- Heat oven to 375 degrees.
- Spray a 9x13 baking dish with cooking spray.
- Mix cooked ground beef with ¾ c. enchilada sauce and 1 c. of cheese.
- Spoon approx ¼ c. filling into each tortilla, roll up and place seam side down into baking dish.
- Pour remaining sauce over rolled tortillas.
- Sprinkle with remaining cheese.
- Bake for 25-30 mins or until cheese is melted.
- * Can cover with foil for more moist enchiladas. Remain in final 5 minutes of baking.

- Preheat oven to 350 degrees F (175 degrees C).
- Cook and stir ground beef with onion in a skillet over medium heat until meat is crumbly and no longer pink, about 10 minutes. Drain grease. Stir 1 cup Cheddar cheese, sour cream, parsley, taco seasoning, oregano, and black pepper into the ground beef until cheese has melted. Mix in enchilada sauce, chili powder, garlic, and salt; bring to a simmer, reduce heat to low, and simmer until meat sauce is slightly thickened, about 5 minutes.
- Lay a tortilla onto a work surface and spoon about 1/4 cup of meat sauce down the center of the tortilla. Top meat sauce with 1 tablespoon black beans and a sprinkling of black olives. Roll the tortilla up, enclosing the filling, and lay seam-side down into a 9x13-inch baking dish. Repeat with remaining tortillas. Spoon any remaining meat sauce over the enchiladas and scatter any remaining black beans and black olives over the top. Sprinkle tortillas with 1/4 cup Cheddar cheese.
- Bake in the preheated oven until cheese topping is melted and enchiladas and sauce are bubbling, 20 to 22 minutes. Let stand 5 minutes before serving.

Oh man, I really love this recipe. It's truly awesome! Most people like corn tortillas with their enchys, but I prefer flour...by all means, go with what you like! Sometimes I throw black beans into the meat mixture, Anyway Enjoy!

- Brown beef, onions, peppers and garlic in large skillet over medium-high heat until browned and veggies are soft.
- Add taco seasoning and 1/2 cup of enchilada sauce, stirring until combined. Turn off heat and add cream cheese. Stir until cream cheese has melted into mixture.
- Spread 1/2 cup of enchilada sauce into the bottom of a greased 13x9 casserole dish. Spoon about 1/4 cup of meat mixture down the center of each warmed tortilla and roll up. Place enchiladas seam side down in dish.
- Top enchiladas with remaining 1 cup of enchilada sauce. Then top with monterey jack cheese.

EASY BEEF ENCHILADA
This is a sure hit for Mexican food lovers, potlucks and when you don't have time to make authentic enchiladas. I'm not sure where I got this, as the first time I made it was over 25 years ago. I believe it came from a ladies club cookbook they sold for money for charities. You can use hot peppers, mild or leave them out all together. The topping is so rich 'n creamy and you don't need to mix it. This is my family's favorite 1 dish meal. Very easy to prepare.

- Heat oven to 350º and spray a 9x13 pan.
- Heat skillet and fry and crumble hamburger with onion.
- Add 1 can of diced tomatoes (rotel if you want it hot) and canned peppers.
- Add taco seasoning.
- As this simmers, line pan with 6 of the corn tortillas,(if using 14 tortillas, fill in the holes with torn pieces of the 7th one) pour in hamburger mixture, drain off extra oil.
- Place 6 more corn tortillas on top, using torn pieces of the last tortilla (if using 14) to fill in the holes. Spread 1 can of cream of chicken soup over top of tortillas.
- Next, sprinkle the 2 cups of grated cheese over soup.
- Pour 1 cup of milk evenly over cheese, no need to mix.
- Cover with foil and bake 45 minutes.
- If you want the topping more firm, remove foil and bake 5 minutes more.
- Serve with warm buttered flour tortillas and a side of guacamole.

- PREHEAT oven to 400°F Cook meat and peppers in large nonstick skillet on medium heat until meat is no longer pink, stirring frequently. Add 1 cup of the salsa; simmer 3 to 4 minute or until peppers are tender. Remove from heat; stir in 1/2 cup of the cheese.
- SPREAD 1/4 cup of the salsa onto bottom of 13x9-inch baking dish. Brush dressing lightly over both sides of tortillas. Stack 4 of the tortillas on large sheet of waxed paper; wrap tortillas in waxed paper. Microwave on HIGH 20 to 30 sec. or just until warmed. Immediately spoon 1/3 cup meat mixture down center of each warm tortilla; roll up. Place, seam-side down, in dish. Repeat with remaining 4 tortillas and meat mixture. Spoon remaining 3/4 cup salsa evenly over filled tortillas; cover with foil.
- BAKE 20 minute or until heated through. Uncover; top with remaining 1/2 cup cheese. Bake an additional 2 to 3 minute or until cheese is melted. Sprinkle with cilantro.

This recipe is one of my family's favorites. It can be made in advance and then reheated, or you can make the different components ahead of time and then just assemble and bake for a quick dinner. Serve with sour cream and picante sauce or salsa.

- Preheat oven to 350 degrees F (175 degrees C). Spray a deep 12x6-inch hotel pan or casserole dish with cooking spray.
- Mix garlic powder, black pepper, cayenne pepper, cumin, marjoram, and oregano together in a small bowl.
- Heat a large skillet over medium-high heat and stir in ground beef. Cook and stir until the beef is crumbly and no longer pink, about 10 minutes. Drain and discard any excess grease. Add black beans, water, and taco seasoning; cook and stir mixture until most of liquid is evaporated, 5 to 10 minutes.
- Heat butter in a separate skillet over medium heat; cook and stir green onions in the melted butter until softened, about 5 minutes. Mix cream of mushroom soup, sour cream, green chile peppers, and garlic powder mixture into green onions; reduce heat to low and simmer until mixture is heated through, 2 to 3 minutes.
