CREAMY CHOCOLATE FUDGE
I clipped this recipe from a December 1983 issue of The Charlotte (NC) Observer, which was running a contest to see who made the best fudge. This recipe won in the "Plain Chocolate Fudge" category (no additives such as nuts). I made this for presents at the holidays and now my grown kids are making it for gifts themselves. I buy disposable aluminum pans approx 5x8-inch so I can just wrap them up and give them as gifts. This recipe makes three pans-full.... or two 8x8-inch pans of fudge.

Steps:
- Butter two 8x8-inch or three 5x8-inch pans.
- In a large heavy pot (I use a dutch oven size pot), mix together sugar, milk, vanilla, and butter; stir to mix.
- Bring to a boil, stirring constantly.
- Then let boil for 2 minutes, not stirring.
- NOTE: You need to move quickly during the next couple of steps so have the marshmallows and chocolate squares cut up and cut open the bags of chocolate chips.
- Turn off heat but leave pot on the burner.
- Add marshmallows, quickly stirring until melted.
- Add each chocolate separately in the order listed in the recipe, quickly stirring until melted.
- Pour into prepared pans.
- Let cool.
- Fudge tastes better each day --- if it lasts!

- Begin by lining a 9x13-inch pan with parchment paper. Next break up chocolate bars into a large heat-proof mixing bowl. Set up electric mixer.
- Butter the sides of a large, lidded, heavy, pot. Pour cream and sugar into pot and stir together. Place over medium heat and stir constantly, just until it comes to a rolling boil. When it reaches this point, cover pot with lid for 1 minute and then remove the lid. Continue cooking to a soft ball stage, 230˚degrees on a candy thermometer.
- Remove pot from heat, add butter and vanilla. Let it sit in the hot candy mixture for 1 minute without stirring. Pour candy over broken chocolate bars in mixing bowl. Do not scrape the pan. Beat fudge until very smooth with beaters. Add stir-ins, nuts, peanut butter, or candies at this point. Pour into prepared pan, cover and refrigerate till set, preferably overnight.
- To cut, using the parchment paper, lift the slab of fudge to a cutting board. Cut with a sharp knife or pizza cutter into even squares. Keep refrigerated in a sealed container.

- In a saucepan, slowly bring the milk and sugar to a boil over medium low heat.
- Boil for exactly 2 and a half minutes, stirring constantly to prevent burning.
- Remove from heat, stir in peanut butter and vanilla.
- Mix until smooth.
- Pour into greased 8" x 8" pan, and let cool before cutting. Enjoy!
EASY CREAMY VANILLA FUDGE

- In a 3 quart saucepan, over very low heat, mix together confectioners sugar, butter, milk, vanilla, and salt until mixture is creamy.

AUNT TEEN'S CREAMY CHOCOLATE FUDGE
This was my aunt's recipe for fudge, passed down through the family. It's better than any fudge I've ever had at the Jersey shore, and easy enough to whip up in 15 minutes or so.

- Line an 8x8 inch pan with aluminum foil. Set aside.
- In a large saucepan over medium heat, combine marshmallow cream, sugar, evaporated milk, butter and salt. Bring to a full boil, and cook for 5 minutes, stirring constantly.
- Remove from heat and pour in semisweet chocolate chips and milk chocolate chips. Stir until chocolate is melted and mixture is smooth. Stir in nuts and vanilla. Pour into prepared pan. Chill in refrigerator for 2 hours, or until firm.

EASIEST EVER FUDGE
This recipe was given to me by the owner of a bed and breakfast in Arkansas. It is SO easy to make. Just make sure you are a really quick "stirrer", as my daughter says.

- Line 8 inch square pan with waxed paper. Butter the waxed paper and put chopped nuts on top of butter.
- In microwaveable bowl, combine both packages of chips. Microwave until melted.
- QUICKLY stir in sweetened condensed milk and pour into pan.
- This doesn't take but a second to start getting hard, so stir and pour quickly.
- It is usually completely set within an hour. Make sure it is cool before cutting.
- I have to cut this in small squares because it is very rich.
THE EASIEST FUDGE
This is a fun fudge to do with the kids, because of it's ease and rich/creamy flavor. Prep time does not include refrigeration.

Steps:
- Melt condensed milk and chocolate in microwave (using microwave safe bowl) for about a minute and a half or until the milk is hot and watery and the chocolate chips are beginning to melt. DO NOT OVERHEAT (will burn chocolate and leave a clumpy/grainy mixture with a bad taste).
- Take bowl out and stir until mixture is smooth and well blended.
- Add peanut butter for peanut butter/chocolate fudge OR add salt and vanilla. Or add all three, depending on your tastes.
- Stir until all is well mixed, smooth, even and shiny.
- Pour mixture into an UNGREASED foil lined cake/brownie pan.
- Put in fridge until mixture is hard (overnight is best).
- Take out of fridge and cut into squares (or other desired shapes) and put into a Tupperware or other covered/airtight container.
- Freeze if desired.
- Or just EAT and ENJOY!
EASIEST BEST FUDGE FROSTING
I found this recipe years ago, and it got rave reviews, but I lost it and have looked for it ever since. Only 3 ingredients, VERY simple, and it generously frosts a 13 X 9 pan of brownies or Cake. Works best when slightly warm. I usually use it on brownies, (but usually have a little left for on top of ice cream)....Feel free to experiment....You can use semi sweet, dark, or milk chocolate, and you can garnish the top with nuts etc, but move quickly before it sets up all the way and your garnish won't "stick". Onr try and you will be hooked on the simplicity and the great flavor!

- In microwave safe bowl ,melt the chocolate chips until just melted 1-2 minutes.
- Stir with a spatula or scraper. Stir in the butter. Let the mixture sit for 4-5 minutes.
- Add the can of sweeetened condensed milk and stir until smooth.
- That's it! Frost the brownies or cake immediately as this mixture will set up and become more fudgey as it cools. If it cools too fast for you, place in the micrewave for 15 seconds to loosen it back up a bit.
