We wanted something different with chicken so attempted something different and it was a major hit! Chicken with both an eastern and western flair. Steps:
- 1. Preheat oven to 350 degrees rinse chicken in cold water and pat dry. Spray your baking pan with some nonstick spray Place chicken pieces in baking pan
- 2. liberally coat the chicken pieces with the Organic Tamari sauce about a 1/2 cup. If you think you need more you can use more.
- 3. liberally sprinkle the chicken with the poultry seasoning and garlic powder. Then lightly dust with the ground corriander ( I did not measure these ingredients and rarely ever do)
- 4. Place chicken in the oven for approximately 1/2 hour. Take chicken out and spoon the hot pan drippings over the chicken pieces basting them. Put back in oven for another 1/2 hour. When done, remove from oven and spoon drippings over the chicken one last time and let sit for 5 minutes. Serve with mashed potatoes and your choice of vegetable. Enjoy!

- Rinse the basmati rice, leave to soak for 10 minutes then strain using a colander then set aside.
- Over medium flame heat 3 tbsp ghee and 4 tbsp cooking oil then add bay leaf, 2 pieces of 2' cinnamon stick, 3 cardamom, 1 star anise, 4 cloves. Then saute for a minute or until they start releasing pleasant spice fragrance.
- When the aromatic fragrance is released, add the chopped shallots and saute until translucent. Then add chopped tomatoes and cook for 2 minutes until mushy.
- Add the peppers if you like it spicy. Then 3 tbsp ginger and garlic paste and saute for another couple of minutes. Add in the chili powder, garam masala, turmeric powder and the lemon juice stirring until they are well combined.
