1/2 cup sugar
1 tablespoon cornstarch
4 cups raspberries or blueberries
2 tablespoons water
1 teaspoon lemon juice
1 cup Bisquick™ Original Pancake & Baking Mix
1/4 cup milk
1 tablespoon sugar
1 tablespoon butter, melted

Steps:

  • Heat the oven to 425°F.
  • In 2-quart saucepan, mix 1/2 cup sugar and cornstarch. Stir in raspberries, water and lemon juice. Heat to boiling over medium heat, stirring constantly. Continue boiling 1 minute, stirring constantly. Pour berry mixture into 8- or 9-inch (2 quart) glass baking dish.
  • In medium bowl, stir Bisquick™ mix, milk, 1 tablespoon sugar and melted butter just until blended and a dough forms. Drop dough by 6 spoonfuls onto hot berry mixture.
  • Bake about 15 minutes or until berry mixture is bubbly and topping is light brown.
  • Place baking dish on a wire cooling rack. Cool slightly. Serve warm.

6 cups frozen berries (blueberries, raspberries, blackberries or a combo of them all together)

Steps:

  • Preheat the oven to 350 degrees.
  • Combine Bisquick, sugar and melted butter together and stir into a rough crumble.
  • Place the frozen berries on the bottom of a 9x13 pan.
  • Next, add the crumble on top of the berries.
  • Bake for 1 hour.
  • Let it cool for at least 10 minutes after it comes out of the oven.

1 pint blueberries
1 pint blackberries
1 pint raspberries
Juice of 1 orange
Zest of 1 orange
Juice of 1 lemon
Zest of 1/4 lemon
2 tablespoons Grand Marnier, optional
1/4 cup sugar
5 tablespoons cornstarch
2 teaspoons ground cinnamon
1/4 cup butter, softened
1/4 cup sugar
1 teaspoon cinnamon
1 cup flour

Steps:

  • In a large bowl, place strawberries, blueberries, blackberries and raspberries, add orange juice, orange zest, lemon juice, lemon zest and optional Grand Marnier, sugar, cornstarch and cinnamon; mix lightly. Let set for 5 minutes. Meanwhile make streusel topping. In a medium bowl combine butter, sugar and cinnamon, mix well with a fork. Add flour and mix until crumbly.
  • Place berry mixture into a souffle dish. Top with streusel topping. Place in center of cooking grate. Cook 40 minutes or until brown and bubbly.
  • Note: may be made in individual souffle dishes, cooking time is 15 to 20 minutes. Serve with vanilla ice cream.

BLUEBERRY COBBLER
1/2 c granulated sugar
1 Tbsp cornstarch
4 c fresh or frozen blueberries
2 Tbsp water
1 c bisquick baking mix
1/4 c milk
1/4 c chopped pecans,optional
1 Tbsp granulated sugar
1 Tbsp margarine or butter,melted

Steps:

  • 1. Heat oven to 425^. Mix 1/2 cup sugar and the cornstarch in 2-quart saucepan; stir in blueberries and water Heat to boiling, stirring constantly; boil and stir 1 minute. Pour into ungreased 1 1/2 quart casserole. Mix remaining ingredients until soft dough forms, Drop dough by 6 Tablespoonfuls onto hot blueberry mixture. Bake until golden brown, about 15 minutes. --- Note: For a faster method: Substitute: 21 oz. of your favorite fruit pie filling Heat pie filling to boiling in a saucepan. Pour into casserole dish. 1 1/2 c bisquick baking mix
2/3 c milk
2/3 c granulated sugar
1/2 stick butter
1 can(s) blackberry pie filling
1 tsp brown sugar

Steps:

  • 1. Preheat the oven to 400F.
  • 2. Melt butter in square baking dish in oven.
  • 3. Add the Bisquick, milk and granulated sugar, stir until smooth.
  • 4. Drop spoonfuls of pie filling over the batter. DO NOT STIR.
  • 5. Sprinkle the brown sugar over the top of the mixture.
  • 6. Bake for 30-35 minutes.
  • 7. This is great served warm with milk, ice cream or whipped cream topping.
  • 8. TIP: You can substitute the blackberry pie filling with any flavor of pie filling that you prefer.

1 cup Bisquick
1 cup milk
1/2 teaspoon ground nutmeg
1/2 teaspoon cinnamon
1/2 cup butter, melted
1 cup white sugar
1 (29 ounce) can peach pie filling
1/2 cup fresh blueberries, if using frozen, do not thaw
1 tablespoon cinnamon sugar

Steps:

  • Preheat oven to 375; 350 for glass.
  • While oven is preheating, put butter in 8 x 8 x 2 pan, place pan in oven to melt the butter. Keep close watch so that it doesn't burn.
  • Mix together Bisquick, Milk, Nutmeg and Cinnamon.
  • Remove pan with melted butter from oven, pour batter over melted butter. Stir Lightly just to mix all together.
  • Pour Peach Pie filling evenly over batter mixture and then sprinkle Blueberries over top of Peach Pie Filling, DO NOT STIR!
  • Sprinkle Cinnamon Sugar over the top of everything, if you need more than one TBSP it is ok, but be careful that the cinnamon doesn't overwhelm the taste the fruit.
  • Bake for 45-55 minutes or until golden brown.
