DUTCH OVEN CAMPFIRE COBBLER



Dutch Oven Campfire Cobbler image

I combined a couple of ideas and came up with this. This is for a deep 12 inch cast iron dutch oven. Amounts are approximate, use whatever size cake mix and pie filling you have, easily double the recipe for bigger crowds. We burned ours in about 10 minutes by putting a too hot log on top so BE SURE TO CHECK IT OFTEN!

1 (18 1/4 ounce) box yellow cake mix or 1 (18 1/4 ounce) box white cake mix
1/2 cup butter or 1/2 cup margarine
2 (21 ounce) cans fruit pie filling
cinnamon, to taste
25 charcoal, briquettes (at least)

Steps:

  • Place dutch oven over approximately 15 charcoal briquettes or over coals on a flat spot in the fire ring.
  • Empty pie filling into Dutch oven.
  • Spread dry cake mix on top of pie filling and spread evenly. Sprinkle with cinnamon to taste.
  • Cut butter or margarine into even sized pieces and arrange on top.
  • Put lid on dutch oven and arrange 10 hot charcoal briquettes in a checkerboard pattern on top or scatter hot coals over lid.
  • Bake until done (this could be anywhere from 10 to 45 minutes depending on how hot your fire/coals are).

This Pumpkin Cobbler is like an upside down pumpkin pie, but I like it even better! With a creamy pumpkin filling and a crumbly, buttery topping, it is the perfect Fall dessert.

4 eggs
29 ounces pumpkin puree (NOT pumpkin pie filling)
1 1/2 cup sugar
1 teaspoon salt
2 teaspoon cinnamon
1 teaspoon ginger
1/2 teaspoon clove
1 1/2 cups half and half
1 yellow cake mix (unprepared)
3/4 cup butter (melted)
4 teaspoons sugar
1 teaspoon cinnamon
chopped pecans ((optional))

Steps:

  • Mix all the filling ingredients together in a large bowl. Pour into a 9x13 baking dish.
  • Sprinkle cake mix evenly over the whole pan. Pat the cake mix down a little then pour melted butter evenly over the top. Then sprinkle with cinnamon and sugar (and pecans-optional).
  • Bake at 350 for 60 minutes. A knife inserted in the center should come out clean when it is done. Serve with cool whip or vanilla ice cream over the top.

8 small Granny Smith apples - peeled, cored and sliced
¾ cup pumpkin butter
½ (14 ounce) package pumpkin quick bread mix
4 tablespoons butter
1 (7 ounce) can sweetened whipped cream

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • In a medium bowl, stir together the apples and pumpkin butter. Spread evenly in a 8 or 9 inch square baking dish. Pour the pumpkin bread mix into a bowl, and cut in the butter until the mixture resembles coarse crumbs. Sprinkle over the top of the apples.
  • Bake for 45 minutes in the preheated oven, or until the apples are tender enough to insert a fork. Serve warm with whipped cream.

1 cup milk
3 eggs
½ cup white sugar
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1 teaspoon ground nutmeg
½ teaspoon salt
⅛ teaspoon ground cloves
1 (18.25 ounce) package butter cake mix
¾ cup butter, melted
¾ cup chopped pecans

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking pan.
  • Whisk pumpkin puree, milk, eggs, sugar, cinnamon, ginger, nutmeg, salt, and cloves together in a bowl; pour into the prepared pan. Drizzle butter on top. Sprinkle cake mix over butter and top with pecans.

1 1/2 cups sugar (Or 2 Cans pie filling)

Steps:

  • Melt 1-cup butter in 12" Dutch oven and let cool.
  • Place fruit in a bowl and pour sugar over them& mix.
  • Set a side and let stand.
  • In a bowl mix flour mixture together.
  • Pour Bater evenly over melted butter in Dutch oven.
  • Pour peach mixture evenly over the bater in Dutch oven.
  • Cook time: 45-60 minutes@ 350 degrees or until batter comes to top and is golden brown.
  • Note: If using canned fruit pour all of the juice off, can be used instead of milk.
  • You can use any kind of fruit with this recipe.

  • Preheat 45 charcoal briquettes until white and glowing. Lightly grease the bottom of a cast iron camp dutch oven with cooking spray (see Notes).
  • In a medium bowl combine the cake mix and lemon lime soda. You want a batter that is thick, but moist (it does not have to be precise, I've had varying consistencies from stiffer batters to thinner cake-like batters).
  • Place fruit in the cast iron dutch oven and spoon batter over top. Top with bits of butter. Sprinkle with the sugar, if using. Cover the dutch oven with its lid.
  • Place 15 hot charcoal briquettes together and set dutch oven over them. Using tongs, place the remaining 30 briquettes on the dutch oven lid. (This exact number and placement is required to achieve 350 degrees inside the dutch oven.) After about 10 minutes, rotate the dutch oven over the coals clockwise and the lid over the dutch oven counter clockwise to promote even cooking. Check after 20 minutes, cobbler is done with the topping is golden brown and the fruit juices are bubbling.
