VANILLA DUTCH BABY (PUFFED PANCAKE)

3 tablespoons butter
3 eggs
3/4 cup all-purpose flour
3/4 cup milk, heated 20 to 30 seconds in the microwave
1 tablespoon sugar
2 teaspoons pure vanilla extract
Pinch salt
Confectioners' sugar, for dusting

Steps:

  • Preheat the oven to 400 degrees F.
  • Put the butter in a large, ovenproof, nonstick saute pan and place in the oven.
  • Meanwhile, in a blender, combine the eggs, flour, warm milk, sugar, vanilla extract and pinch of salt, and blend on medium-high speed until uniform. (If mixing by hand, combine the eggs with the milk until the mixture is light yellow and no longer stringy, about 1 minute. Add the flour, sugar, vanilla, and pinch of salt, and whisk vigorously to remove the lumps, about 30 seconds.)
  • Carefully remove the hot pan from the oven. The butter should be melted. Swirl the butter around the pan to coat completely, and then pour the remaining butter into the batter and pulse to blend. Pour the batter into the hot pan and return the pan to the oven. Cook until the pancake is puffed in the center and golden brown along the edges, 20 to 25 minutes.
  • Using a spatula, remove the entire Dutch baby from the pan and place on a cooling rack for a few minutes to allow the steam to escape without condensing along the bottom and rendering the pancake soggy. Dust with confectioners' sugar when cooled slightly. Slice the pancake into 8 wedges on a serving platter or cutting board.

½ cup all-purpose flour ((62 grams))
½ cup whole milk ((4 fluid ounces))
¼ teaspoon salt ((1 gram))
Fruit and powdered sugar (, for serving, if desired)

Steps:

  • Preheat oven to 400°F. Place the butter in a 9 inch cast iron skillet or cake pan and put in the oven.
  • In a medium bowl, whisk together the eggs, milk, flour and salt until combined. When butter is melted, remove pan from the oven and swirl butter around until it coats the bottom and the sides. Pour the batter into the pan and place it back in the oven.
  • Bake until puffed and golden, about 25 to 30 minutes. Serve immediately with fresh lemon or orange juice, powdered sugar, and fresh fruit.

1 large Granny Smith apple
4 tablespoons (1/2 stick) unsalted butter, divided
2 tablespoons granulated sugar, divided
1/4 teaspoon ground cinnamon
1/2 cup whole milk
2 extra-large eggs, at room temperature
1/2 teaspoon pure vanilla extract
1/2 cup all-purpose flour
1/4 teaspoon kosher salt
Confectioners' sugar
Pure maple syrup, for serving

Steps:

  • Preheat the oven to 425 degrees F.
  • Peel, core, and slice the apple 1/8 inch thick. Melt 3 tablespoons of the butter in a 9-inch ovenproof crêpe pan or skillet over medium to medium-high heat. Add the apple, 1 tablespoon of the granulated sugar, and the cinnamon and toss well. Sauté the apple for 5 to 7 minutes until tender, tossing occasionally. Spread the apple out in the pan and keep hot over low heat.
  • Meanwhile, melt the remaining tablespoon of butter in the microwave. In a medium bowl, whisk together the milk, eggs, melted butter, and vanilla. In a small bowl, combine the flour, the remaining tablespoon of granulated sugar, and the salt. Whisk the flour mixture into the milk mixture, whisking until there are no lumps. Pour the batter over the cooked apple in the hot pan and immediately place in the oven.
  • Bake for 12 to 15 minutes, until the pancake is puffed and the edges start to get crispy and browned. Dust lightly with sifted confectioners' sugar, cut in wedges, and serve hot with maple syrup.

3/4 teaspoon cinnamon

3 tablespoons butter, melted, divided
Syrup or confectioners' sugar , for serving

Steps:

  • Gather the ingredients.
  • Heat the oven to 425 F. Put a cast-iron or ovenproof 9- or 10-inch skillet in the oven.
  • In a bowl, combine the apple slices with brown sugar and cinnamon; toss gently to coat well.
  • In another bowl, mix flour with salt. In a large cup or small bowl, whisk together the eggs, milk, vanilla, and 1 tablespoon of the melted butter.
  • Pour the wet ingredients into the bowl of dry ingredients, and whisk until just combined.
  • Carefully take the hot cast iron pan from the oven, set it on a cooling rack, and add remaining butter; swirl to coat the bottom of the pan.
  • Arrange apple slices over the bottom of the pan.
  • Pour batter over apple slices.
  • Bake for 25 to 30 minutes, until puffed and lightly browned.
  • Serve with syrup or sprinkle with confectioners' sugar.

