OMA'S BOTERKOEK (DUTCH BUTTERCAKE)

Oma's Boterkoek (Dutch Buttercake) image

This is Boterkoek (Dutch Buttercake) just like my Oma (grandma) used to make. She passed away over a year ago now and I really started to crave it. I hope you like it as much as I did growing up! :)

Provided by Debra1113

Categories     Dessert

Time 50m

Yield 12 serving(s)

Number Of Ingredients 7

2/3 cup margarine or 2/3 cup half-and-half
1 cup sugar
1 1/2 teaspoons almond extract
1 egg, beaten (reserve 1 tsp)
1 1/2 cups flour
1/2 teaspoon baking powder
sliced almonds, for garnish (optional)

Steps:

  • In medium bowl, mix together butter, sugar and almond extract.
  • Add beaten egg except for 1 teaspoon.
  • Sift flour and baking powder, and add to bowl, mixing with wet ingredients.
  • Put dough in greased 9 inch pie plate.
  • Mix the reserved 1 tsp of beaten egg with 1 tsp of water, and brush over dough.
  • Sprinkle with sliced almonds, if desired. (My Oma always used the almonds, it looks pretty and adds a nice touch!).
  • Bake at 350°F for 25-30 minutes or until done (firm to the touch).
  • This is a dense cake, but should be soft on the inside and hard on the outside, but not too hard!

ONTBIJTKOEK - DUTCH SPICE BREAD

Ontbijtkoek - Dutch Spice Bread image

This traditional Dutch recipe has been a staple at Christmastime in my house for as long as I can remember. I can't quite describe the taste of it - something like gingerbread, but with more bite and a stronger flavour. After it cools it develops a moist almost sticky crust, which is my favourite part. It's super easy to make and really yields a wonderful holiday bread. Please enjoy!

HOMEMADE PIE CRUST (PA DUTCH COUNTRY)

Homemade Pie Crust (Pa Dutch Country) image

From the Mennonite Community Cookbook given to me by my mother (who was raised Mennonite). All purpose pie crust but posted to go with my recipe for PA Dutch Authentic Shoo Fly Pie #163320.

Provided by Sherie717

Categories     Dessert

Time 42m

Yield 1 9 inch pie crust

Number Of Ingredients 4

2 1/4 cups flour
2/3 cup shortening
1/2 teaspoon salt
1/3 cup cold water

Steps:

  • Combine flour and salt in mixing bowl.
  • Cut shortening into flour with pastry blender or 2 knives. Do not overmix; these are sufficently blended when particals are the size of peas.
  • Add water gradually, sprinkling 1 tablespoon at a time evenly over mixture. Toss lightly with a fork until all particles of flour have been dampened. Use only enough water to hold pastry together when it is pressed between the fingers. It should not feel wet.
  • Roll dough into a round ball, handling as little as possible.
  • Roll out on a lightly floured board into a circle 1/8 inch thick and 1 inch larger than the diameter of the top of the pie pan.
  • Place circle into pie pan, gently pressing dough to fit to the bottom & sides.
  • Trim edges with scissors or a sharp knife letting 1/2 inch extend over rim.
  • Turn edge under and flute with fingers to make a standing rim.
  • Prick shell all over with a fork to prevent air bubbles.
  • If desired, bake at 450 for 12-15 mins or until a golden brown. (Not necessary for the Shoo Fly Pie and most other baked pies.).

HOW TO BAKE A PIE OUTDOORS IN A DUTCH OVEN
Most pies require an initial bake at a high temperature, around 425 for 30 minutes. This sets the crust and prevents the pie from getting soggy. After that, the oven is turned down to around 350 for another 20-40 minutes to cook the pie filling all the way through. This two-stage cooking process is actually ideal for a dutch oven.
