EASIEST AHI TUNA EVER
I came up with this the first time I purchased an ahi tuna steak to make at home. For me, less is more when it comes to ahi because I really love the flavor of the fish. This recipe is super easy and it makes a great presentation over a baby spinach salad.

Steps:
- Rub the steak with one tbs of the olive oil.
- Put the peppercorns on a plate and press the tuna steak into the peppercorns until it is coated.
- Sprinkle the steak with salt to taste.
- Heat the other tbs of olive oil in a non-stick pan on medium high heat.
- Cook the steak 2-3 minutes per side.
- Slice the steak into 1/4" slices and serve over salad or rice.
- Note: If you do not care for raw or rare fish this recipe is not for you. Cooking a tuna steak for 2-3 minutes per side will leave the middle quite rare, and barely warm. You could cook the fish longer until it is well done, but then you would basically spending a lot of money on a cut of fish that is meant to be served rare or raw. (IMHO!).

SUPER EASY SEARED AHI TUNA
Tired of spending ten dollars or more for a simple Seared Ahi Tuna Appetizer and over thirty dollars for a Seared Ahi Tuna dinner? Well, now you can go to your local fish market, grocery store or even Costco and pick up some Ahi (or Yellowfin) Tuna and do it yourself. So simple, but so elegant!

- With a sharp knife, cut the tuna into 4 large pieces for appetizer portion, 2 large pieces for dinner portion. Use your judgment on what shape you want to cut your tuna because not all tuna is the same size or shape. However, the shape should somewhat resemble a miniature brick.
- Season the tuna pieces with salt and pepper. Coat lightly on all sides with bread crumbs. Heat olive oil in a large heavy skillet over high heat. The pan should be as hot as you can get it. Place the tuna in the pan, and sear on each side for about 45 seconds for small portions, or 1 minute for large. Remove from pan. The tuna will be very rare.
- Slice each 'brick' into 1/4 inch thick slices, and fan out on a serving plate. Enjoy plain, or with the condiments of your choice.

- Season the tuna steaks with salt and cayenne pepper.
- Melt the butter with the olive oil in a skillet over medium-high heat. Cook the peppercorns in the mixture until they soften and pop, about 5 minutes. Gently place the seasoned tuna in the skillet and cook to desired doneness, 1 1/2 minutes per side for rare.

UNCLE BILL'S AHI AHI TUNA
A delightful tuna dish with a touch of heat from the Wasabi powder and black pepper, but oh, so good.

Steps:
- Melt butter in a small casserole dish (in a microwave).
- Place tuna steaks into the melted butter and coat all sides.
- In a small bowl, mix together wasabi powder, coarse black pepper and granulated garlic powder.
- Sprinkle tuna steaks with wasabi mixture on all sides and lightly rub into the steaks with your fingers.
- Heat olive oil and any left over butter in a heavy-bottom frying pan on medium-high heat.
- Add tuna steaks and sear for 45 seconds, then turn over and sear for another 45 seconds.
- DO NOT OVERCOOK TUNA STEAKS.
- Just make sure that you have a light crust on each side.
- Let fish rest for 2 minutes before slicing.
- You may serve whole or cut into thin slices.
- Serve on cooked rice or Saffron Ratatouille.
- Then spoon some Lemon Basil Pesto over steaks.
- Purchase Ahi Ahi Tuna - yellow fin, this is the best.

AHI TUNA
Steps:
- Preheat grill.
- Place tuna in a glass bowl. Combine rest of ingredients and pour over the tuna. Marinate tuna for at least 1 hour.
- Place directly on hot grill for 1 minute or until desired doneness.
SUNNY'S AHI TUNA POKE WITH PLANTAIN CHIPS
This recipe is a quick and easy, multipurpose way to make your ahi tuna for an amazing poke. I like to turn it into a poke bowl with a spring mixture of baby lettuces, pickled ginger, seaweed salad, diced mango, cilantro and sometimes rice or quinoa, but you can also use it to fill lettuce wraps. Still, there's nothing like fresh tuna poke served alone with plantain chips as a snack or appetizer. - Spray a large skillet with cooking spray; heat over medium-high heat. Add tuna steaks to the hot skillet and sear 90 seconds on each side. Remove tuna steaks to a plate.

- If using the center-cut ahi tuna, trim and cut the tuna into a block approximately 2 inches across; then cut into 1-inch steaks.
- Crush the salt, peppercorns, fennel seeds, and lavender with a mortar and pestle or a rolling pin.
- Lightly oil the tuna with 2 teaspoons of the olive oil; evenly coat the tuna with the lavender-pepper mixture, patting off any excess.
- In a heavy bottomed sauté pan or a cast-iron pan, heat the remaining 1 tablespoon olive oil.
- Increase the heat to high and place the tuna in the pan.
- Sear for 1 minutes, then turn over carefully, reducing the heat to medium.
- Sear the other side for 1 more minutes until medium rare.
- Remove from heat and immediately refrigerate the tuna for at least 1 hour but no more than 3 hours.
- To serve, arrange the greens on chilled individual serving plates.
- Drizzle with Mustard Seed Dressing.
- Thinly slice the tuna and arrange on top of the dressed greens.
- For the mustard seed dressing:.
- Preheat oven to 375°F.
- Place mustard seeds in a baking pan.
- Place in oven and roast for a couple of minutes (watch carefully so the seeds don't burn).
- Remove from oven and let cool.
- Whisk all the ingredients together and season to taste.

SEARED SESAME-CRUSTED AHI TUNA
I have tried several different recipes for making ahi tuna and was disappointed every time. So I have blended several things about other recipes to create this. I'm sure this isn't completely original, but it is original to me. This can be served as a main course with some rice and asparagus (or stir-fry vegetables) or as an appetizer. I like a little soy sauce for dipping, but there are many other spicier dipping sauces you could use.

- Rinse tuna and pat dry. Place in a prep dish and sprinkle both sides with blackened seasoning. Brush teriyaki sauce on all sides of the tuna to glaze it.
- Mix white and black sesame seeds together in a shallow dish. Dredge tuna in the sesame seeds until all sides are coated.
- Heat oil in a cast iron skillet over high heat until smoking. Arrange tuna in the pan and cook for 30 to 45 seconds. Flip and cook for another 3o to 45 seconds; do not overcook!
- Quickly transfer tuna to a cutting board and cut into 1/4-inch thick slices. Arrange tuna on individual plates, overlapping slices slightly. Serve immediately.

- Brush the tuna steaks with oil. Sear over medium high heat, 3 minutes per side. Be sure tuna remains undercooked in the center. Remove from skillet and cool slightly.

- Heat olive oil in saucepan and saute peppers and onion with salt, pepper and oregano.
- In a small bowl mix all spices for tuna and season steaks on all sides. About 2 minute per side.
