1 head cauliflower
¼ cup butter, cut into pieces
1 teaspoon mayonnaise
1 teaspoon prepared mustard
½ cup grated Parmesan cheese

Steps:

  • Steam whole head of cauliflower for 30 minutes. Drain and place on a pie plate.
  • Preheat oven to 375 degrees F (190 degrees C).
  • In a mixing bowl, combine mayonnaise and mustard; spread the mixture over cauliflower and dot with pats of butter. Sprinkle generously with Parmesan cheese.
  • Bake at 375 degrees F (190 degrees C) uncovered, for about 30 minutes, or until the cheese is brown.

3 cups bite-sized cauliflower florets
1 egg
½ tablespoon all-purpose flour
½ cup milk
salt and ground black pepper to taste
2 cups shredded sharp Cheddar cheese
1 pinch ground paprika

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a baking dish with cooking spray.
  • Place cauliflower in a microwave-safe bowl with 1/2 cup water. Microwave until tender-crisp, about 5 minutes. Drain and transfer to the prepared baking dish.
  • Whisk egg and flour together in a bowl. Add milk, salt, and pepper. Pour over cauliflower florets. Sprinkle Cheddar cheese and paprika on top.

1 pound bacon strips, chopped
1 cup chopped sweet onion
1/2 large sweet red pepper, chopped
1/2 large green pepper, chopped
9 large eggs, lightly beaten
1-1/2 cups whole-milk ricotta cheese
4 cups frozen riced cauliflower, thawed
2 cups shredded cheddar cheese
1 cup shredded Swiss cheese
1/2 teaspoon pepper
1/4 teaspoon salt

Steps:

  • Preheat oven to 350°. In a large skillet, cook bacon over medium heat until crisp, stirring occasionally. Remove with a slotted spoon; drain on paper towels. Discard drippings, reserving 1 tablespoon in pan. , Add onion and chopped peppers to drippings; cook and stir over medium-high heat until tender, 6-8 minutes. In a large bowl, whisk eggs and ricotta. I adapted this recipe years ago from an old microwave cookbook. My children were young then and loved it. It is still one of their most requested recipes for family get togethers. The amounts can be adjusted to suit your taste. If you have a nice microwave safe dish, this makes a beautiful presentation straight to the table.

1 head cauliflower, washed and trimmed
1 1/2 cups mayonnaise
1/4 cup prepared mustard
1 1/2 teaspoons seasoning (Morton Nature's Seasons seasoning blend)
2 cups shredded cheddar cheese
1/4 cup water (approximate)
seasoned bread crumbs (optional)

Steps:

  • Place cauliflower in a deep microwave safe dish that has a lid or can be covered with plastic wrap.
  • Mix together mayonnaise, mustard, Nature's Seasons, and 1 cup of cheese.
  • Spread over cauliflower, covering completely. Use it all.
  • Top with remaining cheese.
  • Cover and microwave on 50% power for 10 minutes.
  • At this point you can top it with seasoned bread crumbs, if you choose.
  • Then microwave on high for about 5 minutes.
  • Let sit in microwave, covered, for 5 minutes.
  • Carefully remove the lid or plastic wrap (hot steam will escape). And serve.
