 1-2 minutes to melt sugar and combine flavors.
  • (Or simmer on stove until warmed and well combined) That's it: grill chicken, pork, steak, salmon, or shrimp and brush sauce on as desired.
  • Ideas: Use different mustards to change the flavor; add 1/2-1 teaspoon cayenne to spice it up; use 1 teaspoon each of dried onion, peppers, celery flakes if you don't want to use fresh.
  • I usually set aside one cup of the sauce for extra dipping prior to grilling.
  • (Boil the sauce for 2-3 minutes if your basting brush has touched the rare food and gone back into the sauce.).

EASY BARBECUE SAUCE

Easy Barbecue Sauce image

They always say less is best, and this certainly stands true for this easy BBQ sauce recipe, it's very easy to make, and so good! I have doubled the original recipe, but you may cut the recipe down to half if desired. You can brush this sauce on while cooking, or marinate your meat in it, this is also fantastic for chicken too! This sauce is even better prepared a day ahead. If you like extra heat, just saute some dried chili flakes in with the onion and garlic.

SIMPLE BARBECUE SAUCE

Simple Barbecue Sauce image

Smoked paprika is the secret weapon in this simple barbecue sauce, which goes beautifully with pork and chicken. If you're painting the sauce onto cooking meat, thin it out with water to about a one-to-one ratio, which will keep the sugars from burning too quickly over the fire. Serve the full-strength stuff alongside the finished meat.

EASY BARBECUE SAUCE

Easy Barbecue Sauce image

I came up with this recipe via trial and error after running out of barbecue sauce one too many times. Now my family will not have any other kind. I make it in double batches and store it in a mason jar in the refrigerator. It can be canned for longer storage. You can add chopped garlic and less hot sauce, if desired.
