EARL'S HOMEMADE BREAD FOR THE KITCHENAID
I got this recipe off breadnet.net as I could not find the book for my mixer. This is a wonderfully easy recipe and my bread has turned out great every time. Times do not include rise times.

Steps:
- When measuring the flour, fluff it with a spoon and then spoon it into the measuring cup and level but DO NOT PACK. This is the most important thing for getting consistency.
- Place flour, salt and yeast in the mixer bowl but don't turn on mixer. In a separate container, place the warm water and add the oil first and then the honey, using the same measuring spoon, as the oil will keep the honey from sticking to the spoon.
- Stir the liquids together and stir them, then turn on the mixer with dough hook installed to low speed for 15 seconds. Then add the liquid mixture all at once and turn the mixer to its lowest speed for about a minute and a half-until ingredients are pretty well together and shut it off. Let it rest this way for 10 minutes.
- Turn the mixer to the second speed and let it run 3 minutes. Remove the dough hook and turn the dough onto a floured board or table. Knead 3 or 4 times to get the air bubbles out.
- Place it in an oiled bowl (you can put it back in the mixer bowl) and put it in a warm place, like your oven with a cloth draped over it for 1 hour. At the end of the hour, punch it down and turn it onto the floured surface and knead another three or four times. Form loaves and put into 2 loaf pans.
- Put them in the same warm place with a cloth draped over them and let them rise 45 minutes.
- Preheat oven to 375 degrees and bake for 30 to 35 minutes or until crust is the color you like. If you put a small pan of water on the rack below the bread, it will make the crust softer and chewier. Remove from pans and let cool at least 30 minutes on a wire rack.
- I usually brush the tops with olive oil because it softens the crust a bit and makes the loaves look nice.
- This bread has a wonderful flavor and keeps very well.

MOM'S DELICIOUS HOMEMADE BREAD
This is my Mom's recipe. It is so good, very light and fluffy with a crispy crust on the bottom. Very simple too. Can be used to make rolls, or loaves. You can easily double it. You can also add 1c. raisins and/or slivered almonds,orange/lemon zest and vanilla extract to a loaf for a festive holiday bread. The options are endless!

Steps:
- Combine warm water, yeast, oil and honey in a large bowl, let sit for 5 minutes then add the salt and egg. Stir all together.
- Add the flour one cup at a time, stirring together after each cup. Around the 5th cup your dough will begin to come together pulling away from the sides of the bowl and forming a ball.
- Empty the dough onto a clean, floured surface and begin kneading the dough adding a little more flour as it becomes sticky. It should be slightly sticky. Knead for 3-5 minutes until smooth, firm and elastic.
- Set aside to rise until double.
- Divide dough into 2 loaves or 1 loaf and 12 rolls or all rolls if you like. Place in well greased loaf pan or rolls on a greased cookie sheet.
- Preheat oven to 375°F
- Set aside to rise until almost double once more.
- Bake loaves for 25-30 minutes, or rolls for 15 minutes. They should be golden brown on top and bottom when done.
ITALIAN PAN BREAD AKA FOCACCIA
I make this bread frequently at Wendel's (www.wendelsonline.com). It really is a great bread. Everyone calls it Focaccia bread but really it isn't. I adapted it from a recipe I used as the Baker at Langley Earls. Hope you like it.

Steps:
- Add all dry ingredients to a mixer bowl or to a food processor with bread attachment in place.
- Mix dry ingredients on low speed for about two minutes.
- Measure out warm water and oil into a bowl or measuring cup and at both to the dry as it mixes for another two minutes on low speed.
- After two minutes increase your mixers speed to medium for another six minutes.
- Dust counter top with flour, on the counter form dough in to a ball and let it proof covered for about 10 minutes.
- Spray the edges of your baking sheet, place baking paper on surface without allow any wrinkles, and sprinkle evenly with corn meal.
- After the dough has proofed for ten minutes spank it flat to force out any air bubbles.
- Place dough on baking sheet and roll out until it is about an inch thick or until it is an inch from all sides of the sheet.
- Poke the surface of the dough with your finger creating little craters.
- Brush with olive oil and place in the oven at the lowest setting along with a bowl of water.
- Let dough rest and rise for twenty minutes.
- Turn oven up to 400 degrees.
- Bake bread for about twenty minutes.
- You can test for doneness by measuring the internal temperature.
- Once it reaches about 190 degrees it is done.
EARL GREY BREAD

Steps:
- Cut open tea bags and place leaves in a tea strainer. Steep in boiling water for 10 minutes. Let tea cool.
- Pour cooled tea into a bread machine. Add bread flour, sugar, yeast, and salt in the order recommended by the manufacturer. Run White Bread cycle. Add the butter when the machine beeps, about 15 minutes into the kneading stage.
- Remove loaf from the machine after the cycle is done, about 3 hours.
