This easy Sugar Cookie Icing recipe takes only minutes to make and it dries hard so you can stack or bag your beautifully decorated cookies!

3 cups powdered sugar (, sifted)
3-4 tablespoons whole milk
1 1/2 tablespoons light corn syrup
1/2 teaspoon vanilla extract ((use clear vanilla extract if you need the icing to be bright white))
Pinch of salt ((optional depending on flavor preference))
Gel food coloring (, optional)
Plain cooled sugar cookies (, for decorating)

Steps:

  • Stir together the sugar, 3 tablespoons milk, corn syrup, and vanilla in a medium-sized bowl until combined.(If icing is too thick, add the remaining tablespoon of milk, until the icing is thick but pipeable. If it's too thin, add a little more powdered sugar until desired texture is reached. If you drizzle a little of the icing with a whisk, the ribbon of icing will hold for a few seconds before melting back into the icing. That is when you know it's the right consistency and is ready to use.)
  • If coloring the icing with different colors, divide into bowls and color as desired at this point.
  • Transfer icing to a piping bag with a piping tip (I use Wilton 5.)
  • Pipe icing onto cookies and decorate, as desired. (If using sanding sugar or sprinkles, they need to be added before the icing starts to set.)
  • Allow icing to completely harden at room temperature before enjoying (this can take anywhere from 3 hours to overnight depending on the consistency and thickness of your icing.)

Steps:

  • In a medium bowl, sift confectioners sugar and then combine with light corn syrup, milk or water, and clear extract flavoring. Stir until smooth and the icing has reached your desired consistency.
  • For flooding and dipping, use a consistency that sticks well to your spoon and icing 'drops' off slowly.
  • For a light glaze that is somewhat transparent, use a consistency that runs off slowly from your spoon but also leaves a good clear coating on the spoon.
  • Cover with plastic wrap and refrigerate for up to 3 days.

1/2 teaspoon kosher salt
1/2 teaspoon baking powder
2 sticks (1 cup) unsalted butter, room temperature
2 cups granulated sugar
1 teaspoon pure vanilla extract
2 large eggs, room temperature
2 tablespoons cognac or brandy
4 cups confectioners' sugar (1 pound), sifted, plus more if needed
2 large egg whites
2 to 4 teaspoons fresh lemon juice Gel-paste colors, for decorating

Steps:

  • Cookies: In a medium bowl, whisk together flour, salt, and baking powder. In the bowl of a mixer fitted with the paddle attachment, beat butter, granulated sugar, and vanilla on medium-high speed until light and fluffy. Beat in eggs and cognac until well combined. Add flour mixture; beat on low until just combined. On a lightly floured surface, divide dough evenly and shape into 2 disks; wrap each in plastic. Refrigerate until firm, at least 45 minutes and up to 5 days.
  • Preheat oven to 350 degrees. Line baking sheets with parchment. On a lightly floured surface, roll out dough 1/4 inch thick. Refrigerate until very firm, about 30 minutes, or freeze 10 minutes. Stamp out shapes. Transfer cutouts to prepared sheets, about 1 inch apart. Reroll scraps; stamp out more shapes and transfer to sheets. Refrigerate until firm, about 30 minutes, or freeze 10 minutes. Bake until set and golden around edges, 15 to 20 minutes. Transfer sheets to wire racks; let cool completely.
  • Royal Icing: In a bowl, whisk together confectioners' sugar, egg whites, and 2 teaspoons lemon juice until smooth. If necessary, add more lemon juice or confectioners' sugar to reach desired consistency. Divide and tint with gel-paste colors as desired. Pour some into squeeze bottles for detailing.

This will harden and it will hardens quite quickly, it's the perfect icing to decorate cookies, if desired you may omit the vanilla, I like to add it in, the amounts may be reduced by half if desired.

2 cups sifted confectioners' sugar (sifted after measuring)
1 tablespoon low-fat milk (skim or 1% is fine although I have made this successfully using 2% fat milk)
1 tablespoon corn syrup (more if needed to reach desired consistency)
1/2 teaspoon almond extract
1/4 teaspoon vanilla
food coloring (use colors of choice)

Steps:

  • VERY IMPORTANT; the confectioners sugar must be sifted before using.
  • In a bowl beat the sifted confectioners sugar with milk until smooth.
  • Beat in corn syrup and almond extract until smooth and glossy (if icing is too thick add in a small amount of corn syrup).
  • Divide into as many separate bowls as desired.
  • Add in different food coloring to each bowl beating/whisking until the intensity is achieved.
  • Paint the icing over the cookies using a brush or dip the cookie edges into icing (this will set quite quickly).
  • Place cookies on waxed paper to dry.

3 tablespoons margarine (I use Light Becel Non-Hydrogenated)
1 egg white
1/2 teaspoon vanilla
1 1/4 cups flour
1/4 teaspoon baking powder
1/8 teaspoon salt
1/4 teaspoon cream of tartar
3/4 cup powdered sugar
3 3/8 teaspoons skim milk
1/8 teaspoon vanilla (additional to taste)
1 1/2 teaspoons light corn syrup

Steps:

  • Preheat oven to 350°F.
  • Beat margarine and sugar until well mixed, adding egg white and vanilla as you go.
  • Whisk baking powder, flour, tartar, and salt in another bowl. Mix bit-by-bit into egg mixture, not adding any more if the dough is too thick.
  • Knead dough 3-5 times on heavily floured surface until smooth and at your desired consistency.
  • Roll dough out on the heavily floured surface with a floured rolling pin, and cut shapes out. Place them on a cookie sheet, covered in parchment paper. (Don't sub the parchment paper for oil, butter, or cooking spray. Bottoms will crisp).
  • Bake in oven for 7-10 minutes until tops of cookies have firmed, checking every few minutes to make sure they don't brown (these are best light and soft).

  • While cooling, mix powdered sugar and milk until smooth. Beat in corn syrup and vanilla until shiny.