  • Remove skillet from oven, melt butter and swirl to coat entire surface [wiping sides with a paper towel dipped in the butter].
  • Pour in batter all at once.
  • Return to oven and bake for 18-20 minutes - it's better not to be too golden brown on the underside - and may take a few (delicious) tries to figure what degree of doneness YOU like best with your oven and pan.
  • Remove and serve at once garnished with slim lemon wedges and sprinkled with confectioner's sugar.
  • I would think you could use a souffle or casserole dish but haven't tried it myself.

1/3 cup all-purpose flour
1/2 cup whole milk
2 eggs, lightly beaten
1 pinch nutmeg
1 pinch salt
4 tablespoons unsalted butter (one half stick)
2 tablespoons confectioners' sugar
1/2 lemon, juiced

Steps:

  • Heat oven to 425 degrees. Combine the flour, milk, eggs, and nutmeg in a bowl. Beat lightly. Leave the batter a little lumpy as overbeating will make the pancake tough.
  • Melt the butter in a 12-inch cast iron or other ovenproof skillet with a heatproof handle. When it is very hot and slightly browned, pour in the batter. Bake for 15 to 20 minutes, until the pancake is golden brown.
  • 4. Sprinkle with the sugar and return briefly to the oven. Sprinkle with lemon juice, and serve. My kids like the sugar and lemon juice stirred together like a kind of glaze drizzled onto the pancake, which is how I remember having crepes from the crepe stands in Paris -- Additionally can be served with jelly, jam, or marmalade.

This is a typical old-fashioned Dutch baby. We have it for breakfast nearly every weekend; it is made with ingredients we almost always have on hand. It bakes up puffy and golden brown, then sinks into a rich, eggy pancake. Plus, it can go from the pantry to the table in less than 25 minutes!

3 tablespoons butter
3 large eggs
3/4 cup milk
1/2 teaspoon vanilla
2 tablespoons sugar
1/2 cup flour
1 pinch salt

Steps:

  • Heat oven to 425* F.
  • Either melt butter in an oven-proof skillet and remove from heat OR melt it in a regular saucepan and pour into a prepared (liberally buttered) pie pan.
  • In a blender, combine the eggs and milk and whirl until foamy and pale.
  • Add to the blender the vanilla, flour, sugar and salt.
  • Whirl until fully blended.
  • Pour batter into the melted butter--it will look like a dish of white soup with slicks of oil on top (not appetizing at all, I know).
  • Bake in the oven about 18 minutes or until golden brown and puffy.
  • Slice when the "puff" has deflated and serve with jam or sugar.

Be sure to view all the photos I've included. This baked pancake really rises high! I tried to get a picture before it began collapsing, but wasn't quite quick enough. Regardless, it's very impressive when brought to the table, and tasty as well. My skillet is iron, and this seems to give the best results.

3 large eggs
1/2 cup(s) milk
2 tablespoon(s) melted butter + 1 tbsp for skillet
1 tablespoon(s) sugar
1 teaspoon(s) vanilla
1/4 teaspoon(s) salt
1/2 cup(s) plain all-purpose flour
- fresh fruit of your choice, cut into bite-sized pieces
- powdered sugar, whipped cream

Steps:

  • Preheat oven to 450°F. If you have a convection oven, set it at 425°F (the pancakes rise even higher on the convection setting).
  • In a large bowl, lightly beat the eggs with a whisk or fork. Stir in the milk, 2 tbsp melted butter, vanilla, salt and sugar. Add the flour to the egg mixture, a big spoonful at a time as you continue to whisk. Be careful not to over-mix, to keep the pancake light and fluffy.
  • Melt remaining 1 tbsp butter in a 10-inch oven proof skillet. You can do this by placing it in the oven for about 5-7 minutes.
  • Pour the batter into the heated skillet (this will yield a more golden brown, puffier pancake). Bake 12-18 minutes, just until the edges are golden. Check your pancake at the 12-minute mark. Top with the fresh fruit, powdered sugar, and whipped cream just before serving.
